PB French Toast

in All Posts

I was craving French Toast this morning, but I also woke up ravenous and thought plain FT just wouldn’t hold me over.

Cue… PB French Toast!

CIMG4844

I added about 1 tablespoon of melted PB to a beaten egg and then proceeded to make French Toast per the usual.  The result was delicious!

Mmmm… PB chunks!

Plus a side of fruit and maple syrup for dipping.

My Bike

Sorry this is rapidly becoming a biking blog! 🙂 I’ll be doing more cross-training, swimming, and a little bit of running (YAY) next week to mix things up, I promise!

A few of you have asked for information on my bike:

CIMG4831

My bike is a Giant women’s road bicycle (size XS) that I bought used two years ago.

I think these bikes typically retail for $1,200+ (ridiculous), but I bought my bike used from a women who had ridden it five times!  I only paid $350.  That’s a hefty investment, but when I bought it, I fully intended to race with it (like I’m finally doing now!).  I think you could find a good road bike for cheaper, though.

CIMG4833

The best part of my bike is the pink handlebars, which my dad taped up. 🙂

In Other News….

We’ve been married for 124 days!  *Tear*

Florida Jan 09 078 - Copy

Plus, it must be engagement season because a lot of ladies in the blog world are getting engaged.  Congrats to Jenn!  I wish you a lifetime of happiness with Bobby.  🙂

How many weddings are you going to this summer?  We only have 1 wedding to attend (in October).  I’m disappointed; I want more!

  • Mrs. LC May 7, 2009, 4:45 am

I think we have three weddings this summer, the first being this Saturday in Orlando! Plus our one year anniversary. 🙂

  • Jordan May 7, 2009, 4:53 am

I need a new bike soooo bad. Be sure to review yours. I’m gonna be in Orlando this weekend again, but only to visit Universal and/or Aquatica. I’ll wave in your general direction lol.

  • Moran May 7, 2009, 5:02 am

Wow you are a genius with that PB French Toast, sounds delicious!!

I’m attending a wedding May 23rd, and I love weddings, so I’m really looking forward to it 🙂

  • Apples, Auburn, and Ashley May 7, 2009, 5:46 am

I will be attending two weddings this summer and am the maid of honor in one of those! Ahhh! 🙂

My personal record was last summer – I went to four weddings.

  • Dori May 7, 2009, 6:02 am

The french toast sounds fantastic! I made pumpkin french toast and used the melted PB as a topping, but now I need to try your method!

I’m going to one wedding this summer — Missy’s sister’s!

Love your bike. I still have my bike from when I was 10, I want to ride it this year! It is hot pink and purple.

  • Brandi May 7, 2009, 6:05 am

I have no weddings scheduled! But, our 5 years wedding anniversary is at the end of this month and I can’t believe it!

pb french toast is a great idea!

  • Christina May 7, 2009, 6:16 am

Mm I love french toast. It looks like a wonderful breakfast!

I have 2 weddings to go to this summer/fall, which is exciting because I’ve only been to 2 in my life.

  • Weight and Meditate May 7, 2009, 6:16 am

Wow, what a fantastic idea putting pb in the mix, yummy.

I have no plans for weddings this summer, but do have a friend who is having a baby!

  • Carolina John May 7, 2009, 6:38 am

Nice bike! $350 is a steal for a Giant with aerobars! I paid $550 for my bike, a Jamis ventura with ho aerobars. i couldn’t find a used bike in my size. you’re going to love racing on that.

fyi, the metric is a ride, not a race. so you should take the aerobars off, it’s a courtesy for the other riders. I don’t know why, but that’s what my bike friends tell me.

my first bike race is a time trial tonight. I wish i had aerobars. it’s a 10 mile TT.

  • Melissa @ For the Love of Health May 7, 2009, 6:39 am

This is the second French toast post I have viewed this morning on a blog! Now I REALLY need to make some :-)Great idea with the peanut butter!

Great looking bike! Bikes can be so expensive but if it’s something you love, go for it!

I have 2 weddings so far- I am in the wedding party of one and the other one happens to include my younger brother! 🙂

  • krittie May 7, 2009, 6:44 am

SO, I have had 2 weddings to attend this year so far and I still have 3 more to attend! One is in 2 weeks, which I am the maid of honor and the other 2 are in August. Weddings are so much fun!

  • Amanda (Two Boos Who Eat) May 7, 2009, 6:45 am

I’m getting married in 59 days! I can’t believe it!

I’m not going to any other weddings though. We are going to a “mock” wedding at our ceremony/reception site on Saturday though. It’ll be nice to see the place set up for a wedding.

    Congrats on 124 days!

  • Danielle May 7, 2009, 6:49 am

Pb on French Toast?! What a great idea!
I have one wedding that I’m in in September and then another one next March. I love weddings! It’s so much fun being in them!

  • Dylan May 7, 2009, 6:52 am

I have my sister’s wedding in less than two weeks!

(The french toast looks sooo good)

  • K from ksgoodeats May 7, 2009, 6:55 am

PB French toast sounds like a gift from heaven – yum!!

  • The Decayed Gentlewoman May 7, 2009, 7:00 am

Well since your blogging about biking, I have a biking question for you. When I ride my bike, my bottom gets *really* sore. I bought the gel seat that the bike shop recommended and that helped a bit, but I’ve never been able to bring myself to bike regularly because of the pain. Does it stop hurting over time?
My boyfriend doesn’t get a sore butt when he rides and thinks I’m sitting oddly, I think it has more to do with the way my hips are built versus the way his are.

