Egg Pizza

Hello there!

Yesterday, Karen sent me this link from the Happiness Project called “Six Tips for Forcing Yourself to Tackle a Dreaded Task.”  It was totally the kick-in-the-pants that I needed to buckle down and get a fair amount of writing done.  Yay!

 

Lunch was leftover tofu enchiladas from last night:

Which I enjoyed with a side salad:

Salads included chocolate and a Pumpkin Spice Latte.  Quite healthy, I know.  :)  I had a massive sugar crash around 4 PM, but a quick walk with the dogs set me straight.

I also had a bowl of Kashi Go Lean + blueberries:

Dinner had to be fast and simple because I got sucked into a work vortex and didn’t realize how late it had become!

 

I made an easy egg pizza:

The star was this lovely Pesto.  To make a cheese-less version of this pizza for the Husband, I used salsa as the base for his (he’ll eat eggs every now and then):

The “dough” was just a whole wheat flatbread.  Easy, easy!  I topped the flatbred with pesto, feta, spinach, tomatoes, and one half-cooked over-easy egg and then threw everything in the oven for 10 minutes.

The girls and I had grand plans to go bowling while our husbands/boyfriends went to watch football, but we got to the alley and there were no open lanes!  Very sad.  Instead, we went to Yoforia and got frozen yogurt.  Bet you didn’t see that one coming.

(Diana had just come from Zumba, in case you are wondering why she is awesomely bedazzled. I love it.)

So… I better crash.  I’m running 15 miles in the morning!

    “To make a cheese-less version of this pizza for the hummus” This sentence cracked me up. We all have typos Caitlin, but this one was too funny. It took me a minute to realize hummus = husband 🙂

      Funny, I call my husband Hummus sometimes too. He much prefers that to his other name, Ketchup.

    I used that same kind of pesto tonight for my eggplant! Pizza looks good, with the exception of the egg; I just don’t like eggs!

      wash, drizzle in olive oil, pop until broiler for 10 minutes. easy!

    Our gym just launched Zumba, I think the craze has just started to hit Scotland. I heard of people showing up at 7pm for classes starting at 7.30pm and they couldn’t get in, this was at council leisure centres. I’m glad I have my gym where you can book in and be sure to do the class. I’m going tonight for the first time! Can’t wait,should be good fun.

    Nothing wrong with skipping out on bowling for frozen yogurt! I would honestly rather eat than bowl any day of the week!! 🙂

    I love making egg pizzas, but I’ve only ever done the scrambled egg on the pizza.

    Your egg pizza looks so delicious that I almost made it for breakfast!

    I love how you are always so adventurous in the kitchen and how willing you are to try new things – I kept wondering what I was going to do with the flatbread, veggies, cheese, and half a dozen eggs I have on hand. Now my refrigerator thanks you for an excellent idea for something I can whip up!
