I am struggling to stay awake – which is bad because I’m probably going to be working/driving until 11:30 or so.  I think I’m going to need more coffee!

I found myself eating ice cream straight from the carton this morning.  Sugar = alertness (at least temporarily).  It was good. :)  Breyers is my favorite brand of ice cream because of the short ingredients list.    I like single servings of pretty much anything, but I’m not going to buy a whole container of less-than-natural ice cream.  There are better options… like Breyers!

This week is probably going to be a pretty relaxed week in terms of workouts.  I always say, “Do the best you can given your CURRENT circumstances,” and my current circumstances if that I’m busy and traveling this week.  So, long and hard workouts are out of the question.  That’s OK with me because I know I’m doing the best I can, relatively speaking.

My best today was Yoga Sculpt, courtesy of ExerciseTV.  Her face explains how I initially felt about downward dogs this AM:

IMG_8624

But it ended up being all good. :)  I love Yoga Sculpt – you actually work up a sweat doing it!  I did 25 minutes of the 30 minute program, and then I took James on a 15-minute walk.

Post-workout lunch:

IMG_8630

A mix of roasted Brussel sprouts, brown rice, and vegetarian baked beans.  The sweetness of the baked beans really complimented the sprouts!

IMG_8631

And… I’m off!  I need to get ready, get in the car, and drive 2 hours north.  I’m meeting my Dad and grandpa for dinner, and then I’m doing an Operation Beautiful presentation for the University of Florida students.  I’m excited to meet fellow bloggers Shannon and Jenny as well!   If you’re attending the presentation, please be aware the room has changed to 34 Anderson Hall

What’s your favorite flavor of ice cream?  I love: coconut, ginger, coffee, and mint chip!  Don’t make me choose just one!

PS – Alison won the Dick’s Sporting Good $50 Gift Card giveaway! Congrats.

I love anything with big chunks of fudge or brownie, but also love moose tracks. mmmm had some last night with some warm chocolate cake. sooo want some now.

  • Laura@FindingAHealthyBalance....after a 100+ Pound weight loss!!! March 17, 2010, 12:42 pm

COFFEE, with Publix “Peppermint Stick” a close 2nd!!! I also love ice-cream with chocolate, peanut butter & pretzels in it.

Have a good trip & presentation tonight! =)

  • Heather (Heather's Dish) March 17, 2010, 12:43 pm

i LOVE coffee ice cream from haagen dasz 5 – only 5 ingredients, and it’s the creamiest ever! either that or blue bell homemade vanilla – it’s the best vanilla i’ve ever had! all of it with hot fudge please 🙂

  • Catherine March 17, 2010, 12:46 pm

I looove ice cream!! I have a little problem with dairy though, so I generally get Stonyfield Frozen Yogurt instead since yogurt does less of a number on me. However I just discoved Purely Decadent coconut milk ice cream – heaven in a bowl my friends!!

  • Julie March 17, 2010, 12:46 pm

I love cookies n cream, but honestly I like any ice cream with big hunks of candy/treats/brownies/cookie dough in them or giant swirls of fudge, marshmallo, caramel or peanut butter. Hello, I am a fat kid.

  • Jessica @ How Sweet March 17, 2010, 12:47 pm

Ice cream is not my dessert of choice – it is a little too cold for me. But I LOVE cake batter and coconut flavors. 🙂

  • Angela (Oh She Glows) March 17, 2010, 12:50 pm

I love that vegan coconut dream or whatever it’s called…soooo expensive but so worth it. I used to love cotton candy ice cream + choc chip cookie dough when I was young, lol.

  • Rachel (Suburban Yogini) March 17, 2010, 12:52 pm

Lactose intolerance means no ice cream for me. For some reason ice cream is the worst for making me ill 🙁

Soy ice cream isn’t so bad. I had a yummy chocolate flavoured one the other week.

  • Carolyn @ lovinlosing March 17, 2010, 12:54 pm

I’m currently working on Edy’s Peanut Butter Cup. But…I’ll have to find a similar product with less ingredients.

