Breakfast for Dinner

It’s hard to be productive when you’re distracted by the cuteness.

Put it away, James!  (Whatever.  You know you looked.)

But I did get a lot of work done today! 🙂 I also had the lovely experience of trying to get a 4 year-old to eat vegetables.  Which was a LOT harder than I thought it would be.  I cracked under the pressure and gave up.  The Husband held firm though and got Konner to finish!

Snack was pool-side blue corn chips and salsa.  Divine!

 IMG_0436

And dinner was a breakfast bowl.  I was just craving yogurt and oatmeal for dinner!

IMG_6401

Wanna know how to get all your mix-ins into the bowl and make it look pretty?

 IMG_6400

Prop up the bowl so everything slides to a side.  :)  Presentation makes food more fun to eat!

In my mix:

  • Plain Greek Yogurt
  • 1/2 cup oatmeal
  • 1 banana
  • Flax
  • Strawberries
  • 1.5 tablespoons of Naturally Nutty Cinnamon Peanut Butter

I’m still hangry so I’m going to cut a cantaloupe in half and eat it straight out of the peel with a big spoon.  :)

When you do breakfast for dinner, what are you most likely to eat?  Pancakes? Waffles?  Eggs?  Giant cereal bowl?  Yogurt messes?  It’s all so good! I can’t choose.

I lean towards savory breakfasts when I do breakfast for dinner. Something like an omelette or eggs and home fries.

  • Ange(River Trekker June 10, 2010, 11:35 pm

    😀 I keep it simple.

Fruit for me and oatmeal for my Husband.

  • Astrid June 10, 2010, 11:43 pm

My brinners usually have pancakes and eggs. I like something savory for dinner, that way I can enjoy a good dessert. You are so right, though. There are so many good breakfast options. Definitely my very favorite meal!

  • Bethany @ More Fruit Please June 10, 2010, 11:45 pm

Waffles… always waffles! Although today I was getting pretty close to pancakes!

  • Sarah June 10, 2010, 11:47 pm

I’ve always wondered…do you mix up everything in the bowl to eat it, or do you eat all the food separately? Your food bowls look amazingly delicious! I did one with greek yogurt and oatmeal, but too much oatmeal to yogurt, it was seriously thick and dense and chewy.

    • Caitlin June 11, 2010, 9:27 am

I mix it up but it’s not pretty when I do that 🙂

  • Kellie June 10, 2010, 11:49 pm

oatmeal or pancakes are both favorites for dinner. I will sometimes eat them for dessert.

  • claire June 10, 2010, 11:54 pm

Mmm…all breakfast for dinner is good in my book! I love oats but if I am having breakfast for dinner, I think I would go for pancakes or waffles!

Oh, and I was a nanny in college 5 days a week and fed them veggies for dinner since the mama was a healthy one. I definitely struggled and ended up giving them their preferred veggies sometimes, but I definitely think it was training for the future!

  • Wei-Wei June 10, 2010, 11:54 pm

Mmm, breakfast for dinner! I haven’t done that in a loooooong time… but pancakes sound good 😀 Sometimes I make omelettes, though. Omelettes/eggs for me aren’t strictly breakfast foods.

Konner is so cute in the pool! 😀

  • Amanda @ Organic Eats June 10, 2010, 11:57 pm

Just ate breakfast for lunch today! Egg white frittata….oh so good! 🙂

  • Michelle @ Give Me the Almond Butter June 10, 2010, 11:57 pm

I’ll do a big bowl of comforting oatmeal for dinner if I’m not feeling the whole cooking thing.

  • Sarah @ cocoanutshakes June 11, 2010, 12:01 am

Breakfast for dinner is usually omelets/eggs, but yogurt looks amazing too!! Mmm breakfast is the best meal ever. I love love love when restaurants have all day breakfast!

  • Jacquie June 11, 2010, 12:15 am

I love omelets or scrambled eggs if I have breakfast for dinner. However, I have this massively overripe banana staring at me so if it’s not eaten tomorrow morning, I’m thinking banana pancakes might make the weekend start off special.

