Raspberry Waffles

in All Posts

I know I waxed poetic about Greek yogurt as the ultimate waffle topper the other day… but I think grilled banana might run a close second.

A fruity topping deserves a fruit waffle!

This one was packed with sliced almonds and raspberries:

I mixed frozen raspberries right into the batter and then spooned it all onto the waffle maker.  The raspberries came out warm and juicy.

So – I just realized that IT’S FRIDAY!  I was at a complete loss for what day it is… I’m pretty pumped.  We don’t have any notable plans, but I’m especially excited for…

THIS!

Anyone doing a fun race this weekend?  I’ve been reminiscing a lot about Florida’s Crooms trail run, which I did back in 2009 and 2010

Such a fun and beautiful course.

I am super jealous of that weather!! Nothing but mid 20s over here 🙁

  • Kelly January 27, 2012, 11:07 am

Ever since I made your Grilled Banana Sandwich, I’ve been in love with grilled banana! I keep forgetting about it though, so every time you post about it I want to run to the kitchen and make a grilled banana sandwich! Mmmm…..

  • Sarah January 27, 2012, 11:12 am

    Yesssss Friday!

We have temps about half what you’re looking at so it’s SKIING for me! Always a good, fun workout. Makes me appreciate winter 😀

  • Angela @ Eat Spin Run Repeat January 27, 2012, 11:13 am

You have reminded me this week that waffles MUST make a comeback in my kitchen. Yours look delicious!! Sadly no racing for me this weekend – our weather is super slushy today so I’ll be sticking to indoor workouts!

  • RunEatRepeat January 27, 2012, 11:21 am

I remembered wanting to do that Croom’s run when you did it! It would be way to expensive and difficult to make happen, but I wish…

    • CaitlinHTP January 27, 2012, 8:13 pm

It’s a pretty sweet race. But it really is in the middle of no where.

  • deva at deva by definition January 27, 2012, 11:22 am

No races this weekend, just an 8-mile long run! My next race isn’t until March, and I’m excited.

  • Amy from Detroit January 27, 2012, 11:23 am

The waffles looks GREAT! and how did you grill the bananas? Did you just slice ’em and put them on the griddle? Did you sprinkle them with splenda? No races for me this weekend….in fact, no races until March’s St Patrick’s Day race. The weather in Michigan makes it difficult to do anything – at this point, my days vary from running a few miles outside or hitting the treadmill. It’s all about maintenance right now.

I hate winter in Michigan 🙁

    • CaitlinHTP January 27, 2012, 8:14 pm

Just slice and put in a hot wok with some honey or brown sugar. Let it brown and then flip. Don’t move them around too much!

  • becca @ blueberry smiles January 27, 2012, 11:24 am

LOVE it when Fridays sneak up on you!

Our weather in San Francisco is supposed to be in the mid 60s! Can’t wait. No races for me, but lots of hiking planned. Soooo happy it’s Friday!!!!

  • Hillary January 27, 2012, 11:27 am

No race, but I do have a long run to complete tomorrow morning. Yeah 50 degrees!

  • Amber @ Busy, Bold, Blessed January 27, 2012, 11:27 am

Our forecast in PA isn’t so far from that! Woot for warm temps! Those waffles look pretty delish, how have I not tried a grilled banana yet?!

  • Jazz January 27, 2012, 11:42 am

I always have yogurt on waffles, but last weekend I had grilled pear, almonds and honey which was right up there for #1!

  • Tori @ In Love and Peanut Butter January 27, 2012, 11:53 am

I’m doing Crooms 50k this year! Doing the Florida Challenge Half Marathon this Sunday to kick off my trail training.

  • Katy @ HaveYouHurd January 27, 2012, 11:55 am

No races this weekend but I will be playing in my college Alumni basketball game! EEK! Should be interesting. And by interesting I mean hilarious.

  • Annette @ EnjoyYourHealthyLife January 27, 2012, 12:06 pm

I need to do that–frozen raspberries in the batter. Sounds delicious!!!

  • Claire @ Live and Love to Eat January 27, 2012, 12:16 pm

Awesome flavor combination going on there!

  • Sarah January 27, 2012, 12:19 pm

I am running the Tinker Bell Half Marathon at Disneyland this weekend! 🙂

  • Katie @ Peace Love & Oats January 27, 2012, 12:42 pm

oh wow, you are lucky with that weather! It’s still pretty chilly here in Chicago… although above freezing today!

  • Molly @RDexposed January 27, 2012, 12:51 pm

How do I always forget about grilled bananas?!

  • Amanda @ AmandaRunsNY January 27, 2012, 12:55 pm

Oh man, you are totally bragging with that awesome weather forecast. Tomorrow its going to be in the 40’s in New York.

  • Khushboo January 27, 2012, 1:15 pm

Grilled banana with peanut butter is my ultimate waffle topper!

  • Tia @ Veggies and Pearls January 27, 2012, 1:45 pm

Oh my gosh, that grilled banana looks aMAZing! I am going to have to try that now, on everything! I’m thinking a grilled banana on top of oatmeal is definitely the way to go!

  • Michelle January 27, 2012, 1:46 pm

Alright – now I want a grilled banana. But we are out of bananas. Damn. This is your fault. 🙂

I’m running the Disneyland Neverland 5k at 10:30pm tonight!! Its my first non-trail “race”, and my first night run (that probably wasn’t good planing on my part). Wish me luck!

  • Emily January 27, 2012, 1:47 pm

    Those waffles look AMAZING.

We’re supposed to get mid to upper 30s this weekend, which I am happy about because for Ohio, that’s awesome.

  • Gina @ Running to the Kitchen January 27, 2012, 2:22 pm

Oooo, I’d kill for that weather this weekend. We’re getting sun but only mid 40’s 🙁

  • Jamie @ Don't Forget the Cinnamon January 27, 2012, 3:25 pm

I also had a waffle this morning–a blueberry waffle! Only I topped mine with yogurt mixed with almond butter!

  • eatingRD January 27, 2012, 4:25 pm

Your waffles look so pretty and delish. I am sooo glad it’s Friday too! I’m ready for the week to end please. Our temps should be in the low 60s. I’m ready for spring!

  • Life's a Bowl January 27, 2012, 7:43 pm

I actually texted my momma this morning asking if I could have one of her waffle irons 😛 Can’t wait to make a batch of fluffy [and fruity] waffles!

P.S. I am totes happy Springuary is back hehe!

  • Chelsea @ One Healthy Munchkin January 27, 2012, 10:04 pm

You’re making me wish I had a waffle maker! Frozen waffles just don’t compare. 😛

  • tracey January 27, 2012, 11:51 pm

I’m doing the ING Miami Half on Sunday – whoo hoo!!! Pray for no rain 🙂

  • Emilie January 28, 2012, 5:40 am

Yum! Waffles aren’t really ‘big’ in Australia. I don’t even know if you can buy a waffle maker here? That looks so delicious though. The weather in Queensland is horrible 🙁 very raining and flooding roads.