  • Evan Thomas March 17, 2010, 12:55 pm

No one’s expected to choose 1 flavor of ice cream. But lately, I’ve been all about the mint! I’ve tried that breyers and wasn’t a fan. It was a bit too chalky(maybe my freezer was overly cold). Today I might buy a pint of mint chip coconut milk ice cream if I can find it

  • Chloe (Naturally Frugal) March 17, 2010, 12:55 pm

I’m with Rachel on this one – ice cream and all dairy makes my stomach ache, but I love coconut ice cream! CocoBliss is the best, although pricey, but that means I make it last longer and savor every bite.
Have you noticed any changes yet switching to less dairy consumption? Since I quit (about 6 months ago) I have noticed huge changes, which definitely tells me I am headed in the right direction.

    • caitlin March 17, 2010, 12:56 pm

i haven’t been great about dairy (obviously) but i have noticed that hydrating is making me feel much better in general.

  • Samantha Angela @ Bikini Birthday March 17, 2010, 12:56 pm

    good luck with the presentation!

    your lunch looks fab btw.

  • Gabriela @ Une Vie Saine March 17, 2010, 12:56 pm

I don’t think I’ve ever met a flavor I don’t like! That being said, Coldstone Chocolate Cake Batter is out of this world, as is their dark chocolate! They make some incredible creations 🙂 Good luck at the Operation Beautiful event, wish I could go!

  • Julie @ Peanut Butter Fingers March 17, 2010, 12:57 pm

ice cream is my ALL TIME favorite food. i cannot choose a favorite flavor! my top favs are:
    1. chocolate marshmallow
    2. neapolitan
    3. any flavor w/ an innordinate amount of nuts, chocolate, cookie dough & peanut butter chunks

  • Meghan@traveleatlove March 17, 2010, 12:58 pm

I love coffee ice cream And I love your attitude about doing your best. I have whole set of “rules” when I travel for work that basically all have to do with doing my best and being kind to myself.

  • Cynthia (It All Changes) March 17, 2010, 12:59 pm

    I like butter pecan. Alot!

  • Shannon, Tropical Eats March 17, 2010, 12:59 pm

B&J’s Chunky Monkey is my fave. I work at the local Ben & Jerry’s in town so I get to try like 50 flavors.. which can be a good/bad thing lol

  • La March 17, 2010, 1:01 pm

LOL I used to work at Cold Stone and more often than not, I would eat leftover ice cream for breakfast. Back in the day my favorite Cold Stone flavor was Banana with almonds and caramel and real bananas! Growing up my favorite was mint chocolate chip. But I think Cold Stone ice-creamed me out and I really don’t like ice cream anymore. The occasional original fro yo, yes, but dairy and I aren’t really good friends anyway. I much much much prefer sorbet. Mango, peach, lemon, and anything fresh and home made please.

Can you come to New York and do a presentation on Operation Beautiful here pretty please??

  • alli March 17, 2010, 1:03 pm

i used to love bunny tracks. i haven’t had it in forever, but whatever has chocolate covered peanut butter bits in it, i like 🙂 i don’t buy ice cream, unless we are having some kind of party, so when i need an “ice cream” fix, i head down about a mile from my house for some frozen yogurt. it seems like ice cream upsets my stomach more than it used to. froyo doesn’t bother me at all 🙂
    good luck at the presentation!

  • Lauren @ Eater not a runner March 17, 2010, 1:04 pm

Oreo probably! But I love ice cream in all forms 😉

  • Amy @ Second City Randomness March 17, 2010, 1:04 pm

Yoga sculpt sounds like one I might enjoy! I’m not the biggest fan of yoga, but am trying to look at it in a more positive light… Sounds like it’s a shorter one that packs a bit of intensity!

  • Paige (Running Around Normal) March 17, 2010, 1:06 pm

that video still is hilarious lol
My favorite ice cream? Probably cookies and cream…when it doubt, go with cookies and cream 😉

  • haya March 17, 2010, 1:07 pm

i pretty much love every kind of ice cream that you can imagine! since i got my ice cream maker a few years ago, i’ve made some pretty wild flavours, and they were all delicious (and all had super short ingredient lists!). favourites were ones that had interesting chunks of stuff mixed in. i can’t go back to store-bought.

  • Christie March 17, 2010, 1:07 pm

    Good luck with your presentation!

    ~Christie http://rollerkoesterrun.wordpress.com/

  • Caitlin @ Right Foot Forward March 17, 2010, 1:08 pm

I love coffee ice cream! Runners up are maple walnut, butter pecan, and pistachio.

Good luck with the presentation today!

