I learned this trick from Meghannmix your muffin batter the night before and store overnight in the fridge.

I used this recipe from Stonyfield to mix up the batter for Blueberry Yogurt Muffins.   This morning, I simply scooped the batter into my muffin tin and baked the muffins while I walked the dogs.

Viola!  Homemade Blueberry Yogurt Muffins on a weekday.  What more could I ask for?

These muffins were fabulous!  Instead of oil, I used plain Greek yogurt.  The recipe also uses a mix of whole wheat and regular flour – wahoo!  I reduced the amount of sugar from 1/2 cup to 1/4 cup and couldn’t taste a difference.  This might be the healthiest patch of muffins I’ve ever eaten.

Nom, nom, nom!  🙂

Plus a banana on the side:

Now I feel like it’s Sunday!  🙂

Operation Beautiful

Tiffany from Australia wrote, "We fell in love with the idea of Operation beautiful and so my girls and I sat down and wrote out lots of notes. Now they are being stuck up in high schools, shopping centres and hospitals in our area of Australia. We all agree that it makes us feel good  and hope that it helps others feel happier too. "

I love mass Operation Beautiful postings!! The more, the merrier!

Check out the rest of the notes here.

Yum! Applesauce is also a great substitute for oil but yogurt is delish also.

And good to know that cutting down on sugar doesn't make a difference; I'll try that next time!

  • Amanda (Panda) August 19, 2009, 5:04 am

  • seesaraheat August 19, 2009, 5:49 am

Mmm. I love blueberry muffins! What a great idea to mix up the batter first. I usually make mine the night before but it would be better to have them fresh and warm in the morning 🙂

I also never thought of using plain yogurt instead of oil, thanks!

  • Healthy Beach Bum August 19, 2009, 6:01 am

I can't wait to bake some sort of quick bread soon. I've been dying to make a banana nut bread, but the bananas in this house just never sit around long enough to be used in such a way. 😀

  • SarahF August 19, 2009, 7:31 am

I should probably put this comment on your Operation Beautiful site but yesterday I was driving around Edmonton (Alberta, Canada-where I live) and on the window of LuluLemon there was a HUGE sign (it probably took up about 1/3 of the window) that said "You are Beautiful. operationbeautiful.com". I was pretty excited about how far your message has spread!

  • Newly and Forever, Tamantha August 19, 2009, 7:38 am

I have recently started substituting whole wheat flour in my recipies or a combo with wheat flour and really like the different, more dense texture!

  • Nina August 19, 2009, 7:39 am

I wish I had blueberries! I haven't had muffins an a long time!

  • insideiamdancing August 19, 2009, 7:55 am

Yay muffins! I usually sub applesauce for oil/butter- always thought yogurt would curdle! Need to experiment…

  • Claudia August 19, 2009, 7:57 am

Hi Caitlin, I found this to be an interesting read and thought you might be interested too:

It's written by an industrial farmer who is defending himself against all the critics out there. I don't buy into all of it but I thought it presented a good alternative view point.

  • Ali August 19, 2009, 8:11 am

Those muffins look so good. I love the idea of subbing the oil for yogurt. I never would have thought of that!!!

  • Sleepdreamdress August 19, 2009, 8:15 am

Sometimes I use a ripe banana in place of the sugar and butter in my muffins…but I guess it would taste like a blueberry banana muffin instead. Yogurt is an awesome idea too!!Once again…totally love your cooking ideas!

  • Jolene - EverydayFoodie August 19, 2009, 8:27 am

Wow – operation beautiful is really spreading! It is amazing how powerful something like this can be – I love it!

  • Mo August 19, 2009, 9:57 am

Can someone please post the recipe for the muffins? The link does not have the correct recipe as it has plain flour and butter, not oil.

  • Caitlin at Healthy Tipping Point August 19, 2009, 10:04 am

mo – the recipe on the stonyfield is the same i used, just sub out 1 cup of plain flour for WW. i used the butter. oh and i reduced the sugar by 1/2

  • Sarah August 19, 2009, 11:52 am

  • Caitlin at Healthy Tipping Point August 20, 2009, 3:28 am

j – i got the recipe from a magazine which seems to be sligthly different than whats on the stonyfield website. i think the only major change is i did 1/2 whole wheat flour. try that!
