Good morning!

Today is my official "off" day from my full time job; unfortunately, I did not meet a deadline yesterday, so I will be working today.  The only thing that sucks more than working is working for free (I’m hourly).  Sigh!

I woke up to a lovely Cashew Pancake breakfast, which made things a little bit more cheerful:

CIMG5120

I made the pancakes using Hodgson’s Mills InstaBake mix + 2 tablespoons of crushed cashews.  Pecans are better, but the cashews gave it a nice chew!

CIMG5121

Plus, "diploma maple syrup" (can you see my University of Pittsburgh diploma in the reflection?)

CIMG5124

And two plums:

CIMG5127

I was determined to get in a good workout this AM and was planning to do a back-to-back elliptical and swim session to help me train for the Metric Century and Triathlon.  I started on the elliptical (while multi-tasking and reading for work).

  • Duration: 30 minutes
  • Distance: 2.5 miles (on elliptical)

Afterwards, I headed over to the pool only to discover that the AquaFit class was in session! Arg!  So, I’ll be heading back to the pool tonight to get in my laps.  I really do NOT like two-a-days.

I ran a bunch of errands.  After coming home, I refueled with a Green Monster:

CIMG5128

It was the usual blend (1 banana, 1 cup unsweet almond milk, 1 tablespoon flax, and 2 cups kale).  Delicious.

Off to work I go!

What college did you go to?  Represent your college pride!  If you didn’t go to college, what’s your favorite college sports team?  I’ll start – UNIVERSITY OF PITTSBURGH!
