Take That, KFC!

in All Posts

Work has been kind of BLAH today.  I have a lot to do and very little energy.  Also, I discovered this weird swelling under my eye around 9 AM:

CIMG2109

Seriously, WTF is that?

My mid-morning snack was so good! Sweet, salty, and crunchy — chocolate, almonds, and raisins.

CIMG2110

That’s the Husband’s textbook.  He’s studying to be a Doctor of Oriental Medicine… pretty cool, huh?

And lunch – oh my! Lunch was fabulous (and early — around 11:30).  I keep seeing these commercials for KFC Mashed Potato Bowls.

Which look AMAZING albeit highly unhealthy.

So, I tried to recreate my own healthier Mashed Potato bowl for lunch.

CIMG2111

My bowl contained:

  • 1/2 cup red mashed potatoes (leftovers)
  • 1/4 cup green beans
  • 1/4 cup creamed corn
  • 1.5 servings of organic chicken deli meat
  • A toasted WW hot dog bun on the side

CIMG2113

So delicious — so many flavors in each forkful!

CIMG2114

The toasted hot dog bun was a great addition — I think it will make this lunch "last" a little longer in my tummy.

Back to work!

  • Amelia (AC/DC: Highways to Health) February 17, 2009, 10:20 am

Great idea to modify something so unhealthy so that you can still enjoy it! Very good way to deal with cravings.

Hope your eye problem clears up! šŸ™‚

  • ksgoodeats February 17, 2009, 10:23 am

That looks like a hive/mosquito bite – weird, hope it goes away!!

Your version looks MUCH better than the real deal!

  • Nicole (anotheronebitesthecrust.wordpress.com) February 17, 2009, 10:24 am

  • talieworld February 17, 2009, 10:30 am

I love healthifing unhealthy dishes! šŸ™‚

  • Bec February 17, 2009, 10:33 am

mmm that ‘KFC’ bowl looks good!

  • Thinspired February 17, 2009, 10:35 am

That is so cool about your hubby! I took one class in college on Oriental Medicine and it was fascinating. I bet he is a wealth of information!
So weird about your eye–maybe you put pressure on it in your sleep or didn’t get enough?

  • Victoria February 17, 2009, 10:42 am

Seems kind of like a shepherd’s pie. Sounds filling. I hope there is nothing really wrong with your eye.

  • emily February 17, 2009, 10:42 am

kfc is grody but they do have some great ideas, good copy!

  • Jen February 17, 2009, 10:46 am

Oooh, that swelling is weird, our body’s do strange things sometimes…

  • LT February 17, 2009, 10:59 am

How strange! My roommate had the exact same looking thing the other day!

  • Sarah (lovINmytummy) February 17, 2009, 11:16 am

Oh, don’t mess with that thing by your eye! I’d call a dermatologist ASAP…you don’t want to mess with things by the eyes.

I always try to recreate those nasto KFC bowls! Love it!

  • Kara February 17, 2009, 11:21 am

Looks to me like it may be a “stye.” Warm compresses may help to localize the infection and inflammation and speed spontaneous drainage.

  • Ryane February 17, 2009, 11:25 am

Oh my goodness that looks fantastic!
KFC bowls make me think of college… sometimes I miss being “young and dumb” about nutritious choices!!

  • lauren February 17, 2009, 11:25 am

scary about your eye! like your healthified KFC bowl…looks delish

  • ttfn300 February 17, 2009, 11:27 am

i’d much rather eat your bowl šŸ™‚

  • Betsy February 17, 2009, 11:40 am

Ugh KFC was one of my guilty pleasures that we would indulge in every 6 months or so, until recently we went and there was a giant pubic hair in my mac & cheese. I gave it back to the manager and he said "No one here has that color hair." Umm… yeah, so needless to say I'm off KFC for a while – maybe I should try to recreate some of their favorites at home like you.

  • Matt February 17, 2009, 11:51 am

I think I am getting KFC for dinner after seeing that picture…
    Thanks… Haha.

  • Anonymous February 17, 2009, 11:54 am

I get the same puffy bumps under my eye when I come in contact with something I am allergic to (dog hair for me)

  • Sharon February 17, 2009, 12:11 pm

Love your mashed potato bowl! It looks so yummy & much more nutritious than KFC!

I think the bump under your eye looks like a bug bite or hive. Does it itch? Maybe try putting some cortisone on it or taking a Benadryl. Anyway, hope you feel better soon. I hear you- work sucks when all your energy is zapped!

  • Chic Runner February 17, 2009, 12:33 pm

MMMM I love those bowls! Yum. ha ha, what a great idea to make it yourself. Also, hope the eye heals up quick and can’t wait for the road id giveaway!

