Scallops, Part Deux

Good evening!  Mom mentioned she was craving scallops, so I got to have them TWO times in one week!  Yipppeee.

I used my favorite method for cooking scallops:  heat a wok, add a pad of butter, brown a tablespoon of garlic, pour in a few tablespoons of fresh squeezed lemon and a sprinkle of pepper, and then brown the scallops (about 6 – 8 minutes).

Dinner by candlelight with mom (Future Husband is working… poor man!).

 

On the side, we had roasted sweet potato rings and brussel sprouts, each seasoned with kosher salt and pepper.  And I had a taste of Yellow Tail Shiraz (which is VERY good for the price!).

"Working" Bridal Shower

 

Tomorrow AM, I’m getting together with friends and family for a "working" bridal shower.  We’re putting together the wedding favors, programs, and gift bags.  There will be lots of food, silly bridal games, and WEDDING CAKE taste-testing!!

 

I am ever so grateful to have help with all this stuff! Just look at this giant box of stuff for tomorrow!  (Trust me, there’s more!).

Tomorrow is also my "rest" day before my big 10K race!  I haven’t run a 10K race since August and I’m definitely looking to improve my time.  I’m shooting for 56 minutes! 

 

Do you prefer to set specific goals or take a more relaxed approach towards fitness?  I really like to "measure" my success through distance logging or setting a new Personal Record (PR).  I’m definitely a numbers person!

    Lovely dinner! I love scallops. I like to marinate them in sweet thai chili sauce!

    Enjoy your time with your mom! I too get to see my mom this weekend- she is flying in from Calgary 🙂 Moms are great aren’t they?

    I’ve became more intuitive with fitness lately… together with more intuitive eating as well. I feel more relaxed this way, since I was stressed out for being healthy too.

    Love scallops, but have never made them. Your method sounds simple enough. I’ll have to try it. 🙂

    I’m relaxed about fitness, but I’m thinking I need to set more specific goals for myself.

    Yay for dinner with mommy! So fun! I am so much closer to my mom than I was as a kid and I cherish times like those! Your meal looks delicious as always 🙂

    Good luck with the working bridal shower tomorrow. It sounds like you have a great team behind you and I hope you all have tons of fun!

    I used to take a more relaxed approach to fitness than I do now. I used to just care about "getting it done" and not really challenging myself. As long as I was keeping myself fit & trim, I was happy. Since discovering your blog and seeing your dedication to running, I caught your bug!! Now I am constantly trying to challenge myself by either running longer distances or trying to improve my speed. Thanks, Caitlin for being such an encouragement to me :^)

    i am loving the scallops!!! i want to have some right now.. it’s not even 10am yet..

    as far as fitness goals are concerned, i think im kind of a take it one day at a time person 🙂

    Setting personal goals can be fun! I tend not to do it all the time, but right now I have a personal goal of adding more resistance exercises to my routine, as well as training for a marathon in the spring!
