Back in Charlotte!  I missed home.  And all the kisses and cuddles that come with with it.

Maggie:  One crayon short of a full box.

 

The Husband and I drove directly from the airport to the clinic so we could get some work done, and then we headed home for lunch. I was so in the mood for a savory omelet.

Not sure what happened with this omelet, but it definitely did not flip properly in the pan.  I followed all my usual instructions for making a pretty omelet, too!  The nice thing about omelets is that the perfect and messy ones all taste the same.

 

With spinach and goat cheese on the inside.

    Glad you made it back safe and sound! Whenever I get a perfect omelette flip, I can’t help but do a little happy dance… it’s the little things, right? 😉

    Isn’t is weird how sometimes omelets doing work. Agreed though, they do taste the same…perfectly delicious! Enjoy your day at home Caitlin!

    let’s just say my favorite restaurant omelette is not winning any presentation awards — sometimes i think the messier the tastier!

    I am addicted to taco sauce on my eggs. I keep a giant bottle right next to the stove because that’s how often I eat it! Haha 🙂

    Just tried goat cheese for the first time, can you believe it took me this long? It’s soooo creamy. I’m looking forward to a nice veggie and goat cheese omlet! Yum 🙂

    Yum, nothing like a good omelet. I never used to like eggs as much when I was little, but now I could eat them at all meals.

    Most of my omelets turn out to be pretty ones, but every once in awhile I have a very messy one! I always top them with salsa!!!

    Glad you made it home okay! Gotta love being greeted by not only human but canine kisses too. Always makes coming home that much more sweet. And you’re totally right about messy omelets. Who cares how they look, they still eat the same. I feel the same about cake. As long as it tastes good, I don’t care if doesn’t look as good as a bakery’s.

    Aw! Your naked face looks so sweet and so happy to be home! I’m often accused of being younger and I think it’s due to not wearing make up much.

    In my expert (hah!) opinion, I think your eggs needed a little more mixing – not OVER mixing, just a little more mixing. Yes, in addition to my many other skills, I am an omelettemeister.
