Another Veggie Success

What a day — four hours in the car for just a few hours with the family.  It was worth the effort and very nice to see my Grandpa.

 

I was excited when my aunt suggested Toojay’s for lunch.  It’s a chain with some wonderful vegetarian options.

I ordered the Mediterranean Healthy Trio:

The trio included Taboule:

And a ginormous fruit salad  — fresh and crunchy!

I was so impressed with this meal — it was fabulous to order a vegetarian meal that was not cheesy or pasta-based (nothing wrong with those options, of course, it was just nice to eat something a little lighter for lunch).

    I had Mexican food with a friend at lunch and worked on my website. Not a traditional Memorial Day celebration, that’s for sure!

    I love your lunch! It looks delish!
    I know what you mean about pasta veggie options. I went to a wedding a few weeks ago and I asked for the veggie option and they placed a HUGE bowl of cheesy pasta infront of me.

    We spent the day in the park, chillin’ around shops and relaxing!

    I wish some places around here had those kinds of options!

    My boyfriend and I went on an impromtu bike ride! We didn’t see any alligators, but we did see some baby ducklings with their parents 🙂 It was nice!

    I’m not a vegetarian but I would order that at TooJays!! They have really good Tabbouleh.

    Glad your Memorial day is going well, I’m in Virginia Beach!! I went on a leisurely bike ride on the boardwalk.

    sounds like a great meal, I love sun chips too! I was working thought it was driving a bar cart around the course all day so not a horrible way to spend my day!

    Looking at cars in the rain. Plus a kick butt spinning class. The Instructor was amazing! Pretty easy day just wish it wasn’t RAINING!!

    Tabouleh, hummus, and sun chips, that is my kind of meal. You are smart to start getting organized now and not tomorrow morning (which is when I will be pulling my life together)

    Yum! Looks great! I spent my day driving 6 hours home from the lake and waiting to have make your own pizza night and a movie with the BF!

    I forgot to say thank you for your answer! I am very new to this blog/commenting thing and I appreciate it. I also found a yummy homemade whole wheat pancake recipe today pretty healthy if you get tired of mix but mixes are so darn convenient!

    Oh my gosh, that lunch looks incredible! I also hate when people automatically think of pasta for vegetarians. There are so many more options!

    I spent the day just chilling with the fam. It was nice. Wow, a four hour car ride sounds rough, but I’m glad it was worth it! Family is important 🙂

    Great point about a pastaless veggie meal… so many of mine have been pasta recently that I’m on self-imposed probation! It sounds like you are doing great with your vegetarianism, congratulations. Do you notice yourself feeling any better or having more energy? I did almost instantaneously.

    I love Toojays!

    Memorial Day in Japan was very sad and very surreal. I’m used to commemorating my family members who’ve died in the service. I just had to keep them in my heart this year, but I did scatter some flower petals along the river bed.
