Enhance Me!

If you love Mix My Granola (and who doesn’t?), you’ll love their new Enhancers line!  The kind folks at Mix My Granola (who, by the way, is a sponsor of the Summit!) sent me a pack to try out:

The Enhancer Sample Mix contained: organic granola, cranberries, dried blueberries, roasted almonds, 100 mg of caffeine, and lucuma (a source of fiber, beta carotene, and iron).

I had  my Enhancer Sample Mix with yogurt and a sliced banana.  No coffee necessary today!

I really like Mix My Granola — its so fresh.  Not like the packaged granola you get in the stores.  I don’t think the enhancer changed the taste at all.

 

In other news….

 

  • I slept until 9 AM this morning.  I haven’t done that in AGES.
  • I woke up with one red, swollen eye that is extremely light sensitive.  I think I slept with a hair in my eye? 
  • My knees feeling BETTER than they ever have following a run!  I think the combination of icing, orthotics, ibuprofen, and knee sleeves did the trick! I cannot wait to start physical therapy and learn how to tape my knees. 
  • My METRIC CENTURY (60 miles!!) bike race is this SUNDAY!  So be sure to come back all this weekend to read about my pre-race prep as I prepare for the first bike race of my career!

    I'm not sure if you wear contacts or anything, but about a year ago I woke with my eye swollen and red. I couldn't look at light without it being painful. I thought it was a bad case of pink eye so I went to the doctor. Apparently the night before when I took my contacts out I ripped some of my cornea and it was starting to get infected.

    If you don't wear contacts I'm not sure the same thing can happen. I'm sure it can though.

    Can't wait to hear more deatails about the summit!!

    Sleeping until 9am, no knee pain, and a fun bike race to look forward to?? Looks like you're going to have a great weekend!

    It's amazing how little things (icing, ibuprofen, PT) can improve the body. I've been so impatient with my injury, but I'm really trying to slow down and do everything I can to fix my hammy/IT band. Have a great Friday!

    REGARDING THE SUMMIT:

    i cannot release the final details until we sign the contract with the primary sponsor. we are signing it TODAY or MONDAY hopefully so stay tuned for the details! i'm sorry!!! trust me i want to tell you!

    re: enhancers – nope they dont change the taste at all.

    those enhancers sound great! I love the muesli + granola I have from them, but I have to get through those before I order more ๐Ÿ™‚

    My right eye does that a lot; I can't tell if I end up with cat hair in my eye all night, my own hair, or if I randomly sleep while poking myself in the eye? It's annoying and sore, but it usually goes away by mid day.

    I am so happy for you since your doctor appointment yesterday! Yay for still being able to run!

    Sooo, I am riding in my first-ever bike race tomorrow! I'm pretty exicted and a little scared … It's duathalon with a 1.2k run, a 25k ride and a 5k run after.

    Amazing Grass Oatmeal Pancake created by Amie at The Healthy Apple Blog, http://www.thehealthyapple.wordpress.com

    1/3 cup oats
    2 eggs
    1/2 tsp vanilla extract
    1 scoop Amazing Grass Chocolate Green SuperFood powder
    1/2 a mashed ripened banana
    Cinnamon to taste
    Directions

    Mix together oats and two eggs with, Amazing Grass powder, vanilla extract and cinnamon in a bowl. Add mashed banana to the batter. Preheat a skillet on the stovetop sprayed with non-stick spray. Pour batter into skillet over medium heat, forming into a pancake shape. Cook for 3 minutes or until slightly brown; using a spatula, carefully flip the pancake. When pancake is completely cooked, remove from skillet and serve. Top with fresh fruit and drizzle with honey, syrup or warm nut butter.

    I hope your eye is okay! I had the same thing happen last month and it ended up being a ulcer on my cornea … not to terrify you or anything!, it just required some eye drops, haha. You can never be too cautious with your eyes though, I'd see an eye doctor by the end of the day if it's not feeling better, I'd hate for you to have to wait until Monday.

    Can't wait to hear about your bike race!! I've discovered that I LOVE cycling while getting ready for my triathlon. I think I may try to do a bike-only race by the end of the summer ๐Ÿ™‚
