Good afternoon!  I am happily chugging through work.  I just can’t wait for this week to me over.

 

My morning oatmeal was large enough to get me through the whole morning without a snack!  WOW!  That hardly ever happens.  I did break for lunch about 1/2 hour earlier than normal.

 

I made an absolutely delish lunch!

I used a very small sweet potato to make this burger.  First, I microwaved the sweet potato for about 5 minutes (after putting vents in it with a fork).

Then, I mashed up the cooked and skinned potato with 1/4 cup black beans, salt, and pepper.  I fried the burger with a little EVOO and melted some yummy Muenster cheese on top.

These burgers taste really good by themselves, but the gooey cheese just added a little something!

I was a VERY, VERY BAD BRIDE after lunch.  I was craving chocolate and all we have in the house are our WEDDING FAVORS.  I know I shouldn’t be breaking into our favors that are suppose to be for our GUESTS, but I needed something sweet so badly!

Honestly, there are 100 favors and 87 guests (counting ourselves), so it wasn’t soooo bad that I ate a favor, but I still feel like I stole this candy from a family member or friend!  A guest should get to take home TWO instead of me slowly eating all the leftover ones. 🙂

    hahaha if i was getting married id probably leave the favors at my bridesmaid’s house or i would eat ALL of the chocolates 😉 munster cheese is so good – my dad’s favorite cheese! lovely lunch, as per usual

    Oh yum!! I will so try that! I love making burgers out of leftover beans. But, in general, I haven’t tried sweet potato and black beans together yet, but it always looks so good!

    Hey, no sweat about dipping into the favors. It’s been 3 years and I still have about 20 or more that were leftover that I can’t bring myself to throw away! Even though I don’t eat Jelly Bellies AND they are probably no good anyway!

    Don’t feel bad about eating the favors. You totally deserve a sweet treat and to be rewarded for all the hard work you put into them!

    Hi Caitlin,
    This is my first time commenting, but I just wanted to let you know that I enjoy your blog and find it so inspirational. I’m about the same height and build as you and just started “running” or attempting to run about 4 months ago. It’s HARD, but I’m beginning to enjoy it.

    Just a quick question. I’m in the process of receiving my AA degree and am considering a career in oriental medicine. In the “about section” on your blog, you mentioned that your fiance is also studying to become an OMD. Does he go to the florida college of integrative medicine?
    I’m thinking of applying there and was just wondering what his experiences were with the school.

    Anyway, great job with the blog! You look absolutely gorgeous and fit.

    i am just as bad. a few nights ago i ate a chocolate that was supposed to be part of someone’s christmas gift and had to go buy another one. (lindt milk chocolate ball). i blame pms.

    haha actually I think I had too many of those yellow MnMs when I was putting them together for you that I dont think I would crave them at all. In fact I got a little bleey ache just seeing the picture of them. Maybe you should just eat a whole bunch until your stomach aches and that will prevent you from eating them ever again…lol

    Girl! As someone who has definitely taken her share of extra party favors for -no good reason at all- and proceeded to eat them for -no good reason at all- you’re probably helping someone out there with their portion control! lol!

    I LOVE the sweet potato burger idea, I am SO trying it!

    Sweet potato burger sounds so delish, I’d never think to use them to make veggie burgers!

    I missed the post with the survey, but I just wanted to say that of all the food blogs I’ve seen, you seem to have the best relationship between food and health. I’m 16, and certain blogs convey “control” to me, which is of course unhealthy. Struggling with body image, fueling yourself AND enjoying yourself through food is so huge among teen girls today I think. You set an amazing example and I wish you all the success because you truly deserve it. Your positive attitude isn’t corny at all which makes it seem so much more attainable…thanks:)

    Hey Caitlin! I was wondering if you had any tips for being productive when working done at home-my job requires a lot of paperwork to do in the home and i usually do it in sweats on my couch which often leads to lack of productivity.

    hey jewels!

    i’ve worked from home successfully for a year and a half, and over time i’ve figured out some tricks.

    first – you have to sit at a desk. the entire day. you cannot do work in bed, on the couch, or with the TV one. it helps if you have a designated “office room” or “area.” so, in the very least i think you need a work-only desk.

    i usually put on real clothes too. id say i only do sweat pants once a week.

    i always shower in the morning, just like i would if i was going to an office(although I skip make up). i DO think you have to work scheduled hours. everyday, i work 8:30 to 5:30 or 6, just like i’m at the office.

    i think you need to created structured breaks – its nice to look forward to a scheduled lunch when you go into the other room and eat.

    and of course, NO TV!! EVER!! i play music, but i think tv is crossing the line (too distracting).
