Remember how I felt oh-so-lazy last night?  Nicole ended up giving me a call to chat.  After 10 minutes of phone gossip, I realized we could continue the conversation on a run (we live next door to each other), so I asked if she wanted to head out.  She said yes, and we ended up running 4.3 miles together!

IMG_5926

I haven’t run more than 3.0 miles since April so this was quite a feat!  We ended up doing walk/run intervals for the last 1.3 miles since I was nervous that the mileage jump would affect my knee.  But all was well.

Aren’t running buddies THE BEST?!  Serious dose of motivation and fun.

Came home and made a post-run snack, and then I crashed hard – we didn’t get back until 9:30 PM!

For breakfast, I cooked up a Grilled Elvis.

IMG_5928

And for lunch, the Husband made a lovely tempeh and hummus sandwich

Both meals featured slices of Glutino Flax Seed Bread.    When we went shopping on Saturday, I stocked up on lot of gluten-free bread and pasta alternatives.  They really weren’t THAT much more expensive than the normal stuff.  I realized last week that if I am going to try to eat less gluten per my test results, I have to find some GF alternatives of my ‘normal’ foods, like bread, or I will starve to death.

Premium-Flax-Seed-Bread1

I really liked Glutino!  It pretty much tasted like normal bread, especially toasted.

A few people have noticed if I’ve felt any changes since cutting back on gluten.  Given that my sensitivity wasn’t very serious, I haven’t felt any drastic changes.  I’m hoping the magic is happening on the inside, though.

Oh, and here’s a house hunting update.  After Friday’s news, I have finally reached a point where I feel like the honey badger.  I just don’t give a sh*t.  Heh.

What will be, will be.

So glad that you quoted the Honey Badger. My husband and I do it all the time. Mostly when we see someone going about their way without regards to anything else. “HONEY BADGER DON’T CARE!”

  • Annette @ EnjoyYourHealthyLife June 20, 2011, 2:33 pm

I love running in the evening. It is almost relaxing. Heh.

And I must try tempeh soon!!

  • Whitney June 20, 2011, 2:36 pm

My boyfriends FAVORITE thing to say is ” it is what it is”. Usually when I get all worked up over nothing!

  • Freya June 20, 2011, 2:38 pm

Oohh – how lovely to live next door to a running buddy! And night time running is sooo different to daytime; I went out on a night run once and it was so weirdly peaceful! I should do it more 🙂
Hehe LOL at the honey badger! I love that video 🙂

  • Kara June 20, 2011, 2:38 pm

Hang in there Caitlin-the same thing happened to the first house we put a bid on and someone I worked with had it happen to them 3 times. I know it’s discouraging, but think-better to know ahead of time! You’ll find the right house! We just moved in to ours Memorial Day weekend and are loving it.

  • Brittany (A Healthy Slice of Life) June 20, 2011, 2:39 pm

I’m making MMM sauce this week and am PUMPED about it.

I’m interested in hearing what the house issues are… hope it works out!

  • Laura June 20, 2011, 2:39 pm

That is one of the most awesome nature narrations ever–if only they were all like that!

And please tell us what they found wrong with the house! I was patiently waiting to find out, and you keep dropping links to the original post and curiosity is getting the better of me. Whatever it is, I hope the seller is willing to fix it.

    • Caitlin June 20, 2011, 3:06 pm

      I emailed you : )

  • Stephanie @cookinfanatic June 20, 2011, 2:39 pm

    • SaraRM June 20, 2011, 2:46 pm

      haha ditto!

I didn’t care to see so many snakes but man it was FUNNY!

  • Chloe (South Beach Girl) June 20, 2011, 2:48 pm

Workout buddies are definitely great motivation! Although, I am the slowest runner ever so it’s hard for me to find someone I feel comfortable slowing down 🙂

  • Bee Goes Bananas June 20, 2011, 2:49 pm

Congrats on the increase in mileage without knee pain!!

  • Christine June 20, 2011, 2:50 pm

Try Udi’s whole grain bread too – IMO way better then Glutino!

    • Caitlin June 20, 2011, 3:06 pm

I bought a loaf of that too!

      • Baking 'n' Books June 20, 2011, 4:10 pm

I buy a brand by Kindiggan..? That is SO wrong lol – I just know it starts with a “K”! But it’s good anyways 🙂 Like a plain bread but with seeds.

        • Debra June 20, 2011, 4:57 pm

I love all Udi products, but their bread keeps me a happy GF girl. Baking: I think you are thinking of Kinnikinnick? Please don’t make me say that one out loud 🙂 I don’t really like many of their products except cookies, and I gotta lay off those!

        • Baking 'n' Books June 20, 2011, 4:59 pm

LOL – yes that’s it Debra! Thanks. I liked their bread – only tried one type though.

Have you tried O’Dough’s GF Carrot Cake…oh my God…I have to lay off that! Yikes.

