One Last Hippie Meal

I dragged my mother’s laptop out on the patio so I could enjoy the sunshine while I attempted to get her computer to work.

She doesn’t have wireless so I was chained to that one chair.  She hasn’t updated her computer since 2001 so it was in need of several hours worth of work, but now she has iTunes and Twitter (if you say hello to her @joymeece, she’ll probably die of happiness).

I snacked on crackers, cheese, and watermelon:

Around 6 PM, my aunt, uncle, mom, and I went out to dinner at the Sunspot:

Another awesome hippie/semi-vegetarian place (my mom and uncle are a flexitarians and my aunt is a vegetarian, in case you’re wondering).

We started with chips and salsa:

And unfortunately, I picked a really disappointing entree:  Baked Enchiladas.

Yea… that doesn’t look like an enchilada to me, either.  It had corn tortillas, mushrooms, zuch and squash, goat cheese, and pasta sauce on a bread of black beans and rice.  It was pretty overwhelming.  I just picked on it (thankfully, I was loaded up on chips and pie!!).

 

I leave Tennessee tomorrow.  So sad.  🙁  But at least I get to see the Husband and doggies for 1 day, and then I’m leaving for the HEALTHY LIVING SUMMIT!  I cannot believe the Summit is here!  6 months of planning have culminated it this one weekend – ahhh!

 

**FYI because I had a few people ask me this:  When I ran into the big scary dog earlier this morning, I backed away SLOWLY.  Face the dog, but do not look directly at him.  You want to appear as submissive and non-threatening as possible.   If possible, pick up a large stick to defend yourself if necessary.  Also, look for potential escape routes (a neighbor’s porch, on top of a car).  Don’t turn your back and run from the dog; they will just chase you!

    Key lime pie is the one food I literally have no control over myself with! Not to give you irresistible ideas, but when my mom made it for me when I was home I stirred a spoonful into 0% Fage for breakfast and it rocked my socks.

    Sounds like you are having a great time. Mother and Daughter shopping is the best! I can't wait to go with my mom this fall when I go home for a visit.

    Ahhh I love hippie places (as you know!) I feel strangely at home in eclectic little places like that! Sorry your food wasn't very good though!

    I'm so jealous; I wish my family members were hippie eaters! Or, at the very least, healthy eaters!

    Wow, I am a little surprised by the sign on the door – about handguns! Is that normal to have a sign like that? That's a little scary to me! I didn't think enough people carried guns for that to even be an issue. I guess I am naive. I don't know, in Canada, I have never once seen a sign about guns. I also have never known anyone to have a handgun.

    yep you are supposed to back away very slowly…and always have your hands/arms covering your face….if the dog keeps following you you are supposed to get down on your knees avoid eye contact and curl up into a ball… says the humaine society that gave a presentation to my camp last week 🙂

    Thanks for the tips about the dogs. Luckily, we do have leash laws here, but there are some people who just have electric fences for their dogs, and those do not make me feel safe!

    Key lime pie is my favorite!! Reminds me of living in the south in the hot humidity! Knoxville is such a fun city espesh when college is around and there are tons of cute preppy boys going to a UTK game!

    Jolene – The Tennessee legislature recently passed a law permitting handguns to be brought into places where alcohol is served as long as the person with the gun isn't drinking. Many of the bars around here have now begun posting signs such as the one at Sunspot, which is essentially their way of opting out of the new law.
