Boston Bound

I hate waking up earlier than normal because it throws off my whole day of eating!  By 11 AM, I was starving for lunch (I woke up at 5 AM and ate around 5:30). 

 

It was worth it to dig in early because boy-oh-boy was it GOOD!

I made amazing bean sammies with steamed kale and cheddar.  The "meat" of the sandwich was mashed dark red kidney beans.

I really do not miss meat at all, especially when I find fun new ways to get my protein in!  I can’t believe it’s been 3 months since I went vegetarian.  I haven’t had a meat craving once, which is surprising because I definitely used to have cravings all the time.

I got a fun package in the mail over the weekend from Tina.  She sent all the Healthy Living Summit steering committee members (me, Meghann, Heather, Kath, and Jenna) fun Boston t-shirts to get us excited for the Summit.

It’s been a blasty planning the Summit with the girls, and I’m so EXCITED for next week that I can hardly stand it!  I hope all of our hard work pays off and it’s a seamless, fun, and educational event. 

 

I just want to say in advance THANK YOU for supporting the Healthy Living Summit.  It’s definitely been a labor of love — it’s honestly a lot like planning a wedding.  :)  If you can’t come in real life, we’ll be live streaming it and stay tuned for the details.

    I am Boston bound, but have not even begun to pack. I am such a procrastinator. I will probably pack everything Thursday night, no lie.

    You bet I'm coming! I'm so excited to have y'all up in my 'hood. (Am I allowed to say y'all if I'm from Massachusetts??). I can't wait to meet everyone face-to-face! It's going to be SURREAL haha.

    I won't be attending the summit, but I am a native Bostonian, so I might drop in for the JP Licks and Fun run. The PB Soft serve at JP Licks is killer and a must for peanut butter lovers

    I'm getting excited! This will sort of be a mini vacation for me, which I haven't had since February! I haven't packed yet, but I did pull my suitcase out 🙂

    Lunch looks great! I like the idea of using kidney beans for the "meat."
    CANNOT wait for Boston! It's totally my motivation for pushing through the next couple weeks.

    Boston is such a fun town!! You'll love it! Your sammie reminded me of a sammie I had from Infusion Tea in College Park this weekend-for all of you local orlandonians…get your buy local orlando cards-you get wonderful deals from local businesses…Infusion Tea has bogo lunch combos with your buy local Orlando card! For those of you that haven't been there-infusion tea is veggie (they have vegan yummy food too!!) friendly!     Enjoy Boston this weekend everyone! There are so many great things to do/see here, I hope you guys have a blast!

    I wish I could make the summit but I have to work/a family party but I am a native Bostonian so maybe I will come for ice cream!!

    I really wish I could have made it, but I just couldn't afford the trip to get there and back. I think it will be awesome, and I hope there's one next year so I can go!

    I haven't even thought about what to pack yet, things have been too stressful… but people keep asking me today and now I am starting to freak and have no idea what to wear!! Aahh!

    I was new to the blogging thing when the Summit was announced, so I dind't pay as much attention as I should have.

    Hope you have a blast! I'm tempted to come down for the fun run though as I'm just over the border in NH.

    Lunch looks great! I always forget how satisfying beans are and serve as a great substitute for a vegetarian meal. Have fun in Boston!

    i've been a vegetarian for about a year, and I still have cravings. My parents are both meat eaters, so its really tempting sometimes. but willpower always shines through 🙂 I like that kidney bean sandwich idea 🙂

    When I read the title of this post I thought you were going to tell us that you were wanting to train and qualify for the Boston Marathon, and then I thought, duh, she's talking about the Summit. LOL
