Sweaters, bootsâ€¦ FALL!

Iâ€™m home for one night and then Iâ€™m heading out to Detroit for another work trip (itâ€™s going to be super short and sweet). So weâ€™re maximizing our weekend by going out tonight with my sister-in-law and her man friend.
Theyâ€™re having a romantic dinner out, and we had our own romantic dinner in. Then, weâ€™re all going to meet up for drinks.
The basic ingredients of this dish werenâ€™t so special â€“ quinoa, kale, beans mushrooms â€“ but what made it really stand out was the yummy sauce.
The sauce was a combination of light coconut milk, nutritional yeast, and Earth Balance butter spread. I made the sauce with equal parts coconut milk and nutritional yeast. It had a great tangy but tropical flavor to it.
Even better when soaked up with bread!
The rest of the day was mainly spent on the couch. We did go for a long walk, but other than that, it was just rest. Kind of weird how our day off perfectly corresponded (the Husband works weekends) â€“ that almost never happens!
Salted edamame, goat cheese and hummus toasts, and applesauce (hi, Iâ€™m 5).
