halfway through to friday!

Thanks so much to everyone who added to the very interesting glycemic index discussion! I love to learn about the intricate ways our bodies work and how we can improve our performance with proper nutrition. The body is such a wonderful machine!
We’re halfway to Friday, thank goodness! Work has been productive and interesting–I learned a lot today about some aspects of land development that I didn’t really understand before. Being interested in your job is key to enjoying that aspect of your life, isn’t it?

Lunch – Salmon Cracker Leftovers

I put the Savory Salmon Crepe leftovers to good use and made Salmon Crackers with yummy, melty cheddar cheese. I used two Wasa crackers (these things are so delicious!). On the side, I had a carrot and a little side salad with pine nuts.


Snacks!

Around 10 AM, I was craving fruit. I enjoyed perfectly ripe plum and a few dried apricots.


About an hour after lunch, I had my typical mid-day snack… yogurt, cereal, and blueberries. I love plain nf yogurt. It took me so long to get used to the taste, but BOY–am I glad I did! It’s just so rich and healthy (and cheaper than Greek).

Future Husband and I are heading to the gym after work. I think I’m going to be forced to pound out today’s mileage on the treadmill (ughhhh). The weather is even worse than it was yesterday!