    • Kasey June 20, 2011, 5:11 pm

Totally agree with the Udi’s. Best gluten free bread, buns, and muffins we have found!

  • Nadine June 20, 2011, 2:51 pm

I LOOOOOOVVVVVEEEEE the Honey Badger. I find a way to work into my day, everyday. Sometimes you’re being attacked by the Honey Badger, and sometimes you ARE the Honey Badger. My husband and I have now expanded the conversation into whether or not our Dachshunds could take out the infamous Honey Badger. Don’t be a drag, just be a Honey Badger!

    • CaitlinHTP June 20, 2011, 8:32 pm

Hahah Maggie could never take out a honey badger.

  • Val @ Balancing Val June 20, 2011, 2:51 pm

I’m doing a post tomorrow about all the changes I noticed from being GF for 20 days! 🙂

  • Jennifer June 20, 2011, 2:53 pm

UDI’s whole grain is the best!

  • Jackie @ Baking Charms June 20, 2011, 2:53 pm

how hilarious is that video! too funny 🙂

  • Laurel June 20, 2011, 2:56 pm

Oh my goodness… such a funny vid! Also, my mom didn’t really benefit from going GF until about a month later. Hope you see results soon!

  • Ashley @ Thefitacademic June 20, 2011, 2:59 pm

haha, hilarious! Thanks for sharing – I’d never seen that video before!

  • TheHungeredOne @ MovingandMunching June 20, 2011, 3:05 pm

Glutino has a really good corn bread too. I mean, it’s not very good for a pb&j, but for a normal sandwich it tastes really great

  • Sarena (The Non Dairy Queen) June 20, 2011, 3:07 pm

I wish I had a workout buddy. My husband is so busy right now he doesn’t have time to get out and do anything lately. I’m one of the crazy people that doesn’t have to eat gluten free, but I love gluten free breads! Especially toasted. Oh and I make savory waffles and use them for bread all the time since it’s like toast!

  • Averie @ Love Veggies and Yoga June 20, 2011, 3:13 pm

It takes a good 2 weeks for gluten to really purge from the body and so it’s not uncommon not to notice anything in the beginning AND for their actually to be a worsening of symptoms sometimes in the beginning.

When i first when GF, Glutino pretzels were a staple for me. Tell me i cant have gluten and then all of a sudden, I “had” to have it. 🙂

  • Courtney June 20, 2011, 3:19 pm

    Hahaha That video was hilarious.

  • Dani June 20, 2011, 3:26 pm

That tempeh looks awesome! What kind is it and how did you prepare it?

  • Sarah June 20, 2011, 3:29 pm

I haven’t tried Glutino, but my general advice with gluten-free bread: TOAST IT! It goes from odd and chewy to… well… normal. Oh, and jam. Jam’s the best.

    • Debra June 20, 2011, 4:57 pm

      Amen, Sarah

  • Kate (What Kate is Cooking) June 20, 2011, 3:30 pm

I wish I had a running buddy! There are a lot of times I’m in the mood to run at night but I’m too scared to go by myself 🙂

  • Angela @ Eat Spin Run Repeat June 20, 2011, 3:34 pm

I’m sort of in the same spot as you regarding the gluten Caitlin – I haven’t been formally tested, but after a few incidents, I’m thinking that I may have a slight sensitivity so I’ve cut back a lot. My favourite gluten-free bread is the Chia Seed one by Silverhills Bakery – it’s so delicious!

  • julie June 20, 2011, 3:42 pm

Just a thought, but your gluten intolerance could be contributing to your fatigue? I know you say it’s not a serious intolerance, but there could be other symptoms that you aren’t even aware of that you’ll find are alleviated. Good luck with the GFness.

    • CaitlinHTP June 20, 2011, 8:31 pm

I think there may just be a connection!

  • Gina @ Running to the Kitchen June 20, 2011, 3:46 pm

well I guess that’s a better attitude than being overly emotional 😉 Still hope it turns out well for you guys though!

That tempeh and hummus sandwich looks amaaaazing!

  • Amber @ Busy, Bold, Blessed June 20, 2011, 4:12 pm

I looooove the honey badger hehe. I also like running at night, especially with a buddy!

  • Christine June 20, 2011, 4:13 pm

I’ve never seen that video before. I think I need to show other people- too good to not share with the world.

  • Errign June 20, 2011, 4:21 pm

I love that you brought up the honey badger!

  • Kelly June 20, 2011, 4:38 pm

Udi’s bread is amazing…the best gluten-free bread on the market…you don’t even have to toast it and if you are going to eat it within a week you don’t even have to refrigerate the loaf!

