Stay-cation!

I am officially on stay-cation (a vacation where I do not go anywhere!).  I’m sure I will get called into work for a few hours, but I’m pretty much free for the next 5.5 days! Yay!

Onto afternoon eats….  I finished off my can of dates.

And had two Wasa crackers with PB and milk

And had a bowl of Raisin Bran at some point, but my camera ate my picture!

 

Before leaving for my night shift, I slammed a two portion of Amazing Grass Wheatgrass.  James likes to listen to me shake it.  🙂

I didn’t eat dinner until 10:30 — but it was a GREAT meal!

I made baked eggplant "parmesan" with polenta and pasta sauce.  I coated the eggplant in egg white and then dipped each piece in a homemade bread crumb mix (one piece of toast + curry powder + flax all mixed up in the food processor).

The baked polenta and sauce served as a great pasta substitute!

Operation Beautiful – A Note Found!

 

I think it’s SO weird/cool when readers of Healthy Tipping Point FIND Operation Beautiful notes — I think this is the third time it’s happened!  Seriously, I don’t have THAT many readers; what are the odds? 🙂

Christina wrote me to say, "Today I was at Borders in Riverdale, NJ looking for a self help book that my therapist (who I had just started seeing today) recommended.  Imagine my surprise when I found a post-it stuck to the inside cover of the book Binge No More that said "NEVER forget how amazing you are! www.operationbeautiful.com" I was so overwhelmed with emotion that I started to cry on the spot. I realized just how much I’ve taken myself for granted over the years. Whoever wrote that note–thank you. You’ve helped me!"

    OMG Your dinner looks amazing!!!! I have half an eggplant to use up, I just might have to copy you 🙂 Yay for stay-cation. Going somewhere is exhausting anyways, staying at home isn't.

    Your dinner looks great!! I keep expecting to find an Operation Beautiful note in the gigantic mall near my hometown (Palisades Mall) I'm sure I will find some eventually!!

    I'm saving up to buy some of that wheat grass (yes saving…i'm a college kid haha). But is there anywhere I can purchase that handy shaker you have? i tried looking on the amazing grass website but i just can't seem to find it. 🙁 I need something to hold my future Green Monsters in!

    Awww, that was one of the best OB postings I've read yet. I love how many people you are touching!

    On a lighter note, I don't know HOW you drink 2 servings of wheatgrass straight. Do you use a chaser or something!?!??! I can usually only do it if I follow it up with a huge glass of ice water and then a meal of something tasty to cover up the flavor.

    It is good for me and it makes me feel good, but I'm not a fan of the flavor straight-up!

    Your "breading" looks great. Gotta try that out sometime. Love the veggie dinner. I crave veggies for dinner all the time now since I started blogging. I love the good influences I get from blogging.

    Caitlin, have you tried medjool dates? They absolutely blow those canned dates out of the water. SO good. They're huge and so much tastier — I tried them (saw them on fitnessista's blog) and can't go back.

    anon – oh yes! oh nuts sent me a free trial of medjool dates a few months back and they blew my mind!! but they dont sell them at the local grocery store so i'm safe LOL

    I came so close to making eggplant parm last night too, but then I opted for some gnocchi last minute. After seeing your dinner, I'm kinda wishing I went with the eggplant. Oh well, maybe next time. 🙂

    That is so wonderful that you are on a stay-cation. Good for you! Take a few days for just yourself, you definitely deserve it, I dont think I've ever seen a more devoted worker. Take care hun!

    I'm sure it wasn't meant to be part of operation beautiful (or maybe it was), but the other day while I was driving around town, I noticed that someone had spray painted a large "YOU'RE BEAUTIFUL" across a brick wall. 🙂 So much better than normal graffiti!

    Wow – that dinner definitely does look worth waiting for! How did you manage to gear up and make that at 10:30pm!? Anytime past 9pm and it's cereal all the way for me! haha.