  • Tami May 7, 2009, 7:02 am

we do not have bike lanes nor many trails in New Hampshire but in the area where I live there is a group who is trying to get a bike path built, here is the website

    http://www.wowtrail.org/index.html

only one wedding, my two male friends are getting married and it’s going to be a fabulous time!

  • Caitlin at Healthy Tipping Point May 7, 2009, 7:03 am

Gentlewoman – Do you have padded bike shorts? I think this helps. Yes, my womanly bits hurt a lot. You have to spend a while in the saddle to get your body used to the sensation and over the bruising. When I biked reguarly before, I found it took about two weeks of dedication riding to break my crotch in. 🙂

  • Rose May 7, 2009, 7:15 am

Four weddings here! We have two on the same day, so I think Bill and I might be flying solo to each.

  • Hi! I'm Erin May 7, 2009, 7:20 am

I really like your bike! I’ve been thinking about getting a bike, but I don’t know what kind to get. Not sure if I’d ever want to race it. I’m hopeless inept when it comes to understanding bike gears which I’m pretty sure would be a detriment while racing!

As for weddings, I think I’m pretty much past all the weddings. Now it’s on to baby showers! I’d much rather go to weddings.

  • Holly May 7, 2009, 7:27 am

You got a GREAT deal on your bike! I need to find something like that on craigslist when I’m ready to invest.

  • Run Sarah May 7, 2009, 7:28 am

I’ve ben to one and then there’s my own 😉 Your bike looks awesome – I have a cheapie road bike but it has some issues so I need to get it fixed or get a new one.

  • Jennifer May 7, 2009, 7:32 am

PB french toast looks delicious! I am only going to one wedding so far. Which is sad, I love weddings, I want more!

  • Missy May 7, 2009, 7:36 am

I am seriously doing that next time I make french toast! Why did I never think of that! I have my sister’s wedding in August!

  • Amy Pacheco May 7, 2009, 7:40 am

So this might be random but I have a couple of questions about your wedding dress! Do you have a picture of the dress that is close up and where did you get it! From what I can tell it is absolutely stunning!

  • Christy May 7, 2009, 7:48 am

I love the idea of adding PB to your french toast! That is a must try!

  • eatingbender May 7, 2009, 8:01 am

Thank you so much, Caitlin! Congrats on being married 124 days – that is a gorgeous picture :o) It’s amazing how fast the time goes! It seems like just yesterday you were See Bride Run, haha!

So awesome that you got that nice bike for $350! Love the pink handlebars!

    Have a great day!

  • Bec May 7, 2009, 8:03 am

    That french toast looks amazing!

  • Caitlin at Healthy Tipping Point May 7, 2009, 8:06 am

hey amy – i got the dress at david’s bridal! the style is V9322, you can search for it on the davidsbridal.com website. the model has ZERO curves so the dress looks a little different, however, this dress is ROCKIN if you have curves and want to show them off. i loved my dress! if you want to see more pictures, shoot me an email.

  • mel H May 7, 2009, 8:08 am

I’m going to my own wedding in August and I’m SO excited!!

  • Kate May 7, 2009, 8:11 am

What kind of cereal was it that you had for your afternoon snack yesterday? thanks!

  • Jessica May 7, 2009, 8:11 am

Ironically it’s my anniversary today – 3 years. We’re not married, but we’re common law and I don’t really plan on getting married so I count it the same 😉

I have two weddings to go to this summer, although one is just a small get together at the house of my boyfriend’s dad and his to-be wife. No real ceremony.

  • Caitlin at Healthy Tipping Point May 7, 2009, 8:14 am

Kate – Agave Plus Granola by Nature’s Path — very good!!

    Jessica – happy anni!!

  • Life Coach Jen May 7, 2009, 8:15 am

  • RhodeyGirl/Sabrina May 7, 2009, 8:18 am

    MORE PICTURES PLEASE!!!! 🙂

My wedding is next, and then from now to next may we have 6 weddings. Trust me, that is NOTHING compared to PB’s past summer. The summer we met he had 14 weddings! insanityyyyyyyyyyyyyy

  • happinessawaits May 7, 2009, 8:29 am

I feel like I go through phases of weddings. This year I have 7 to go to (already been to 3)! Last year I only had 2 total. Maybe it is the big 3-0 that is pressing down on me and my friends so they are all pushing to tie the knot.

I do love a good wedding though!

    Happiness Awaits

  • eatingRD May 7, 2009, 8:41 am

Just my own wedding in June!!!!!!!!

Oh, and I had PB French Toast for dinner last night 🙂

  • Andrea of Care to Eat May 7, 2009, 9:06 am

You are a french toast genius!
Have you seen 40 yr old Virgin? I can’t say French toast without thinking about that drunk girl he picks up.
BTW – your magnet is sitting at home waiting to be mailed. I’ll get around to it one of these days. I’m horrible about getting stuff in the mail – my Mom’s Mother Day card is waiting to be mailed too. Don’t think it will make it to Texas by Sunday!

  • Rachel May 7, 2009, 9:28 am

I’ve never thought of melting PB (or almond butter… even better, to me. yum!) into the French toast batter! What an awesome idea.

Wedding/engagement season is busy for me this summer. At least four to attend and who knows how many more on the horizon!

  • J May 7, 2009, 9:45 am

What a great deal on your bike? How did you find it? Im looking to get a good road bike (for cheap/a good price) but i don’t know where to look. Thanks!

  • Caitlin at Healthy Tipping Point May 7, 2009, 9:46 am

j – i think through bike club message boards (my dad helped me buy it). i would check craigs list, bike shops, and the like
