I could not sleep last night, so as I often do, I visualized my breakfast. 

 

I wondered what my regular pancakes would taste like if I added sweet potato…. and the actual meal was better than I imagined!

I added 1/2 cup of mashed sweet potato to my usual Hodgson’s Mills InstaBake pancake mix (and I also added a little extra unsweet almond breeze to the mix because the potato soaked up so much of the almond milk).  The result were fluffy, chewy, and slightly sweet pancakes!

These pancakes didn’t "taste" like sweet potato; the potato changed the texture and density more than anything.  It was fun to sneak some veggies into my breakfast!

10 Minute Strength Routine

 

This morning’s strength routine consisted of:

 

  • 30 push-ups
  • 10 decline push-ups
  • Two 30-second planks
  • 100 bicycle crunches
  • 20 reverse crunches

 

I am hopeful my schedule will permit me to make it to the gym tonight! We’ll see!

    Yum, I love potato pancakes! But I’ve never made them at home. I’ll have to get my wife to make these. I cook too, but breakfast is her realm 🙂

    Adding sweet potato to pancakes sounds good, but did it make them too mushy on the inside? I have a can of sweet potato puree I don’t know what to do with. Thanks for the idea

    When I can’t sleep, I start to make up stories in my head..for instance..how my boyfriend will one day propose to me, lol…So glad he isn’t a blog reader!!

    Re: cookie eating. I think emotional eating is good sometimes, too. It’s when I don’t really want to eat something, but I do because I am stressed that I hate.

    Re: Hitting a wall. There is an article in this month’s Runner’s World about that too. I can’t rememebr if that is the article you mentioned in your post, but I just read it and thought of you.
