Indian Summer

After an intense cold snap, it suddenly feels like a breezy September night.  Is it REALLY November?  Winter in Charlotte is pretty good so far!   Lots of porch / laptop time.  We seem intent on making the porch function like a third office lately (first is the actual office; second is the dinner room [...]

3 Miles is Pretty Far

Seriously.  Three miles is a long way to run.  I don’t care how many 10Ks or Half Marathons or even full Marathons that I do, 3.0 miles is still a pretty far way to run.  Respect the distance, yo!  Although it’s been 9 days since my marathon, my legs still do not feel normal (not [...]

Arms and Abs Challenge

Deconstructed Grilled Banana Sandwich:   If you have not grilled a banana yet (just slice and place in a hot, greased pan for a few minutes), you are missing out!  So much better than raw.   Not only was breakfast a superb way to kick-off Monday – my coffee was great, too. The Husband and [...]

Hot Yoga, Hot Sausage

Oh, Y2Yoga… You seriously crush my soul sometimes.  I was yearning for a sweaty workout so I decided to attend today’s 90-minute “hot” class, led by the studio’s owner (Tanner).  Because I think post-marathon blues are setting in, I was excited to get a really hard workout in… And Y2Yga definitely delivered.  Sweat dripped off [...]

Speedy Pumpkin Rice Pudding

I’ve been eying The Non-Dairy Queen’s Pumpkin Rice Pudding for days.  I was so excited to make it for breakfast today, but quickly realized it required over an hour of baking.  If I had planned ahead, this would be fine – but I was starving!   Enter:  Speedy Pumpkin Rice Pudding. This very unique breakfast [...]

Culture + Curry

Charlotte LOVE!   Tonight, we attended a photography exhibition at the DOMA Gallery in South End, Charlotte.  The lecture was on “How to Buy Photography on a Budget,” and of course, I was interested because I take 100’s of photographs daily and am on a budget.  ;) We’re thinking about joining the Young Affiliates of [...]

Refried Beans…

Youz doin’ it right. Obsessed with Trader Joe’s Refried Beans.  Seriously, the most delicious (and simple) thing ever.  Pinto beans, oil, salt.  All mixed together in a salty mash.   I am in love with this sandwich. Sourdough bread.  Italian cheese.  Warm pinto beans.  Sprouts.  Reminds me of a salty and warm deli meat sandwich.  [...]

In the Air

All the trees in my neighborhood are beginning to turn brilliant reds and oranges.  A Florida girl at heart, I am utterly fascinated. A leaf bowl seems appropriate! In the oatmeal mix:   1/2 cup oatmeal 1/2 cup rice milk 1/2 cup water 1 tablespoon chia seeds 1/2 a banana Toppings: almonds   I love, [...]

House Hunters?

It’s no secret that I’m obsessed with House Hunters.  In fact, I’ve been watching it all night. (Source) It feels SOOOOOOO good to relax on the couch and dream about home ownership.  Now that we’ve gotten our budget under control (well, except for my dining spree yesterday… ahem), we’re thinking about buying a HOUSE!  Not [...]

Will Bike for Cinnamon Buns

Megan and I were running buddies from the start – when I lived in Orlando, we used to run together two or three times a week, and we always did our long runs together.  It’s so nice to have her in Charlotte!  I was really looking forward to helping her complete a long run for [...]

Cinnamon Rolls

Do you smell what I smell? Megan and I are on a long run (she has a half marathon coming up, so I thought I’d help her accomplish her longest distance for this training plan).  We planned ahead and, currently, my kitchen smells like the faint beginnings of yummy cinnamon rolls.  The dough is rising [...]

Eating Out X Two

It’s truly Fall!  Time for boots and sweaters and drinking warm cups of coffee while going on long, lovely walks. So fun to have Megan visiting!  Can she please, please live in my office forever? After getting a lot of work done this morning (Megan went on an informational job interview), we met back up [...]

It’s that time again – Healthy Tipping Point Success Story Time!  I love sharing other people’s stories about getting fit, finding balance, having children, falling in love, overcoming addiction, discovering their passions, and/or living their life to the fullest.  But HTP stories are generally pretty serious, which is why I think it’s time that I [...]

Time Warp

I feel like I entered some weird time warp last night!   Yesterday at noon, I left Charlotte and drove 4 hours east to East Carolina University.  Then, I did a wonderful Operation Beautiful presentation to a group of about 150 freshman! I love finding Operation Beautiful notes in bathrooms following a presentation! :) It [...]