  • Amanda (Two Boos Who Eat) March 17, 2010, 1:10 pm

I love ice cream and will pretty much eat any flavor any brand any time. I love gelato the most though. My husband and I got gelato every day when we were in Italy. It was fabulous!

  • Morgan @ Healthy Happy Place March 17, 2010, 1:10 pm

we did the exact same work out today. I did Yoga Sculpt, then walked my dog for a half hour. haha 🙂

  • Beth @ Beth's Journey to Thin March 17, 2010, 1:14 pm

mmm I love ice cream. I love green tea, mint chocolate chip, and cherry garcia the best probably 🙂

  • Jessica @ The Process of Healing March 17, 2010, 1:14 pm

Yummm!! COokies and cream, mint chocolate chip, cookie dough… I love them all, what can I say?

    Good luck on the presentation!!!!

  • Tay March 17, 2010, 1:16 pm

Nothing beats ice cream straight from the container. It just tastes better! If you like ginger, have you tried Haagen Daz just 5 ginger ice cream? I LOVE the brown sugar flavor, so I’m sure ginger would be phenom! My favorites include: cookies n’ cream (classic!), Ben & Jerry’s Dublin mudslide, Dreyer’s girl scout Samoas, pumpkin, and mud slide. Too many!!

    • Carrie H March 17, 2010, 4:33 pm

Wait wait wait — they make a samoas ice cream flavor?!?!?!?! I think my entire universe just shifted. Maybe it is best if I forget this and never try to find that ice cream flavor … my love for samoas is just too great. If I find this ice cream, I may never go to work/spend time with family/run/read/sleep/watch t.v./walk my dog/cook/do anything else ever again. I’ll just eat this ice cream all day every day.

      • Tay March 17, 2010, 11:33 pm

YES. Dreyer’s (or Edy’s I think on the east coast). Slow churned Samoas. HEAVEN in ice cream form. I can’t buy it anymore because I’ve been known to eat almost the whole carton in one night. I do not joke. But you have to try it at least once!!

  • Eve @ Nutrition by Eve March 17, 2010, 1:16 pm

Good luck tonight! My husband is a Florida Gator, and I’ve been wanting to visit the school ever since we started dating – one day! My favorite ice cream is definitely coffee 🙂

  • Kelly March 17, 2010, 1:19 pm

  • Kalli@fitandfortysomething March 17, 2010, 1:24 pm

your lunch looks great! that is my kind of yummy!
    i love cookies and cream……have a good day 🙂

  • Christina March 17, 2010, 1:28 pm

I’m not too picky when it comes to ice cream! Anything with chocolate, brownies, cookie dough, peanut butter, or chocolate covered peanuts is game!

  • Christina March 17, 2010, 1:28 pm

Oh, + cold stone creamery’s birthday cake is AMAZING. See, I told you I wasn’t picky =)

  • Lauren March 17, 2010, 1:29 pm

I really need to venture out a little but if I am treating myself to ice cream I HAVE to have good ol’ chocolate!

  • Leah @ L4L March 17, 2010, 1:34 pm

I love ice cream. Vanilla. Chocolate. Sherbert. Butter Pecan. Cherry Garcia. Mint. Amaretto. Neopolitan. EVERYTHING.

  • Freya @ Brit Chick Runs March 17, 2010, 1:37 pm

Awh I hope you have a good drive.
I’d love to find some all-natural ice cream! My favourite is Ben and Jerry’s chocolate brownie – I adore it! Other than that, chocolate cinnamon is good 🙂 But I always like the random flavours in restuarants…I just like ice cream 🙂

  • Ashley March 17, 2010, 1:38 pm

mmm I would have to say coffee and mint chip are my favorites! But I recently bought Ben & Jerry’s limited batch Maple Blondie and it is to die for!! Very rich but oh so good for a few bites…

  • The Healthy Hostess March 17, 2010, 1:42 pm

I missed congratulating you on the Tri! That is such an amazing accomplishment! You go girl!!
I am hoping after my baby is due (in less than 4 weeks!!) I can get into training for a Tri! I know I will be itching to get back into shape, ASAP. Good luck today!

  • Nicole, RD March 17, 2010, 1:43 pm

I love mocha chip ice cream most! Mmm!

  • Matt March 17, 2010, 1:43 pm

    PB Cup for me!

