Is it the weekend yet? No, seriously. Is it?

 

ALMOST!! 🙂

 

My appetite confuses me sometimes.  I stuffed my face last night and woke up with a grumbling tummy.  My hearty bowl of oatmeal didn’t hold me over AT ALL, and my mid-morning snack didn’t even faze me.

 

I had a pear:

I was SO hungry for lunch that I ate at 11:30!  I made a North of Border Quesadilla.

Ingredients (for 1):

 

  • 1 large burrito
  • 1/4 cup shredded cheddar cheese (like Cabot’s)
  • 1/2 cup alfalfa sprouts
  • 1/3 block tofu
  • 2 tablespoons taco seasonings
  • 2 tablespoons water
  • pepper to taste

Preparation:

 

  • Cut tofu into small silvers, place between two paper towels and press the water out for approximately 30 minutes.
  • Mix taco seasonings and water and coat tofu in marinade.  Let stand 15 minutes.
  • Bake tofu at 390 degrees for 30 minutes, flipping once.
  • Heat griddle and place burrito in the center.
  • Add cheese, sprouts, and baked tofu to one side and fold over the other side to create a quesadilla.  Add pepper.
  • Cook on Medium High until burrito crisps and cheese melts.
  • Cut into thirds and enjoy!

          Date Night

           

          Future Husband and I need some quality time together. 🙂 We’re going to my favorite restaurant in Orlando, Seasons 52, for dinner.  I made the reservation this AM as a surprise.  He’s never been, but I hope he likes it as much as I do!

           

          Our reservation isn’t until 10 PM (Future Husband is working late), so I’ve got to space my snacks and post-run fuel accordingly.

            Sounds like fun! Friday is our date night so we’ll be going out as well. We’re between two places so I’m excited to see where we end up!

            I have never been to Seasons 52! I hear it’s amazing though, and I’m sure FH will like it as much as you. Enjoy date night, they’re the best! Do you guys have date night rules, like no wedding talk, no work talk?

            A 10pm dinner…I will be asleep 2 hours by then 🙂 I couldn’t imagine eatting that late. Have a great time

            When I go to bed full, and wake up hungry, I imagine that my metabolism just went into overdrive in my sleep due to having lots of calories to work with…haha maybe?

            adrienne – LOL well its not really a spanish quesadilla, with the tofu and the cheddar and the sprouts, so i thought it was a little “north of the border”!

            hi caitlin!
            delicious lunch! i’m curious… my fiance and i sometimes have later dinners too because of work, school, etc. and i never really know how to adjust my eating. i find that if i don’t eat dinner, by 8 pm i am starving!! i know i can eat snacks, but i doubt that would hold me til so late (especially 10!) do you compensate with more snacks and then a smaller dinner, or what is your plan of attack?

            fodie – i just try to space out my snacks a little longer. instead of eating every 2 hours, i’ll try to go 3. also, i try to fit in a long run because that will allow me to eat the “extra” calories i know i’ll need to last me to a late dinner. last, i won’t have the dessert or wine i normally would with a dinner out, because i probably will have to eat a 250 calorie snack around 7 or 8 anyways to hold me through.

            The hunger could be from the alcohol. I know on days after I’ve had a little much to drink I seem to have the munchies all day (not that you drank a lot last night, but since you said earlier you had a hangover before bed it made me think about this). Someone actually left me an article about it once but I can’t find it right now… it was something about the alcohol effecting your glucose levels and (obviously) liver function, which also explains those “drunk munchies” people get. 🙂

            Good tips for lasting until a late dinner! I have a crazy work schedule and sometimes have trouble spacing out snacks so I can make until dinnertime without calorie overload!