  • Jaclyn June 11, 2010, 12:20 am

Wow it’s no wonder you’ve been “bitten by the baby bug” with that “cuteness” around! How long are they staying?

As a college single, sometimes I find myself eating bfast-for-dinner.. my go to would prob be a cereal mess… tons of (er, okay whatever i have on hand ;)) kinds mixed with frozen fruit or berries and/or banana slices and almond milk and a pb blob! Sometimes I throw carob chips in there to make it kind of sweet. I’ve found that frozen berries are cheaper and like you, I like my almond milk COLD which really helps with that! 😀

  • Jenn (Jenn's Menu and Lifestyle Blog) June 11, 2010, 12:21 am

When I eat breakfast for dinner it’s most likely French toast, pancakes or an omelet. I had breakfast for dinner last night. It didn’t keep me full! lol

  • Meg June 11, 2010, 12:26 am

    SUCH adorable pictures!

I love savory oatmeal for dinner with eggs!

  • Jessica @ Jessica Balances June 11, 2010, 12:28 am

I looove breakfast for dinner! I usually have eggs with cheese and avocado 🙂 or chocolate chip pancakes… Yummm.

  • Courtney (Pancakes & Postcards) June 11, 2010, 12:33 am

Breakfast is my favorite dinner. Really I could eat breakfast for every meal. And be totally fine with it. Especially pancakes. I mean if you have fruit and yogurt or peanut butter or something its pretty balanced, right…? hmmmm.

  • Jenn June 11, 2010, 12:35 am

Special K with Red Berries and almond breeze to the MAX!

  • Sarah for Real June 11, 2010, 1:19 am

I use every pan I own and make up a whole big breakfast feast because I never have the time (or hunger) to do it all in the morning.

Usually I make up eggs and either sausage or bacon plus french toast or waffles. OR I’ll make homemade biscuits and sausage gravy. Yum! I love breakfast for dinner 😀

  • Helen June 11, 2010, 2:07 am

Breakfast for dinner is always good. I love having yogurt bowls or even cereal and milk for dinner. But only if I’m by muself, my boyfriend would never do this!
Konnor is so cute! Getting kids to eat veggies is so hard, even covered with cheese! Well done to Kristen for getting him to finish them.

  • Freya @ Brit Chick Runs June 11, 2010, 3:11 am

I’m an oatmeal girl if it’s breakfast for dinner 😀 it’s just so comforting!!
LOL at James; my cat LOVES to let it all hang out…!

  • Annie@stronghealthyfit June 11, 2010, 4:08 am

Usually it’s eggs, brussel sprouts and hash browns! I love breakfast foods. 🙂

  • Alyson @ Nourished Fitness June 11, 2010, 4:10 am

Lately I’ve been all about Frittatas for dinner! But there is something that feels indulgent about waffles for breakfast 🙂

  • Jessica @ How Sweet It Is June 11, 2010, 6:30 am

Pancakes definitely. I don’t even consider yogurt messes breakfast. I don’t think I’ve ever eaten yogurt for breakfast! It’s more of a snack for me. 😉

  • Lauren June 11, 2010, 6:44 am

There are often times when I crave a big yogurt bowl creation for dinner. I have a feeling if I lived by myself, I would be eating cereal for dinner a lot more often. Not necessarily the most nutritious choice for dinner, but sometimes, you just gotta go with it! 🙂

Sounds like a wonderful day Caitlin!

  • Keri June 11, 2010, 7:01 am

I used to eat 2 normal sized bowls of cereal for dinner because I loved it so much. It was like comfort food to me. Unfortunately, at that time I was eating special K and I never stayed full after I ate it! I know better now, but still love my cereal 🙂

  • Alison June 11, 2010, 7:01 am

If I do breakfast for dinner, it’s almost always eggs, because that is the only time I eat them.
Sometimes I make pancakes for my family, but usually it’s eggs, hashbrowns and fruit.

  • Sarah (Running to Slow Things Down) June 11, 2010, 7:24 am

I love having breakfast for dinner! I kind of base it off of what I might have had for breakfast. If, for example, I had sweet oats, then I’ll have a savory plate of eggs and toast, etc.

