Failure to Squash

in All Posts

Good evening. Lookie at me, not at the gym!  I felt so overwhelmed with wedding, work, and holistic website stuff that I just wanted to stay home and drink vino.  Future Husband completely agreed with me.

I did a taste test between the two reds we have open at home to decide which I wanted:

On the left: a Sutter Home Zinfandel.  On the right: a Kendall Jackson Merlot.

I choose the Merlot… the Zinfandel was super spicy and just wasn’t sitting on my palette very well.

We drank our wines on the balcony and discussed wedding stuff.

Dinner – Failure to Squash

We are completely out of protein (except 2/3 a block of tofu).  No chicken, no turkey, no meat, hardly no beans… NOTHING.  I really wanted to do a meat stuffing for this squash, but I resorted to all veggies.

I would provide the recipe, but this dinner sucked royally.  The baked squash was stuffed with a roasted mix of sweet potatoes, mushrooms, broc, and some black beans.  I sprinkled with everything with cheddar cheese.

I only ate half… I offered my other half to Future Hus and he turned it down!  You know it’s bad when he lets me throw food away.  I’ll probably resort to a half a PB sammie or something later.

At least it looked pretty.

On the side, I had a Hodgson Mill’s Whole Wheat InstaBake biscuit.

Other Eats of the Day

Around 1:00, I had yogurt + granola.

And then I broke into our Halloween candy stash. I asked Future Husband not to open the bags of Milky Ways and M&Ms until Halloween, but of course–he broke into the stash!! That makes it so much hard to resist.

I had two fun size M&M Peanuts.  Did you know a fun size only has 6 M&Ms in it? That’s not very fun, in my opinion.

And then I had a peach.

In Lieu of Working Out….

We are watching TV.  We have so many shows on the DVR:

  • Entourage (Done)
  • Gossip Girl (In Progress)
  • Little Britain
  • Grey’s Anatomy
  • Eli Stone
  • Heroes

I’m sleepie already!  🙂

Don’t forget the Athleta Contest! I love reading your entries and so does Future Hus! Keep them coming…. $200 worth of sweet Athleta swag can be yours!

  • Justine October 27, 2008, 5:34 pm

Too bad about the squash…it sounds like it would be good! At least all the ingredients are ones that I like!
Oh well, the biscuit looks mighty tasty 🙂

  • Meghann October 27, 2008, 5:53 pm

Sorry about the squash failure! But at least it looks great! I’m wondering how a bunch of good food combined can be a failure!
Anyway, sometimes it just happens, the mix of flavor does not always work.

  • amy. October 27, 2008, 6:04 pm

the squash looks nice at least! aw candy…so hard to resist this time of year. hope you had a relaxing evening at home 🙂

  • HangryPants October 27, 2008, 6:31 pm

haha – you're spunky today! Well, no 6 m & ms is not very fun at all!

That stinks about your dinner, it looks good though.

    Enjoy your TV time.

  • Nicole ( October 27, 2008, 6:43 pm

I can’t wait to send in my entry:-D I’m going to take a photo for it tomorrow!

I had squah for dinner tonight, too! I’m sorry yours was awful, booooo.

  • Rose October 27, 2008, 7:16 pm

That squash LOOKS really good even though it wasn’t what you wanted.

Glad you had a night to relax and hang with the future hub 🙂

  • ttfn300 October 27, 2008, 7:22 pm

bummer for the squash 🙁 at least the rest of the evening has been just what the doctor ordered! 😉

  • Julie L October 27, 2008, 7:35 pm

How strange – I had a bad stuffed squash dinner tonight too! Acorn squash stuffed with a whole grain pilaf mix, the scooped out part of the squash, and fresh parsley. I was too lazy for protein…but the whole thing lacked flavor. I was thinking of adding cranberries, but wasn’t sure the husband would go for that…turned out I should have tried – it sucked! I feel your pain! Good thing the kale experiment turned out.

  • just me October 27, 2008, 7:46 pm

sadness the squash didn’t work out…i had the same thing with a pancake recipe this maybe next time it’ll work out better.

and only six? that totally sucks…and what a rip off! haha! i’d rather stick my hand in a big bag of them and eat them that way…LOL.

  • Pumpkin October 27, 2008, 7:57 pm

Sorry your dinner was disappointing. I hate it when that happens. Tonight I baked sweet potatoes and mine had a slightly raw spot in the middle… A big let down. 🙁

  • emily October 27, 2008, 8:21 pm

I think it looks pretty tasty – all we put in our acorn squash is walnuts and raisins!

  • lighterportions October 27, 2008, 10:10 pm

I’m surprised the squash dish didn’t turn out… It SOUNDS like it’d be a great one. Disappointing for sure.

  • Mrs. LC October 28, 2008, 3:55 am

I tried to make squash for dinner last night too! Except I just completely underestimated how long it was going to take, and was so hungry I just opted to save it for dinner tonight.

And I TOTALLY feel you on the candy! We had a big event at out church Sunday night so we FINALLY got rid of all the candy! I was giving HUGE handfuls of candy away at the end because I didn’t want to have any leftover!

  • Caitlin (see bride run) October 28, 2008, 4:28 am

i think what went wrong with the squash with the lack of protein or one single flavor that stood out. it was like a mush mess.

besty – haha did you know they have a hybrid american version thats on HBO now?

julie – awww.. cranberries would’ve helped mine!

emily – or raisins! i shouldve thought of that!

  • Erica October 28, 2008, 4:37 am

I need to get an outfit together for the contest! Ah! Hopefully I can do it before I got on travel this week. Hodgson Mill’s Whole Wheat InstaBake biscuit? I think I need to find and try this. I’m glad you took some time off tonight- wedding planning is too stressful!

  • MizFit October 28, 2008, 4:37 am

gym? wine? SUCH A TOUGH DECISION you had to struggle with 😉

(me? Im all about the nice evenings at home…but squashdolences nonetheless)

  • Tim Rosanelli October 28, 2008, 5:02 am

    Hmm! Biscuits.

I have tasted both of these wines. You definitely made the right choice with the Merlot.

Is the Instabake a single serving portion? It looks really yummy!

  • Caitlin (see bride run) October 28, 2008, 6:06 am

hey kath – the recipe on the back of the instabake for biscuits called for 2 cups of bake mix, but i used 1/2 cup and that made 2 biscuits.

  • greendogwine October 28, 2008, 7:52 am

LOL – I laughed out loud at the “sucked royally” part! I haven’t heard that in months, and I forgot how much I enjoy that saying! Sorry dinner was bad, but I liked your decision to stay home and drink wine! 😀

  • Lacey Nicole October 28, 2008, 7:53 am

um, i laughed out loud when i read about the fun size bag only having 6 m&ms "that's not very fun" hahahaha ohhh man i still am laughing 🙂

  • Catherine October 29, 2008, 9:22 am

What kind of squash is that – a carnival squash?? I just bought one of those and was wondering what it tasted like.

  • Caitlin (see bride run) October 29, 2008, 9:29 am

catherine – im not sure. it kind of just tasted like yellow squash to me!