  • Rebecca @ How the Cookie's Crumble June 20, 2011, 4:49 pm

At least you can still eat some gluten! So days I just really really want a big slice of NY pizza on a gluten filled crust! I’m glad to hear the Glutino bread is good! I have been gluten-free for about 5 months now and have been scared to buy any bread from the store since all the loaves feel like a solid brick. Jason’s Deli uses a great gluten-free bread but I don’t know if they buy it or make it themselves. I’ve tried the Glutino English muffins – which are a little more like corn muffins then English – but they’re definitely a good alternative to no muffins! Udi’s bagels are good, but they dry out really fast.I bought some gluten free hamburger buns yesterday that I’m trying out tonight BBQ.

    • CaitlinHTP June 20, 2011, 8:30 pm

Oh thanks for the brand recs… I will keep an eye out.

  • The Teenage Taste June 20, 2011, 5:11 pm

Congrats on a great run! You’ll be back to running marathons in no time! 😉

  • Laura June 20, 2011, 5:15 pm

Trader Joe’s brown rice pasta is a great gluten-free pasta alternative btw. It is delicious and $1.99/bag. I love it!

    • CaitlinHTP June 20, 2011, 8:30 pm

Oh awesome, I will keep an eye out!

  • monicanelsonfitness June 20, 2011, 5:15 pm

Running buddies rock! I can’t wait to get back into it post baby. I’m hoping to find another cool Mommy to run with. The bread sounds pretty good- I will keep an eye out for it. The elvis? I must try this! Sorry to hear about the house- I hope the owners make the necessary changes so y’all can proceed

  • jose June 20, 2011, 8:55 pm

Oh, and a while ago I posted about getting hit by a car here in the comments section, and just wanted to let you know that I have fully recovered and am running a marathon in 3 weeks!

Glutino is good, but I like Rudi’s or Udi’s better (weird that they are so similar in names!) – or I have a really good/easy homemade bread recipe that I make all the time! :

  • kwithme June 20, 2011, 8:56 pm

I love running buddies. I rarely have them. On Friday, my neighbor/friend who is a beginning runner came home as I was finishing mile 2 of what I was hoping to be a 4 mile run. I told her to get her stuff on and I’d meet her after my 3rd mile. Well, we ran/walked another 2.3 miles. It was my first run that was longer than 4 miles. I was thrilled. My time was not great because she walked more than I would have but I put the miles on my feet. Yay for running buddies.

  • Chelsea @ One Healthy Munchkin June 20, 2011, 9:21 pm

I wish I had your energy to run so late! If I haven’t gone on a run by the time it’s 4 pm, I know I won’t be running at all that day. 😛

  • Courtney Leigh June 20, 2011, 9:54 pm

I found gluten free oats at Whole Foods Sunday. I stared at the package for ages before putting it in the cart. It seems like cheating or as if it’s too good to be true. But who am I to argue with Bob Red Mill?

    • CaitlinHTP June 21, 2011, 8:47 am

I think oats are inherently gluten-free its just the production process usually results in cross-contamination (but don’t quote me on that).

  • Emily @ Comfortable Home Life June 20, 2011, 10:14 pm

ahahaha how have I never seen honey badger before? SO funny!

  • Lauri (Redheadrecipes.com) June 20, 2011, 10:36 pm

I wish I had a running buddy! I realllly need the motivation!!

Have you tried the Great Harvest Gluten Free bread? Its actually very yummy and not hard as a rock like some GF breads.

I hope everything works out with your house, but if not, then I guess it wasn’t meant to be, right?

  • Jayme @ Runner-n-Spice June 20, 2011, 11:24 pm

Omg that video!! Sean showed it to mew a few weeks ago….we make honey badger references pretty regularly now! lol

  • Khushboo June 21, 2011, 1:00 am

Wow! Kudos to you for actually suggesting a run! And 4.3 miles- not bad, Caitlin, not bad :)!

  • Julie June 21, 2011, 8:14 am

Haha, my BF and I also always quote the honey badger. He is a Wisconsin grad, so it is even all the more fitting.

  • Logan June 21, 2011, 9:28 am

Love, love, love Udi’s breads – they really taste almost like regular bread. I tried the Glutino bagels once. They smelled like fish both frozen and after being toasted and tasted pretty bad. Even though they cost me about $7 I couldn’t bear to keep the rest of the package. I have gotten hooked on the Food for Life english muffins. I’m finding more and more gluten free products out there. Hopefully with all the competition they will come down in price – I never thought I would be paying $6 for a loaf of bread!

    • Kristine June 21, 2011, 10:18 am

I have to second this! Udi’s is much better!

  • Amber K June 21, 2011, 12:47 pm

I have never tried any other bread besides Udi’s, but glad to know you enjoyed the bread! I’m not able to partake since every GF bread item I’ve found has xanthan gum in it. Although I’m luckier with pasta, they usually don’t have it. Quinoa pasta is tasty and I’ve gotta try some brown rice pasta. You convinced me to buy some millet this past weekend. So I’m going to be trying that soon too!
