Go-To

Good morning.  I think?

IMG_1280

Alright.  This has become my go-to breakfast.  I have it about five out of seven mornings… it’s just so easy and tasty.  And it keeps me feeling full forever, which is very important because for the first time in my life, I occasionally ‘forget’ meals <—never happened before.  What can I say, little bebes keep you busy like nothing else.

A little secret about my hard boiled eggs: Everyone also says how pretty they are and asks about my technique for boiling – simply put, I buy pre-boiled eggs in a baggie from Trader Joe’s.  Yes, it’s twice as expensive as buying a carton and doing it myself, but a woman has to choose her battles.

Today is Henry’s three month birthday!

IMG_1282

Can’t believe I gave birth three months ago – seems like yesterday.  And this means I owe you a Mind and Body After Baby post.  I was looking back at my previous posts (Week 1, Month 1, and Month 2) and am blown away by how different Henry looks – he looked like such a scrawny little baby at first (and I mean that in the nicest way possible).  I look different, too!  And I’ve got lots of progress to report this month, so stay tuned…

Have a wonderful Wednesday!

I hear you about the eggs- some things are just worth it to have someone else do it for you. Plus they are still not an expensive food item, even at twice the price!

  • Carrie @ Fitness and Frozen Grapes September 12, 2012, 8:47 am

Wow, how can Henry be three months old already?! Happy Birthday, Henry! 🙂 Time sure does fly!

  • Lesley September 12, 2012, 8:52 am

Caitlin, what brand of GF bread is that? It actually looks edible, haha. I’ve tried some terrible ones!

    • Caitlin September 12, 2012, 9:19 am

      Udi’s!

  • Anne Weber-Falk September 12, 2012, 8:57 am

    Already? Wow, that was fast.

  • Dori September 12, 2012, 8:58 am

I have an egg boiler. It makes hard boiling your own eggs much easier with almost no risk of cracking, and since they’re about $30 it will be cheaper in the long run than buying the Trader Joe bags.

    • Amber K September 12, 2012, 9:50 pm

That’s what I need! Any specific brand you recommend?

  • Mary September 12, 2012, 9:11 am

I keep hearing rumors that TJ’s will eventually make it to Birmingham…fingers crossed!! Happy 3 months to Henry 🙂

  • Liz @ Tip Top Shape September 12, 2012, 9:12 am

Aww, happy 3 months to Henry!!

  • Liza September 12, 2012, 9:17 am

Hahaha this is so funny, I was just eating my (ugly) hard boiled eggs this morning and thought to myself “I really should ask Caitlin how she boils her eggs so purrrrrty.” Great timing!

Looking forward to the Month 3 post, I always enjoy those!

  • Katie @ Talk Less, Say More September 12, 2012, 9:17 am

Yay! Happy 3 months to Henry! He has definitely grown up a bit and I can definitely seen how he’s gotten bigger (in the best and cutest way possible)! 🙂

  • Hillary September 12, 2012, 9:17 am

I didn’t even know they SOLD pre-boiled eggs! That might be a “splurge” on my next TJ’s trip.

  • Sarena (The Non Dairy Queen) September 12, 2012, 9:18 am

The time goes way too fast! I can’t believe I have a 14 year old and an 11 year old! I swear they were both born yesterday! Enjoy the little man today!

  • Barbara September 12, 2012, 9:32 am

I am a HUGE fan of the egg genie.. have you ever thought about getting one? They are under $20 usually (I got mine at Bed Bath and Beyond), and can make 6 or 7 hard boiled eggs at a time, which always come out PERFECTLY! All you have to do is put the eggs in and add water, and it takes only about 5-10 minutes. There’s also a really obnoxious siren when they are finished so you won’t forget them. I highly recommend it.

Happy 3 months to an adorable babe!

  • Corrie Anne September 12, 2012, 10:04 am

LOVE your secret to hardboiled eggs!!! 🙂 🙂

  • Liz September 12, 2012, 10:19 am

Couldn’t help but comment (first post ever!) but did you know you can hardboil eggs in the oven? They look and taste the same and it is expodentially easier. Google it and try!

  • Lindsay September 12, 2012, 10:20 am

Caitlin, you are such an inspiring mom. I am years away from having kids of my own, but you better believe I’ll be coming back to these posts for mental support when I do. I love your balanced approach; it’s very refreshing in today’s world of supermoms.

Heck, I have only me, myself and I to care for, and I wholeheartedly support buying bags of hard boiled eggs. There is no shame in accepting help where help is offered, and that includes grocery store aisles.

    Happy 3-month to Henry!

