Meal Planning Day of Organization Week was quite a success!

I loved having my recipe binder at the store!  It made shopping so much easier (and cheaper because I shopped with purpose).  And just putting a little bit more effort into my recipes is making be happy.

 

Dinner was a planned meal:  Lentil, Carrot, and Lemon Soup.

This recipe was from Body and Soul magazine.  It was easy to make and involves simmering vegetable broth, carrots, and 3/4 up of green lentils for 20 minutes and then adding juice of 1 lemon to the broth before serving.

I’m not sure how I felt about this soup.  It was good, but my palate kept confusing the lemon with salt and my tongue wasn’t pleased.  The Husband will eat when he gets home, so I’ll update if he likes it.

 

The salad was stand-out!

This afternoon, I snacked on some of these Pomegranate and Vanilla Cashews.  Ohmigod — so, so addicting.

And then I talked myself onto going on a short run.  :)    My body was saying "YES," but my mind was saying "Couch!"  I did the old Just-Do-2-Miles trick and managed to get in a decent workout.

    I was planning to try that soup recipe this week too! I wasn't sure about the lemon though, so after your thoughts maybe I'll leave it out…

    Something is for sure better than nothing – I am a firm believer in that. Case in point: I missed Body Pump tonight because my body was screaming from yoga and I needed to grocery shop. But at least I biked to the store!!

    Oh man, I have toyed with that meal planning idea for awhile too, but cannot seem to commit to it or stay organized enough to plan that soon in advance. Congrats on giving it a chance!

    Those nuts are the GREATEST nuts EVER!!! I love all the varieties, and always sneak them on to the conveyor belt at the grocery store when husband isn't looking (they are a small fortune where I live) 🙂

    Creating a recipe book like that was the best thing I ever did. I got rid of so many old dog-eared Cooking Light magazines and I even have some of my grandmothers recipes in there handwritten on index cards, but they are safer in plastic sheets than they are floating around my kitchen!
