HELLO! I’m back on the East Coast and back to daily blogging from here on out.  I missed you guys SO much!

 

As I mentioned, the wedding was amazing.  It was the best day of my life.  I can’t believe we were married nearly two weeks ago!

Yayyyyy!  I’ll probably do a real wedding recap in a few days or so.

 

Back to reality….

 

I’m totally exhausted!  We left California last night at 10 PM and arrived in Atlanta at 5:00 AM.  We slept on the floor (ewww) for an hour or so and then grabbed breakfast.

Thank goodness for Perfect Oatmeal from Starbucks!  I added about 1/2 a packet of brown sugar and a packet of dried fruit.  It felt so good to eat oatmeal again. YAY for whole grains!

 

I also drank a bottle of OJ.  This is two servings, but I think I needed the Vitamin C after 2 hours of sleep!

We got home at noon, hugged the puppies, and checked over the wedding photo proofs (YAYYYY)!  And… then we crashed.  It was one of those moments when I wanted to go for a run, but I knew sleep was the priority.

 

After waking up three hours later and doing grocery shopping, I ate a light, late lunch (I slept through lunch).

Two Eggs Benedict with Canadian Bacon… well, the eggs were scrambled because I cannot perfect the Benedict process!! Any tips?

Time to unpack and unwrap some more wedding presents!

    I am not a huge fan of eggs benedict but I did see Regis on “regis and kelly” learning how do make them properly. I think I picked up two key things… Help place the egg whites into the hot water using a large serving spoon. As for the hollandaise sauce, the key is lots of butter and add the egg yolks slowly to the butter as you are using a mixer…

    that’s all I got. They actually made it look really good!

    Welcome Back! You can buy a little egg poacher which does it perfectly, or you can do it in a pot a warm bath of water – not boiling – and some vinegar and literally just crack the egg right in there. You will know when it’s done!

    heather – eggs benedict are cooked in a pot of hot water (without the shell) and then you scoop them out with a spoon. but i cant figure it out!!

    To poach eggs, fill a large saucepan with boiling water. Break eggs into a cup and dip the cup into the water. Cover, turn heat down a little to where its barely simmering, and cook for about 6 minutes. The key to the water is to add vinegar. Any kind works. Distilled white is the best. At least a tablespoon. The Southbeach Diet book has a faux hollandaise that is amazing. It uses smart balance and egg beaters.
