Mini Asparagus Quiche

I’m a little lonely.  My brother- and sister-in-law and little niece are visiting from Washington DC, but they’re (plus the Husband) are all staying on the coast with my in-laws.  I’m stuck in Orlando (I have to work tomorrow) and it sucks!

 

I tried to chase away the blues with a yummy mid-afternoon snack — a Cool Cup, a special vegan treat that I’ll review sometime next week!

Dinner was pretty fab!  I’ve been trying to expand my vegetarian protein options, so I made a mini quiche.

 

Mini Asparagus Quiche (serves 2)

Ingredients:

 

  • 4 eggs
  • 8 asparagus heads, chopped
  • 1/2 cup chickpeas
  • 2 oz (or about 1/2 cup) of shredded cheddar cheese
  • 1/2 tablespoon green pepper

 

Directions:

 

  • Mix everything together.
  • Bake at 375 in a greased mini casserole dished for 45 minutes.
  • Let stand for five minutes and enjoy!

I ate half and really enjoyed it.  The chickpeas added a nice crunch to the quiche.

And for dessert, I drank my daily dose of greens in Amazing Grass Green SuperFood Chocolate, which I mixed with 1 cup unsweet almond breeze:

Healthy AND chocolatey?! I can’t believe how yummy it is!

 

I’m going to go curl up with a good book (or the soothing glow of my TV) and relax.  :)  I’ll give Maggie and James a good hug if I get too lonely!

    Aww! Don’t the bosses know it’s a 3 day weekend? Puppies are good company though (they don’t talk back! lol). Another good recipe I maybe trying out.

    j – im sorry i guess i missed that question! 🙂 i like the gels more because you can just rip off the top and shoot it in your mouth without stopping. its pretty hard to eat the bloks or beans while moving!

    If you get REALLY lonely, you could talk to the other half of the quiche that you didn’t eat. I think hugging the doggies is a better idea though. 🙂

    I can’t wait to read your review on those gel cups. My mom bought me some (orange and black cherry) when I was sick. I didn’t like them at first, but they grew on me.
