The title sums it up.

Tacos!

And a haircut.

Up first… those tacos.

I’ve been wrappin’ everything – everything! – in soft corn taco shells. Everything tastes better and infinity more delicious in taco form. Agree? Agree.

Today’s combo included:

Wild rice

Black beans

Tomatoes

Cheddar cheese (extra extra extra sharp)

Onions

Asparagus

Good stuff!

And about that haircut… We wanted to fancy Henry up before his birthday. O-N-E. One!  Can you believe it? I certainly can’t. His birthday is on Wednesday. We don’t have big plans, but I am sure excited to celebrate his special day.

After!

I swear there’s an actual difference.  I have the wispy fuzzies all over my shirt to prove it.

Happy Sunday!

Looks like he enjoyed having his haircut. He looks gorgeous, as always, but there’s definitely a difference!

What a cutie that Henry is! I can’t believe he’s already turning one. I feel like I was just reading his birth story! 🙂

  • cait June 9, 2013, 6:49 pm

We had our son’s hair cut last month when he was about 11 months old and goodness was it crazzzy!!! He screamed his lungs out. Henry looks so happy even in the after pic 🙂

Its unbelievable how fast time flies, my son turned one on June 6th!! I mean really, time flies!

Can’t believe he’s going to be a year! And in some ways it seems like he should be older because he was such an early walker. My babe, Archie, is 8 months old and is going to be an early walker too. He’s crawling, pulls himself up on everything and walks from object to object just holding on.

Do you feel like Henry was more wreckless since he was such an early walker? That’s my only fear with Archie walking on the young side.

I guess I don’t have anything to compare it to but MAN henry took some epic, epic falls. We’re taking like, giant lumps on his head falls. I think that’s pretty normal and is going to happen no matter how careful the parents are.

Henry is generally really brave and gung-go. He’s not a very timid person. It’s hard to know what is his personality and what’s a by-product of his early walking. I do sometimes think that his motor skills developed way before he was ‘ready’ for them, really and truly.

Kids grow up way too quickly, don’t they?

  • julie (etsy stalkers) June 9, 2013, 9:17 pm

This is just blowing my mind that he is almost one. I SERIOUSLY feel like it was just last month he was born. I have 2 little boys too and it goes sooooo fast. Everytime I see someone else’s babe (on a blog I read) have a birthday I get so confused.. haha because I’m like wait, that means my kids are growing too! ha. mine are 4 & 2.. can’t believe my youngest will be THREE this year. AHH!!

  • Melanie June 10, 2013, 8:46 am

My gosh he’s adorable!! It’s been so great being able to “see” him grow up this past year!

    Happy Early Birthday!

  • Amanda June 10, 2013, 9:33 am

  • Jillian @ Baby Doodah! June 10, 2013, 2:21 pm

    HAPPY BIRTHDAY, HENRY!

Those tacos look AH-mazing!! I currently am attempting a 30 day vegan challenge so I will be stealing these and just dropping the cheese. Mmmm…I kinda wanna go home and make them now!

My son is 10 months right now and my husband mentioned getting his hair cut around his first birthday and I near cried. I’m not ready to lose the wispy baby hair. lol

Did you save any of it? I don’t know if that’s still a thing. When we were kids my mom saved a little of all of our hair from our first cut.

  • Charity June 10, 2013, 4:29 pm

We are going for our first hair cut this week! Did you save any of it?! I want to save some of Alexander’s.

  • Elizabeth @ Positive Changes June 10, 2013, 5:35 pm

I can’t believe that he will be one! I remember checking your blog last year waiting to see if he was going to be a boy or girl! He looks so cute with his new hair cut!

  • nikki @ mykindofhealthy June 10, 2013, 8:54 pm

Your little one it too cute and way to big now! I love all kinds of tacos. You just can’t be mad or unhappy when you’re eating a taco 🙂

  • Heather June 10, 2013, 10:00 pm

    His haircut is adorable!!

  • KaraHadley June 11, 2013, 11:09 am

Everything is better when you can eat it with your hands. And tacos are the best handheld food. So, logically speaking, everything is, in fact, better in taco form.
(I write this as I’m eating breakfast nachos.)

  • Jaye June 11, 2013, 7:59 pm

Keep the food ideas coming Caitlin – I have NO imagination. 🙂 My son Noah’s birthday is tomorrow too – he turns 15. Happy Birthday to your little Henry!
