I made a grilled sweet potato and black bean burger for lunch… mmmm! No bun required!


I just mashed a cooked sweet potato, 1/2 cup of black beans, and some S&P together, and then grilled it in the pan for 4 minutes on each side.  Topped with a little Fage, it was perfecto!


On the side, I had some chopped carrots and green peppers.  I think I’m overcompensating for my lack of veggies yesterday! I’ve already had 5 servings today! 


Did you know baby carrots are just regular carrots that are cut into "baby" shape?  Weird.


My mid-morning snack was cantaloupe and cottage cheese.  I love how cottage cheese can be sweet or savory, depending on what you pair it with!


Sorry for the rapid update, but I’m got to concentrate on work-work!  It’s the final push to the weekend, and I need to wrap stuff up!


When do you get most of your work done–Monday morning or Friday afternoon?  I’m a late bloomer! 🙂