  • liane March 17, 2010, 1:44 pm

no question: Chocolate Chip Mint– the bright green kind with chocolate chips. None of that chocolate flake crap. If I’m going to eat ice cream, give me the not-all-natural kind! 😉

  • Shannon March 17, 2010, 2:00 pm

I looooove coffee ice creams, so my favorites are espresso oreo (from Bev’s, a shop in Richmond, VA), and any other coffee ice cream with chocolate chunks or fudge swirls 🙂

  • clay March 17, 2010, 2:06 pm

Lol way to start off the day with ice cream! I actually did the same thing! And your post w/o lunch looks amazing!

  • Mastering Public Health March 17, 2010, 2:12 pm

I’m not a big ice-cream-lover I love TEMPT (Living Harvest’s non-dairy, non-soy hempmilk ice cream) recently. I am *not* a coffee person but their Coffee Biscotti flavor is to die for. It has little brownie-like bits in it! Their Mint Chip is also amazing. You need to check those out!

  • Tonyne @ The Unlikely Success Story March 17, 2010, 2:13 pm

My favorite is really just vanilla, then add a bunch of toppings to it. 🙂

  • Tasha - The Clean Eating Mama March 17, 2010, 2:17 pm

I love mint coconut ice cream! AND chocolate! =)

  • Kim March 17, 2010, 2:23 pm

I love Breyer’s! My favorites are classic cookies and cream or chocolate chip. I’m not that crazy with the flavors 😉 I really love a good vanilla bean!

  • PippaPatchwork March 17, 2010, 2:25 pm

Edy’s Slow-Churned ice cream is AMAZING because it’s lighter than most ice creams but I actually like it BETTER! It’s soft and delicious. I’m also a waffle cone junkie and make my own with my Chef’s Choice waffle cone maker. I use whole wheat flour so they’re super yummy and guilt free 😉 Last night I had a cone with chocolate fudge brownie, strawberry, and mint chocolate chunk. Mmmm I’ll probably have to repeat that soon.

  • hhh March 17, 2010, 2:36 pm

How did you do the rice? Did you cook it in the beans, or cook it first and then mix?

  • Anna @ Newlywed, Newly Veg March 17, 2010, 2:46 pm

    Coldstone cake batter!!!

    Good luck! You’ll rock it!

  • emily March 17, 2010, 2:50 pm

I seriously got a bit panicky trying to choose a favorite flavor! Calm down, Emily.

  • Allison March 17, 2010, 3:04 pm

Oh man, we always used to get breyer’s as a kid! I ALWAYS ate chocolate. I never really buy ice cream anymore- I always go out for it, and I prefer fro-yo anyway.

I think my alltime favorite ice cream is chocolate with oreos. YUM

  • Stephanie March 17, 2010, 3:09 pm

If you like YogaSculpt (which I love too!) then you should totally try Yoga Works Body Slim on ExerciseTV. It’s the same concept of raising your heart rate while you are doing yoga, so you get the benefits of cardio/toning/stretching all at once – but it’s a bit more challenging and I love it! Just wanted to let you know 😀

Yay for fitbloggin in only 2 days!

  • Amber K @ sparkpeople March 17, 2010, 3:11 pm

I’m a cookies and cream girl, but I have never found a kind that tastes good that doesn’t have a ton of junk in it. So I tend to stay away.

    Have fun today!

  • Elizabeth March 17, 2010, 3:21 pm

Chocolate chip cookie dough is the best! 🙂

  • Tyler Ramey March 17, 2010, 3:25 pm

You are my baked bean heroine!!! 🙂 You are always coming up with awesome ideas for the ole beans, which I heart.

  • Jaclyn March 17, 2010, 3:33 pm

Hey Caitlin, good luck tonight! We’re cheering for you!
Best ice cream flavor? Espresso chip, for sure. French silk is pretty bomb too, and I was digging the seasonal pumpkin flavor this year! Ohhh and can’t forget about any of the GS cookie flavored ones–or birthday cake–love birthday cake ice cream!
    http://www.justjac.wordpress.com

  • Carolyn @coolbeans March 17, 2010, 3:44 pm

I love ice cream flavours that incorporate coffee and chocolate. I like little bits of chocolate or something to crunch on. It makes eating a bowl of ice cream more exciting. I also wouldn’t say no to a little caramel tossed in there! 😉

  • Sarah @ THE FOODIE DIARIES March 17, 2010, 3:52 pm

you’re definitely getting in a lot of green with the mint ice cream and brussels for st pattys 🙂

love love love breyers, too. i’m a pretty simple vanilla or strawberry girl. both of which breyers makes INCREDIBLE versions of–esp. the strawb!