  • Kendra @ My Full-Thyme Life September 12, 2012, 10:23 am

Happy 3 months, Henry!! And congrats on your first 3 months of parenthood, Kristein and Caitlin! I am so jealous of your Trader Joe’s. They just built one in Boulder, Colorado but that isn’t too convenient for me. However, I just heard they are putting one in Denver and I am seriously so excited!! It’s the little things, you know?

  • Haley September 12, 2012, 10:47 am

I’m far from having a kid, but I’ve surprised myself recently and have accidentally skipped meals too! Yesterday I ended up having fro yo for dinner. Whoops.

  • Dannii @ Hungry Healthy Happy September 12, 2012, 10:55 am

Happy 3 month birthday to Henry!

I agree with what you say about you have to choose your battle! People jump down my throat about not always buying organic, but I just can’t afford it all the time – I am a writer and my income is not consistent.

  • Janelle September 12, 2012, 11:22 am

Do you have a post where you talk about why you are gluten free? I am making the switch and am curious.

  • Julianna @ Julianna Bananna September 12, 2012, 11:26 am

i was always wondering how those eggs were perfect! makes me feel a lot better about my failing hard-boiling egg skills. maybe i should just go buy those ones at TJs too so i don’t keep wasting eggs!!

  • Tammy Root September 12, 2012, 12:09 pm

    Whoop! Whoop!! Happy 3-months Henry!!!!

  • Maria September 12, 2012, 12:36 pm

I can’t believe he is 3 months. I am going to start buying my boiled eggs. I have googled how to make boiled eggs, but they never come out. I end up losing so much of the white. People think I am crazy because I cant boil eggs.

    • Reenie September 12, 2012, 2:10 pm

The way I do it and the easiest way….. explained by Ina Garten:
      (I added what’s in parenthesis)

      Directions:
Place the eggs in a saucepan and add enough cold water to cover.

Bring the water to a boil and immediately turn off the heat. (Put lid on) Let the eggs sit in the pan for 15 minutes.

Remove the eggs to a bowl and allow to rest for at least 2 minutes. (I rinse mine with cold water to cool them down). When the eggs are cool enough to handle, crack the eggs on each side and then roll them back and forth (on the counter or table) with your hand, breaking up the shell. Remove and discard the shell.

  • Mai September 12, 2012, 12:38 pm

i can’t believe he’s 3 months already either! seems like you JUST had him.

  • Katie @ Peace Love & Oats September 12, 2012, 12:45 pm

Haha I cannot even imagine forgetting to eat! I’m always baffled when people say that, but I guess a baby is a great excuse!

  • Lauren September 12, 2012, 12:48 pm

Oh wow, 3 months already! Time is so precious! 🙂

  • Annette@FitnessPerks September 12, 2012, 1:03 pm

A woman DOES need to pick her battles. Truer words were never spoken. 😉

I love hard boiled eggs. Yumm. And Henry is such a cutie!

  • Catherine September 12, 2012, 2:02 pm

Yay! Happy 3 months to Henry! I love your Mind and Body After Baby posts. I don’t know how to say this so that it doesn’t sound creepy, but I’d be interested in hearing how your sex life has evolved pre-baby/pregnancy/post-baby. Haha, again, I don’t mean that in a creepy way, but rather in the sense that it’s very tied in with mind and body. I’ve been married for about 5 months, and we’re probably a few years away from having the babies, but it’s something I’m curious about! If that’s not a topic you want to get into on your blog, I completely understand 😀

    • Caitlin September 12, 2012, 2:26 pm

Hahah probably not a topic that I will cover on the blog, but I can sum it up by saying that while my recovery to running was FAST (4 weeks), my recovery in other areas was not (which I still can’t really understand how that works physically). However, life is returning to normal. Or normalish.

  • Vicki September 12, 2012, 2:10 pm

Looking forward to your 3 month post! I like reading them and getting an idea of what to look forward to – my little ginger baby is 4 weeks younger than your Henry – it was great following your pregnancy, and even more awesome reading about Henry’s milestones! (and yours too, of course)

    • Caitlin September 12, 2012, 2:25 pm

      Yay ginger babies!

  • Ellen @ Wannabe Health Nut September 12, 2012, 2:25 pm

I love your simple breakfast plates! And how did I not know that TJ’s carrries pre-boiled eggs?? I have a few busy clients that will be SO happy to know that!

  • Zab September 12, 2012, 6:06 pm

I found out recently that hard-boiled eggs keep up to a week in the fridge, and have found it helpful to cook up a batch on the weekend to have on hand throughout the week for salads, snacks, and what have you…
Also, Happy 3 months bebe Henry!

  • Brianne September 13, 2012, 8:40 am

hahahaha I don’t know why…but that picture with Maggie (I think it’s maggie?) yawning cracked me up…love it. Happy 3 months Henry!