  • diana by design February 17, 2009, 1:01 pm

    That looks delicious!! šŸ™‚

I’m knew to your blog and so excited about reading it. I was wondering if you could do a post on some bare essentials to get at the store for people who are just starting to eat healthy? I am just becoming a runner and eating healthy but I’m not sure what foods to buy at the store so I end up with very mismatched foods that don’t make great meals..

Thanks! Hope your eye gets better šŸ˜‰ and hello from a fellow Orlandoian!

  • Caitlin at Healthy Tipping Point February 17, 2009, 1:12 pm

diana – that’s a great idea for a post!! thanks for suggesting it.

i will try to do this in the next few days!

we should hang out if you are in orlando, we can go on a run together!

  • Emily February 17, 2009, 1:33 pm

Oh, the eye thing doesn’t look fun. Hope it clears up soon! It’s so neat that your husband is studying Oriental Medicine! I am super interested in complementary and alternative medicine (CAM) because I have seen firsthand how Western medicine does NOT have all the answers!

  • Missy February 17, 2009, 1:50 pm

I almost thought you ate the real KFC bowl too! I was about to be jealous! Love your version much more though!! Nice and healthy!

  • talesofexpansion February 17, 2009, 2:46 pm

ahhh, eye troubles make me so nervous!! yours might be just a bite though?

awesome innovation with the kfc bowl. mmm that corn looks so creamy and rich …

  • Allie February 17, 2009, 2:52 pm

I’m going to South America on a looong flight soon, and I really do not want to eat airplane food! does anyone have any good ideas as to what I could bring? I’m leaving at 1 pm and arriving at 10 am, so I need snacks and a couple meals. Any help would be GREATLY appreciated!

  • Briana February 17, 2009, 3:10 pm

That breakfast plate looks sooo good. If you like dark chocolate I recommend you try this bar Hershey makes. It’s dark chocolate with dried cranberries and blueberries and almonds. It’s seriously amazing.

  • Erin February 17, 2009, 3:58 pm

    Hey
About your eye, maybe it is an enlarged pore?

  • imadedinner February 17, 2009, 4:10 pm

    YUM! That looks fantastic!

About your eye: if its not painful or itchy, just hope it goes down, sometimes tear ducts do weird things. If it hurts get it checked out, and if it itches put benadryl on it!

  • Claire February 17, 2009, 4:54 pm

Looks like a “simple” allergic reaction to me. If it’s still there, maybe try some benadryl if it’s bothering you or has gotten bigger. Doesn’t really look like anything that is infectious or dangerous.

I’ve done combo dinners like that before and I just love them. My brother, however, doesn’t like his food to TOUCH!

  • healthy ashley February 17, 2009, 4:54 pm

I love that you made your own KFC bowl! It sounds good!

  • Jewels February 17, 2009, 5:16 pm

i had something like that on my arm and it was a subcutaneous cyst which I think is just a random accumulation of fluid.Since its near your eye, you may want to get it checked out if it doesnt go away

  • Mica February 17, 2009, 5:21 pm

Your bowl looks way better than the stinky, old KFC bowl!

Maybe you have a clogged pore or something under your eye? Try putting a warm wash cloth on it.

  • Jill February 17, 2009, 6:10 pm

This is such a good idea! I used to LOVE KFC…I’m def. trying this!

  • A Toronto girl out West February 17, 2009, 6:24 pm

    Oh oh spaghetti-o!

Have you gone to see a Doctor? My sister used to get little cysts like that near her wrist. It was water build-up.

  • Red Head, Yellow Dog February 17, 2009, 6:29 pm

    looks like a great lunch!
hope that thing under your eye went down šŸ™ it looks like an ant bite to me but who knows!

  • Leanne February 17, 2009, 6:32 pm

I’m not quite sure what I think about this meal ha ha… KFC just grosses me out, but this is definitely a creative reinvention.

Have you ever tried your Grape Nuts hot? I used to eat that for b-fast every morning when I lived in the dorms and I LOVED it! I haven’t had it since then, but you made me crave it this morning.

  • Olga February 17, 2009, 6:53 pm

o0o sorry about that swelling! I say, if it’s there tomorrow you should go to a doctor.

I like your recreation of the KFC meal. It probably tasted better too!

  • Caitlin at Healthy Tipping Point February 17, 2009, 7:08 pm

leanne – ooo yes i love grape nuts hot!

everyone had such great suggestions on my mysterious eye swelling!! you all should be dermatologists. LOL. but its gone now, so we’re all good!

  • Meg February 17, 2009, 7:27 pm

Love your KFC creation! Hope your eye is ok!

  • HangryPants February 17, 2009, 7:56 pm

I am not hitting on you, but your eyes are a really pretty color. I have no idea what that swelling is, but maybe your super smart medically minded husband can help you!

  • Anonymous May 7, 2009, 10:13 am

i have the EXACT same eye thing.. it showed up this morning.. did you find anything out??

  • Caitlin at Healthy Tipping Point May 7, 2009, 10:15 am
