Meal Planning Day of Organization Week was quite a success!

I loved having my recipe binder at the store!  It made shopping so much easier (and cheaper because I shopped with purpose).  And just putting a little bit more effort into my recipes is making be happy.

Dinner was a planned meal:  Lentil, Carrot, and Lemon Soup.

This recipe was from Body and Soul magazine.  It was easy to make and involves simmering vegetable broth, carrots, and 3/4 up of green lentils for 20 minutes and then adding juice of 1 lemon to the broth before serving.

I’m not sure how I felt about this soup.  It was good, but my palate kept confusing the lemon with salt and my tongue wasn’t pleased.  The Husband will eat when he gets home, so I’ll update if he likes it.

The salad was stand-out!

This afternoon, I snacked on some of these Pomegranate and Vanilla Cashews.  Ohmigod — so, so addicting.

And a bowl of cereal.

And another vegan cookie.

And then I talked myself onto going on a short run.  :)    My body was saying "YES," but my mind was saying "Couch!"  I did the old Just-Do-2-Miles trick and managed to get in a decent workout.

  • Duration:  18 minutes
  • Distance:  2.0 miles

Something is better than nothing!

    Hi Caitlin,
I love your blog, have been a longtime reader (started with See Bride Run!) and just started one of my own. I hope you check it out!

Thanks for the inspiration! I hope to make it to next year's summit as well.

Looks exactly like my own recipe binder 😀

  • Paige@ Running Around Normal August 18, 2009, 6:55 pm

I'm glad your meal planning was a success! 🙂 The soup does look interesting…at least you tried it!

Nice job at the two mile run! Of course something is better than nothing – two miles better 😀

That is my motto! I think too often we don't work out because we don't have time, but it's nearly always worth it!

  • Ali August 18, 2009, 7:02 pm

That salad looks good, and so does the vegan cookie…yum, which reminds me I didn't have dessert tonight. Better get on that!

  • teacherwoman August 18, 2009, 7:02 pm

Love the 2 mile trick! You go girl! 🙂

  • jibbalibba August 18, 2009, 7:05 pm

  • Lizzy August 18, 2009, 7:16 pm

Congrats on taking your binder. such a good idea!

I feel the same way about exercise, if i dont really want to do it, i'll atleast do something small! 🙂

Oh my god. THAT COOKIE! Looks. So. GOOD.

  • chandra August 18, 2009, 7:30 pm

I was planning to try that soup recipe this week too! I wasn't sure about the lemon though, so after your thoughts maybe I'll leave it out…

Something is for sure better than nothing – I am a firm believer in that. Case in point: I missed Body Pump tonight because my body was screaming from yoga and I needed to grocery shop. But at least I biked to the store!!

  • Nina August 18, 2009, 7:56 pm

oh if only my Hubs liked soup….a girl can dream and live vicariously i suppose!

yaaaaaaaay for my cookies!! woot woot!!

  • Joelle (The Pancake Girl) August 18, 2009, 8:17 pm

Oh man, I have toyed with that meal planning idea for awhile too, but cannot seem to commit to it or stay organized enough to plan that soon in advance. Congrats on giving it a chance!

  • Amanda August 18, 2009, 9:21 pm

Sounds like you had a really successful night! I am the same way with anything citrus-ey … I can't ever tell if I really like it!

  • Caroline August 18, 2009, 9:41 pm

How smart are you for bringing your recipes to the store?! I need to do that one of these days. Holla for Publix lovin'.

  • wholebodylove August 18, 2009, 10:03 pm

Those almonds sound like a great flavor combo! Where did you find them?

  • Jolene - EverydayFoodie August 18, 2009, 11:35 pm

Those nuts are the GREATEST nuts EVER!!! I love all the varieties, and always sneak them on to the conveyor belt at the grocery store when husband isn't looking (they are a small fortune where I live) 🙂

Hooray! Glad meal planning/shopping was a success.

  • Samantha August 19, 2009, 5:57 am

The binder is a fabulous idea and you have inspired me to employ the same idea for my meal planning and shopping!

I'm loving this organization week of your's!

  • Anne Marie August 19, 2009, 6:59 am

    Those vegan cookies look delicious!

  • Jesse August 19, 2009, 7:23 am

Creating a recipe book like that was the best thing I ever did. I got rid of so many old dog-eared Cooking Light magazines and I even have some of my grandmothers recipes in there handwritten on index cards, but they are safer in plastic sheets than they are floating around my kitchen!

  • Sarah August 19, 2009, 11:52 am

Pomegranate and vanilla cashews? Yes please! Glad the planning is working out for you.
