Work-Related Carb Stupor

I worked all afternoon on the holistic website and ending up skipping the gym.  Level 2 is a good enough workout for me, anyway! 🙂

 

Concentrating on work + a crap fruits and veggies selection in the fridge made for a very carb rich-afternoon.

 

I started off with a crushed granola bar + Chobani yogurt.

And 1/2 of the jumbo pretzel Derek gave me, which I kind of ate mindlessly as I worked.

I realized I need some protein and veggies by the time dinner rolled around, so I made macaroni and cheese and vamped it up with baked tofu and broc.

Baked tofu was a delightful addition to the mac and cheese!

Off to bed! An early night sound absolutely delightful to me.  🙂

    Adding tofu is such a great idea!

    I’m so glad it’s April already! The weather has been absolutely gorgeous here, and my birthday is this month. 😉

    I have to say thank you so much for posting your befores and afters of the 30 day shred. I am on day 2 of the shred and my legs are jello…but I LOVE IT.

    Needing more protein? Well I know that you’re a wino (jk) I made this amazing and super quick recipe last night w/ white wine and chicken. Super tasty and low fat…but of course tons of protein.

    Haha, funny you had this dinner tonight because baked tofu and mac and cheese made my weekly menu too! Weird, but I’ve been craving these two things lately, so I figure having them together would be perfect!

    I can’t believe it’s April already, especially since the boyfriend and I just drove through a scary snow storm.

    …When it started snowing heavily, I told him about your 90 degree, pool-side day yesterday. Then we cried…a lot.

    I’ve never added tofu to Annie’s, but that’s a great idea to protein it up…I usually just add a veggie dog!

    Tofu in mac and cheese is a great idea. Since tofu takes on the taste of whatever is around it, I bet you could hardly notice it except for the texture. Looks good, too 🙂
