Another Veggie Success

in All Posts

What a day — four hours in the car for just a few hours with the family.  It was worth the effort and very nice to see my Grandpa.

I was excited when my aunt suggested Toojay’s for lunch.  It’s a chain with some wonderful vegetarian options.

I ordered the Mediterranean Healthy Trio:

The trio included Taboule:

Hummus and pita:

And a ginormous fruit salad  — fresh and crunchy!

I was so impressed with this meal — it was fabulous to order a vegetarian meal that was not cheesy or pasta-based (nothing wrong with those options, of course, it was just nice to eat something a little lighter for lunch).

I snacked on Sun Chips on the drive back:

I need to pull my life together — see you for dinner!

How did you spend your Memorial Day?

I had Mexican food with a friend at lunch and worked on my website. Not a traditional Memorial Day celebration, that’s for sure!

  • Leah @ Simply Fabulous May 25, 2009, 2:37 pm

I love your lunch! It looks delish!
I know what you mean about pasta veggie options. I went to a wedding a few weeks ago and I asked for the veggie option and they placed a HUGE bowl of cheesy pasta infront of me.

We spent the day in the park, chillin’ around shops and relaxing!

  • Stacey May 25, 2009, 2:45 pm

I wish some places around here had those kinds of options!

My boyfriend and I went on an impromtu bike ride! We didn’t see any alligators, but we did see some baby ducklings with their parents 🙂 It was nice!

  • Sarah (LovIN My Tummy) May 25, 2009, 2:48 pm

Mmmm….that is THE ideal vegetarian spread!

  • Meganerd May 25, 2009, 2:49 pm

I’m not a vegetarian but I would order that at TooJays!! They have really good Tabbouleh.

Glad your Memorial day is going well, I’m in Virginia Beach!! I went on a leisurely bike ride on the boardwalk.

Mmmm I’m loving that Greek threesome 😉 You are so right about having an option other than pasta or tossed salad!

  • Bec May 25, 2009, 3:18 pm

sounds like a great meal, I love sun chips too! I was working thought it was driving a bar cart around the course all day so not a horrible way to spend my day!

  • Matt May 25, 2009, 3:18 pm

Mmmm that lunch looks awesome. Especially the taboule; I love that stuff!

  • Liza May 25, 2009, 3:27 pm

That’s something they should regularly serve at more restaurants, more often!

  • Melissa @ For the Love of Health May 25, 2009, 3:43 pm

That’s so great you had a wonderful day! That trio salad looks really good! I haven’t heard of that place.

    Have a great evening!

Looking at cars in the rain. Plus a kick butt spinning class. The Instructor was amazing! Pretty easy day just wish it wasn’t RAINING!!

  • spicygranola May 25, 2009, 3:45 pm

Tabouleh, hummus, and sun chips, that is my kind of meal. You are smart to start getting organized now and not tomorrow morning (which is when I will be pulling my life together)

  • Niki May 25, 2009, 3:47 pm

Yum! Looks great! I spent my day driving 6 hours home from the lake and waiting to have make your own pizza night and a movie with the BF!

  • Oh She Glows May 25, 2009, 4:12 pm

Oh wow that hummus just made me crave it like MAD!! A perfect ball of goodness, I’d day. That meal actually looks perfect! 🙂

Glad you had a nice visit!

I love that you’re doing the vegetarian thing- it gives me some great ideas for when I go out to eat!

  • Catch Me If You Can May 25, 2009, 4:21 pm

I forgot to say thank you for your answer! I am very new to this blog/commenting thing and I appreciate it. I also found a yummy homemade whole wheat pancake recipe today pretty healthy if you get tired of mix but mixes are so darn convenient!

  • Sarah (Running To Slow Things Down) May 25, 2009, 5:40 pm

The food looks so fresh and delicious! I love that combo…:D

  • Mica May 25, 2009, 5:55 pm

Mmm, hummus and tabbouleh are great vegetarian options!

  • Anne May 25, 2009, 8:15 pm

Oh my gosh, that lunch looks incredible! I also hate when people automatically think of pasta for vegetarians. There are so many more options!

I spent the day just chilling with the fam. It was nice. Wow, a four hour car ride sounds rough, but I’m glad it was worth it! Family is important 🙂

Great point about a pastaless veggie meal… so many of mine have been pasta recently that I’m on self-imposed probation! It sounds like you are doing great with your vegetarianism, congratulations. Do you notice yourself feeling any better or having more energy? I did almost instantaneously.

  • Caitlin at Healthy Tipping Point May 26, 2009, 4:13 am

  • Bridget May 26, 2009, 9:53 am

    I love Toojays!

Memorial Day in Japan was very sad and very surreal. I’m used to commemorating my family members who’ve died in the service. I just had to keep them in my heart this year, but I did scatter some flower petals along the river bed.

Hope that you had a great day!