Unless I’m just really feeling sweet oats again. Nothing wrong with having it twice in one day! 😀

  • Tara @ Food for Fuel June 11, 2010, 7:29 am

My favorite breakfast for dinner meal is breakfast tacos! I could actually eat them for every meal…scrambled eggs with whatever mix-ins (be creative) topped with salsa and put in a warm tortilla!

  • Diana (Mymarblerye) June 11, 2010, 7:48 am

i’ve been wanting oats for dinner lately cause it’s TOO GOOD for just breakfast. But alas, if I ate breakfast for dinner, I usually go all out: french toast, eggs, EVERYTHING!

  • Lee June 11, 2010, 8:15 am

Eggs! I am trying to make myself like oatmeal. Everyone else just loves it, but I think it’s just sort of blah.

  • Wendy June 11, 2010, 8:21 am

Breakfast for dinner happens pretty frequently here – usually it involves eggs!

  • Sarah June 11, 2010, 8:27 am

I tend to go for eggs at dinner time. I just love eggs- I will eat them for every meal. They’re what keeps me from going vegan. But as I type that, I know that seems strange…

  • Caroline June 11, 2010, 8:42 am

I get on kicks where I do the same thing for weeks. Right now I am on a yogurt mess kick which has been awesome. I also look forward to brunches out on Sunday and typically go for eggs when I am out or something crazy like French toast 🙂

  • Jessica @ The Process of Healing June 11, 2010, 8:42 am

I love ALL types of breakfasts! But I do lean towards the savory breakfasts for dinner, with the occasional pancakes.

  • Robyn @ Frugal 'n' Fit! June 11, 2010, 8:45 am

Runny eggs on toast with a side of fruit. Simple, satisfying, and delicious (just like me! Hardy har har).

  • Olivia @ Blissful Runner June 11, 2010, 8:47 am

Careful! I just toured a fruit processing company for work and learned that cantelope has insane amounts of salmonella on it’s skin! It was the only fruit they had sitting in tubs of disenfectant. Who knew?

    • Caitlin June 11, 2010, 9:43 am

gross. exactly what i wash it with soap and water!

  • Carolyn @ lovinlosing June 11, 2010, 9:00 am

    pancakes and eggs, waffles, bacon

  • Raya June 11, 2010, 9:04 am

Eggs and homemade “hash browns” (aka potatoes with PAM spray haha)

  • Jen June 11, 2010, 9:08 am

I LOVE LOVE LOVE breakfast for dinner!!! My favorite being pancakes, eggs or just a bowl of cereal. Yum! Breakfast is my favorite meal! 🙂

  • Heather @ Side of Sneakers June 11, 2010, 9:08 am

What a cutie pie!! I love pancakes for dinner 🙂

  • Stephanie June 11, 2010, 9:14 am

Breakfast for dinner always means pancakes for us! We’re obsessed with pancakes!! 🙂

  • kalli@fitandfortysomething June 11, 2010, 9:15 am

seems like a great day caitlin! love your bfast for dinner idea….i would probably have eggs for dinner but it is probably so hot where you are!

  • My Life As I Live It June 11, 2010, 9:15 am

We like to do either breakfast steak with eggs or egg burritos, hubby’s craving brinner as we speak, may have to do that this weekend.

  • Becky June 11, 2010, 9:17 am

My favorite dinner for breakfast used to be a big egg white omelet with spinach and whatever other veggies left over in the fridge thrown in and salsa on top. I just recently went vegan so I need to set to work finding something to take the place of the egg whites, any suggestions?

Also, where do can I buy some of that DELICIOUS sounding Naturally Nutty Cinnamon Peanut Butter?? I’m a nut butter fanatic and that just makes my mouth water! 🙂

    • Caitlin June 11, 2010, 9:44 am

i think you can get it from kath’s open sky shop… she gave it to me as a gift when i was visting her (katheats.com)

  • Kelly June 11, 2010, 9:17 am

Cantaloupe is one of my favorite fruits. Yummy.

