Take That, KFC!

Work has been kind of BLAH today.  I have a lot to do and very little energy.  Also, I discovered this weird swelling under my eye around 9 AM:

Seriously, WTF is that?

 

My mid-morning snack was so good! Sweet, salty, and crunchy — chocolate, almonds, and raisins.

That’s the Husband’s textbook.  He’s studying to be a Doctor of Oriental Medicine… pretty cool, huh?

 

And lunch – oh my! Lunch was fabulous (and early — around 11:30).  I keep seeing these commercials for KFC Mashed Potato Bowls.

Which look AMAZING albeit highly unhealthy. 

 

So, I tried to recreate my own healthier Mashed Potato bowl for lunch.

My bowl contained:

 

  • 1/2 cup red mashed potatoes (leftovers)
  • 1/4 cup green beans
  • 1/4 cup creamed corn
  • 1.5 servings of organic chicken deli meat
  • A toasted WW hot dog bun on the side

So delicious — so many flavors in each forkful!

The toasted hot dog bun was a great addition — I think it will make this lunch "last" a little longer in my tummy.

    Great idea to modify something so unhealthy so that you can still enjoy it! Very good way to deal with cravings.

    That is so cool about your hubby! I took one class in college on Oriental Medicine and it was fascinating. I bet he is a wealth of information!
    So weird about your eye–maybe you put pressure on it in your sleep or didn’t get enough?

    Oh, don’t mess with that thing by your eye! I’d call a dermatologist ASAP…you don’t want to mess with things by the eyes.

    I always try to recreate those nasto KFC bowls! Love it!

    Looks to me like it may be a “stye.” Warm compresses may help to localize the infection and inflammation and speed spontaneous drainage.

    Oh my goodness that looks fantastic!
    KFC bowls make me think of college… sometimes I miss being “young and dumb” about nutritious choices!!

    Ugh KFC was one of my guilty pleasures that we would indulge in every 6 months or so, until recently we went and there was a giant pubic hair in my mac & cheese. I gave it back to the manager and he said "No one here has that color hair." Umm… yeah, so needless to say I'm off KFC for a while – maybe I should try to recreate some of their favorites at home like you.

    I get the same puffy bumps under my eye when I come in contact with something I am allergic to (dog hair for me)

    Love your mashed potato bowl! It looks so yummy & much more nutritious than KFC!

    I think the bump under your eye looks like a bug bite or hive. Does it itch? Maybe try putting some cortisone on it or taking a Benadryl. Anyway, hope you feel better soon. I hear you- work sucks when all your energy is zapped!

    I’m knew to your blog and so excited about reading it. I was wondering if you could do a post on some bare essentials to get at the store for people who are just starting to eat healthy? I am just becoming a runner and eating healthy but I’m not sure what foods to buy at the store so I end up with very mismatched foods that don’t make great meals..

    Oh, the eye thing doesn’t look fun. Hope it clears up soon! It’s so neat that your husband is studying Oriental Medicine! I am super interested in complementary and alternative medicine (CAM) because I have seen firsthand how Western medicine does NOT have all the answers!

    I’m going to South America on a looong flight soon, and I really do not want to eat airplane food! does anyone have any good ideas as to what I could bring? I’m leaving at 1 pm and arriving at 10 am, so I need snacks and a couple meals. Any help would be GREATLY appreciated!

    That breakfast plate looks sooo good. If you like dark chocolate I recommend you try this bar Hershey makes. It’s dark chocolate with dried cranberries and blueberries and almonds. It’s seriously amazing.

    YUM! That looks fantastic!

    About your eye: if its not painful or itchy, just hope it goes down, sometimes tear ducts do weird things. If it hurts get it checked out, and if it itches put benadryl on it!

    Looks like a “simple” allergic reaction to me. If it’s still there, maybe try some benadryl if it’s bothering you or has gotten bigger. Doesn’t really look like anything that is infectious or dangerous.

    I’ve done combo dinners like that before and I just love them. My brother, however, doesn’t like his food to TOUCH!

    i had something like that on my arm and it was a subcutaneous cyst which I think is just a random accumulation of fluid.Since its near your eye, you may want to get it checked out if it doesnt go away

    Your bowl looks way better than the stinky, old KFC bowl!

    Maybe you have a clogged pore or something under your eye? Try putting a warm wash cloth on it.

    Oh oh spaghetti-o!

    Have you gone to see a Doctor? My sister used to get little cysts like that near her wrist. It was water build-up.

    I’m not quite sure what I think about this meal ha ha… KFC just grosses me out, but this is definitely a creative reinvention.

    Have you ever tried your Grape Nuts hot? I used to eat that for b-fast every morning when I lived in the dorms and I LOVED it! I haven’t had it since then, but you made me crave it this morning.
