It’s BIRTHDAY DAY!

Happy Birthday Dad! And Happy Birthday Meghann! 

 

We have a day filled with birthday activities, so I made sure I ate a filling but fun oatmeal breakfast.

I made a healthier version of my favorite oatmeal recipe, Upside Down Pineapple Cake Oatmeal.  The original recipe calls for ingredients like butter and brown sugar, and thus is off-limits for Crap Free Week.

 

This version features a grilled pineapple and unsweetened coconut as a healthier option.

My oatmeal included:

 

  • 1/2 cup oatmeal
  • 1/2 cup  milk
  • 1/2 cup water
  • 1 sliced banana
  • Toppings:  grilled pineapple, unsweetened coconut, pecans

On the side, I had a 1 serving of Pom Wonderful mixed with a cup of water.

As mentioned, we’re driving to my Aunt’s house for my Dad’s Birthday.  I made his favorite cake (as cupcakes)… Yellow Cake!

I used this recipe, which judging from the taste tests last night, is pretty good!

    Just wondering, how do you measure your mileage? Do you use a Garmin or some kind of GPS device or do you just use mapmyrun.com or something like that?

    jane – i measure my run using google earth. its very handy and more accurate than map my run (i think).
