Good afternoon, bloggies!  I hope you put on your creative thinking caps after reading the Athleta Contest details — I’ve received a one entry so far and I can’t wait to see more!

Today has been uneventful yet busy. I’ll have to pull overtime this week, which isn’t exactly my favorite activity.  But at least I get paid for it!

You guys know how I work from home? Well, it’s usually a good thing for my concentration, as I don’t have live coworkers to distract me with office gossip or tons of silly meetings to attend.  But today, I’m watching my in-laws’ dogs, so I have FOUR dogs in my 2-bedroom apartment.  They hate each other so I couldn’t get them to all pose for a picture together! 🙂

Sally and Benny keep freaking out and barking their heads off, which sets Maggie and James off.   This is not helping me work!

Around 9:30, I had a Honey Graham Z-Bar from my giant stash… yay!

And I had a small plum and a few dried apricots.

And for lunch…. I tried to make tofu "French fries."

DSCN0036

I rubbed pressed extra firm tofu with a marinade of mustard, red wine vinegar, and pepper, and I baked the tofu for 30 minutes at 400 degrees.  I was hoping it would taste like French fries when I dipped the tofu into ketchup… but no.  Obviously! 🙂

I also had a spinach salad with a plum tomato, cucumber slices, a chopped carrot, and spicy pumpkin seeds.

The salad was delicious!

Leg and Knee Update

So, my knees felt GREAT this morning.  I was scared I’d feel super stiff after my 7.0  mile run, but I was only slightly stiff, and the sensation went away quickly.  This makes me really happy because I know modifying my training schedule to include more cross-training and less high-impact running is helping!

I’ve got a fun Water Run planned for tonight!

Have a great day! See you for dinner.

Good to hear that all of your hard work and planning is paying off and your legs are doing well!

Sorry the tofu didn’t taste like french fries, at least you tried 🙂

What kind of dogs are those?! They are so cute!

and do you eat pumpkin seeds without peeling them?

  • magpie October 27, 2008, 11:26 am

Tofu “fries” are a great idea. I’ll have to try it, even if they don’t taste like real fries :p

    Yay for good knees!

What brand are your knee sleeves? I went to the store and was overwhelmed by all the options they had.

I have a very cranky left knee, and my advice is to buy an ice pack that you can wear around the house (CVS makes a good one). It’s best to put it on immediately after stretching after your run, but I usually end up waiting until after my shower and then I wear it while I get ready for work. It’s amazing how helpful icing can be (which I never believed before I started doing it religiously).

Bummer on the tofu fries… I’ve never had a tofu I liked those… maybe I’m just not a fan? Oh hum.

I have tried tofu and just don’t think it is for me…

I’ve never had tofu fries before, but have you tried baked butternut squash fries? Those definitely satisfy my fry cravings. So delicious!

Have fun with the water run!

4 puppies in the apartment? AND they don’t get along?? Yikes! Hopefully you won’t have them for toooo long!
Glad your knees are still feeling great and your modified schedule is working out. I’m such a planner and I HATE changing plans, but I think I’m gonna end up having to take another week (or more) off 🙁 I ran again today and these shin splints have me worried that it may be something more serious…or turn into something more serious. Guess I’ll take some time off again…

It looks like you need the dog whisperer! I have four dogs and get them to that calm submissive state before doing anything is the key.

I found that walking them together is key to making them friends. My neighbors are amazed that I can walk four dogs at once.

I am writing an article about walking multiple dogs and should be up at my site by next week.