  • Tracey @ I'm Not Superhuman June 11, 2010, 9:19 am

If I’m super busy, cereal. If I have time, probably pancakes because I never get to eat those in the morning. I’m way to rushed to make them!

  • Becca June 11, 2010, 9:26 am

I never have breakfast for dinner! Yoghurt and cereal just don’t do it for me; my fiancé can’t stand eggs (we usually eat the same thing at supper time)… Also, years of skipping breakfast have just made me uncreative!

I’m more inclined to have dinner for breakfast – nothing beats cold curry in the morning!

  • Kelly @ Healthy Living With Kelly June 11, 2010, 9:27 am

    Usually waffles and eggs! YUM!

  • Rob Runs (Slowly) June 11, 2010, 9:42 am

I’ve been following your blog for a while – I find it really inspirational as I train for my first marathon in the fall. Thanks to you, as well, I have discovered an absolute addiction to pouring raw oatmeal in my yogurt. I had no idea you could even do that and I do it for probably two dinners a week these days! If not oatmeal than yogurt on some Kashi cereal (with some additional brown sugar and cinnamon) – I had that for dinner last night.

    • Caitlin June 11, 2010, 9:45 am

      thank you 🙂

  • Marissa June 11, 2010, 9:44 am

Breakfast is delicious! I basically love anything breakfast. Yogurt, cereal, fruit, eggs, waffles, pancakes, muffins, sausage, gravy, biscuits, bacon… (hah, I swear I used to be a vegetarian!)

  • Miranda @ Mirandasjeans June 11, 2010, 10:02 am

Love them all as breakfast dinners. Eggs, pancakes, waffles, but of course Oatmeal for sure! Remember I could eat oatmeal/breakfast foods for every meal of the day.

  • Jenny June 11, 2010, 10:04 am

James and Konnor are so cute and the picture is poking at my baby urge. Never ever thought I’d have the biological clock, but it’s kicked in big time. And, it is accelerated by the fact that my dog adores children.

  • Chelsea @ One Healthy Munchkin June 11, 2010, 10:37 am

I’ve never done a sweet breakfast for dinenr like that but I always crave it! I usually do something savory like an omelette.

  • Amber K @ sparkpeople June 11, 2010, 11:16 am

Breakfast for dinner is usually a quick bowl of cereal. I don’t do it often, but it is usually when I’m too tired to do anything else.

  • Corinna June 11, 2010, 11:41 am

I love that bowl! Do you mind sharing where you got it from?

    • Caitlin June 11, 2010, 12:36 pm

I got it from marshalls 🙂

  • Erika June 11, 2010, 11:54 am

I think I could eat breakfast for every meal! For an “evening breakfast” I lean towards eggs and in the afternoon pancakes.

  • Beth @ DiningAndDishing June 11, 2010, 12:37 pm

I always think of dinner as a savory meal so my “breakfast at dinner” is usually an omelette. Works out well since I rarely crave one for actual breakfast!

  • Bethany Herrington June 11, 2010, 12:56 pm

It’s normally pancakes. On our vacation out west I found the most fabulous little place called Poppycocks in Apsen…they have a lot of fresh/organic choices on the menu. I ordered oatmeal/buttermilk pancakes. It tasted like I was eating oatmeal, except in pancake form. Two pancakes filled me up and they weren’t even that big. I bought some of their mix to bring home with us and made some last night. It was just as good. When I opened the bag it seriously looked like oatmeal. There is little else (or so it seems) to the mix….it looked like oatmeal mostly. Mix it with melted butter (next time I’ll reduce it to see how it turns out – wonder if applesauce or yogurt could be used as half of the butter??? Any thoughts on that?), egg and buttermilk (which I made by adding some lemon juice to regular milk). I’ve got to find the recipe oneline to make again. It was SOOO good. So…that’s my choice of breakfast for dinner at this point – Poppycocks oatmeal/buttermilk pancakes.

  • Jolene (www.everydayfoodie.ca) June 13, 2010, 5:37 pm

When I have breakfast for dinner it involves eggs for sure!
