I can’t wait for my mother and maid of honor to get here! They should both be here in a few hours. 🙂 YAY!

To prepare for my multiple guests, I made a lovely casserole.

This a spin on my Santa Fe Casserole.  This casserole contained:

  • About 3 cups of cooked brown rice
  • 1 egg
  • 2 cups Cheddar Cheese
  • 1 can of Dark Red Kidney Beans
  • 1 chopped green pepper
  • 1 cup of skim milk
  • Lots of pepper
  • Lots of chili powder

I just mixed everything up and baked it in a greased casserole dish for about 35 minutes at 350 degrees.

My dinner included a side salad as well.

And "dessert" was a Ghirardelli Limited Edition Peppermint Bark Chocolate, which I swiped from the salon this AM. 🙂

I see cantaloupe in my future as well!

STAY TUNED for the OnlineShoes.com Ratty Sneaker Champion!  I’ll announce the winner of the $100 Gift Certificate tomorrow AM!

Trust me…. it was HARD to judge!  I had black toes, bleeding toes, boys’ sneakers, injuries, dog poop, mud, and MORE to choose from! 🙂

    Ooh, yummy casserole.

You always have such cute dishes. I’m inspired to go hunt for some nice ones once I get back to my apartment.