  • Kelly @ Healthy Living With Kelly March 17, 2010, 4:06 pm

My favorite ice cream changes based on the season. Like in the winter time I like cookies and cream but now that it is spring I want peaches and cream!

  • Babycakes March 17, 2010, 4:08 pm

My favorite flavor of (vegan) ice cream is …… vanilla. Seriously. I am super boring 🙂

  • Becky @ flybynyght March 17, 2010, 4:56 pm

  • Melissa March 17, 2010, 4:57 pm

  • Lisa @ Early Morning Run March 17, 2010, 5:24 pm

Hope your presentation goes well tonight!!

I can’t choose one favorite ice cream flavor either, although I do think today is the perfect day for Mint Choc Chip!! The green-ness and all! All ice cream must have chocolate in it for me, except for black cherry. Delish!

    travel safely!

  • Hedda March 17, 2010, 5:31 pm

Hahaha, you are the best! “I found myself eating ice cream straight from the carton this morning.” Love it!
The ice cream looked delicious though, and hey, calcium in ice cream.
My favourite taste..hmm.. must be blueberry and vanilla. Ah, come summer, COME!
Good luck with your presentation, I’m sure you will inspire and motivate them to respect and love themself, and the people around them.

  • John March 17, 2010, 5:40 pm

I use to eat the whole carton every night all most! there’s no ice cream I don’t like but the best for me is Reese’s Blizzard, rocky road, turtles and capuccino. So much money wasted and so many calories packed on!

  • Vaala March 17, 2010, 5:42 pm

I love the facial on that yoga instructor’s face!! Classic! As for ice cream, since I’m mostly vegan and we have a terribly limited selection of vegan ice cream in New Zealand then as long as I can eat it then I love it! How tragic!

  • cara March 17, 2010, 5:58 pm

Mmm I was totally raised on Breyer’s all natural. So good, and really totally reasonable health-wise.
My favorite ice cream is COFFEE! But I love all ice cream. It’s very mood dependent for me. And I can’t eat it during Lent! I miss it like mad!

  • Diana (Mymarblerye) March 17, 2010, 9:02 pm

have a safe trip! BTW your meal look sso warm and healthy. I want to dig right in.

Mint chocolate chip!!! My dad and my uncle got me hooked on it for as long as I remember so it’s the easiest choice. Because of that too, I created a mint chocolate chip cooke- yummm!

I hope the talk goes well tonight 🙂 I’ll see you soon! yay!

  • Brynn March 17, 2010, 10:01 pm

My all-time favorite favorite ice cream is definitely Dreyers mint chocolate chip. I don’t eat much of it these days but always a nice treat!

  • Emily Eats and Exercises March 17, 2010, 10:14 pm

I like ice cream, but to be honest it’s mostly about the toppings for me – hot fudge!
You always make baked beans look so appealing, but I’m not sure I like them. Do you make your own or use a can?
I was looking over your breakfast post – I’m definitely trying that grilled sandwich for breakfast tomorrow.

  • Babs March 17, 2010, 10:14 pm

I just blogged about ice cream too! I worked in an ice cream parlor for 4yrs, and have always loved it. But as a vegan the options are slim . . . well they used to be 🙂 I just had the creamiest, most guilt-free ice cream from Cashew Creamery–dairy free, soy free, and sugar free. It’s raw ice cream and it is glorious 🙂 If you’re ever looking for a healthy ice cream treat definitely track down some Cashew Creamery Choc flavor!!

  • Jolene (www.everydayfoodie.ca) March 17, 2010, 11:09 pm

I love coconut icecream made with coconut milk!

  • Christina March 18, 2010, 1:15 pm

I have many different flavors I like, but the one sticking out to me now is toasted coconut in a fresh waffle bowl with hot fudge sauce. I only get this after a particular race where this ice cream parlor is at and I’m really looking forward to it this summer!

  • Jalita March 18, 2010, 10:38 pm

I like all kinds of ice cream… mint choc chip, peanut butter, cookie and cream, vanilla bean.. i’m still wanting to try the ginger.
