One Last Hippie Meal

in All Posts

I dragged my mother’s laptop out on the patio so I could enjoy the sunshine while I attempted to get her computer to work.

She doesn’t have wireless so I was chained to that one chair.  She hasn’t updated her computer since 2001 so it was in need of several hours worth of work, but now she has iTunes and Twitter (if you say hello to her @joymeece, she’ll probably die of happiness).

Billy Jean the cat hung out with me for a while:

As did Barack:

He’s the man!

I snacked on crackers, cheese, and watermelon:

And some more Key Lime Pie (get this pie AWAY from me! So addicting!):

Around 6 PM, my aunt, uncle, mom, and I went out to dinner at the Sunspot:

Another awesome hippie/semi-vegetarian place (my mom and uncle are a flexitarians and my aunt is a vegetarian, in case you’re wondering).

I used the side door.  🙂

We started with chips and salsa:

And unfortunately, I picked a really disappointing entree:  Baked Enchiladas.

Yea… that doesn’t look like an enchilada to me, either.  It had corn tortillas, mushrooms, zuch and squash, goat cheese, and pasta sauce on a bread of black beans and rice.  It was pretty overwhelming.  I just picked on it (thankfully, I was loaded up on chips and pie!!).

I leave Tennessee tomorrow.  So sad.  🙁  But at least I get to see the Husband and doggies for 1 day, and then I’m leaving for the HEALTHY LIVING SUMMIT!  I cannot believe the Summit is here!  6 months of planning have culminated it this one weekend – ahhh!

**FYI because I had a few people ask me this:  When I ran into the big scary dog earlier this morning, I backed away SLOWLY.  Face the dog, but do not look directly at him.  You want to appear as submissive and non-threatening as possible.   If possible, pick up a large stick to defend yourself if necessary.  Also, look for potential escape routes (a neighbor’s porch, on top of a car).  Don’t turn your back and run from the dog; they will just chase you!

Key lime pie is the one food I literally have no control over myself with! Not to give you irresistible ideas, but when my mom made it for me when I was home I stirred a spoonful into 0% Fage for breakfast and it rocked my socks.

Glad you had such a lovely vacation; you work so hard and you deserve a break!

I love "hippie" food. I keep telling everyone in MD I'm a CA Hippie 🙂

  • Jolene - EverydayFoodie August 11, 2009, 7:31 pm

Wow, I am a little surprised by the sign on the door – about handguns! Is that normal to have a sign like that? That's a little scary to me! I didn't think enough people carried guns for that to even be an issue. I guess I am naive. I don't know, in Canada, I have never once seen a sign about guns. I also have never known anyone to have a handgun.

yep you are supposed to back away very slowly…and always have your hands/arms covering your face….if the dog keeps following you you are supposed to get down on your knees avoid eye contact and curl up into a ball… says the humaine society that gave a presentation to my camp last week 🙂

  • Caitlin at Healthy Tipping Point August 11, 2009, 7:44 pm

jolene – i would say that is a southern thing. everyone has guns in this part of tennessee. just part of the culture.

    jocelyn – GOOD TIPS!

  • Nicole Chow - August 11, 2009, 8:04 pm

Your mom is the cutest! I love all those fun restaurants you go to – makes me want to be vegetarian 🙂 Summit is almost here – yay!

Your dog story was so scary btw – thanks for the tips!

I love Sunspot! They have the best wine deals on Wednesdays!

  • Jenn Eats Nutritiously Now August 11, 2009, 9:01 pm

Thanks for the tips about the dogs. Luckily, we do have leash laws here, but there are some people who just have electric fences for their dogs, and those do not make me feel safe!

  • Valerie August 11, 2009, 9:21 pm

Hooray! Obama IS the man! I love the support.

    Happy Summit!

  • Lauren August 11, 2009, 9:31 pm

Wow! Don't you look gorgeous in that first pic 🙂

  • Brooke August 11, 2009, 11:02 pm

Key lime pie is my favorite!! Reminds me of living in the south in the hot humidity! Knoxville is such a fun city espesh when college is around and there are tons of cute preppy boys going to a UTK game!

Wooooo Boston is so close!!! I can't wait for everyones recaps!

  • Thinspired August 12, 2009, 12:48 am

Caitlin, your photos from home look so relaxing, and I can tell that you are de-stressing as you should be! 🙂 Your mom must be pretty cool to be on Twitter! I am JUST getting my mom used to facebook. Hehe.
Have a great time in Boston, my dear! Can't wait for your updates on the summit!

  • LT August 12, 2009, 2:06 am

Mmmm the enchilada sounds good to me. That's more similar to true Mexican cuisine than the enchiladas we're used to.

  • Caitlin at Healthy Tipping Point August 12, 2009, 3:28 am

    lauren – thanks 🙂 *blush*

  • kirsten August 12, 2009, 5:22 am

AHH Key lime pie is one of my major weaknesses too!! just can't resist it.

  • Nicole August 12, 2009, 6:41 am

Hey! I see you are reading that Obama book..I have to read Obama's "Dreams from my Father" for college and I was wondering if you have read that one yet! Did you like it? Have a good day!! 🙂

  • Pam (Highway to Health) August 12, 2009, 8:47 am

That is a great picture of you! I love the signs at the restuarant!

  • Lauren August 12, 2009, 9:27 am

You are so right Barack IS the man 🙂 Too bad you're leaving your momma but have tons of fun this weekend!

  • Anonymous August 12, 2009, 12:28 pm

Jolene – The Tennessee legislature recently passed a law permitting handguns to be brought into places where alcohol is served as long as the person with the gun isn't drinking. Many of the bars around here have now begun posting signs such as the one at Sunspot, which is essentially their way of opting out of the new law.
