Failure to Squash

Good evening. Lookie at me, not at the gym!  I felt so overwhelmed with wedding, work, and holistic website stuff that I just wanted to stay home and drink vino.  Future Husband completely agreed with me.

 

I did a taste test between the two reds we have open at home to decide which I wanted:

On the left: a Sutter Home Zinfandel.  On the right: a Kendall Jackson Merlot.

 

I choose the Merlot… the Zinfandel was super spicy and just wasn’t sitting on my palette very well.

 

We drank our wines on the balcony and discussed wedding stuff.

Dinner – Failure to Squash

 

We are completely out of protein (except 2/3 a block of tofu).  No chicken, no turkey, no meat, hardly no beans… NOTHING.  I really wanted to do a meat stuffing for this squash, but I resorted to all veggies.

I would provide the recipe, but this dinner sucked royally.  The baked squash was stuffed with a roasted mix of sweet potatoes, mushrooms, broc, and some black beans.  I sprinkled with everything with cheddar cheese.

 

I only ate half… I offered my other half to Future Hus and he turned it down!  You know it’s bad when he lets me throw food away.  I’ll probably resort to a half a PB sammie or something later.

 

At least it looked pretty.

On the side, I had a Hodgson Mill’s Whole Wheat InstaBake biscuit.

Other Eats of the Day

 

Around 1:00, I had yogurt + granola.

And then I broke into our Halloween candy stash. I asked Future Husband not to open the bags of Milky Ways and M&Ms until Halloween, but of course–he broke into the stash!! That makes it so much hard to resist.

 

I had two fun size M&M Peanuts.  Did you know a fun size only has 6 M&Ms in it? That’s not very fun, in my opinion.

We are watching TV.  We have so many shows on the DVR:

    Too bad about the squash…it sounds like it would be good! At least all the ingredients are ones that I like!
    Oh well, the biscuit looks mighty tasty 🙂

    Sorry about the squash failure! But at least it looks great! I’m wondering how a bunch of good food combined can be a failure!
    Anyway, sometimes it just happens, the mix of flavor does not always work.

    That squash LOOKS really good even though it wasn’t what you wanted.

    How strange – I had a bad stuffed squash dinner tonight too! Acorn squash stuffed with a whole grain pilaf mix, the scooped out part of the squash, and fresh parsley. I was too lazy for protein…but the whole thing lacked flavor. I was thinking of adding cranberries, but wasn’t sure the husband would go for that…turned out I should have tried – it sucked! I feel your pain! Good thing the kale experiment turned out.

    sadness the squash didn’t work out…i had the same thing with a pancake recipe this weekend..boo. maybe next time it’ll work out better.

    and only six? that totally sucks…and what a rip off! haha! i’d rather stick my hand in a big bag of them and eat them that way…LOL.

    Sorry your dinner was disappointing. I hate it when that happens. Tonight I baked sweet potatoes and mine had a slightly raw spot in the middle… A big let down. 🙁

    I’m surprised the squash dish didn’t turn out… It SOUNDS like it’d be a great one. Disappointing for sure.

    I tried to make squash for dinner last night too! Except I just completely underestimated how long it was going to take, and was so hungry I just opted to save it for dinner tonight.

    And I TOTALLY feel you on the candy! We had a big event at out church Sunday night so we FINALLY got rid of all the candy! I was giving HUGE handfuls of candy away at the end because I didn’t want to have any leftover!

    i think what went wrong with the squash with the lack of protein or one single flavor that stood out. it was like a mush mess.

    Hmm! Biscuits.

    I have tasted both of these wines. You definitely made the right choice with the Merlot.

    hey kath – the recipe on the back of the instabake for biscuits called for 2 cups of bake mix, but i used 1/2 cup and that made 2 biscuits.
