Baked Veggie Egg Rolls

in All Posts

Prepare to have your mind – and taste buds- blown.

Egg rolls seem scary and complicated… especially because I’ve never figured out how to fry stuff at home.  Baking the rolls is a much easier (and healthier) alternative.  In fact, these rolls went from ingredients to in my mouth in just 20 minutes!

Baked Veggie Egg Rolls

Ingredients (for 6 rolls):

  • 1/3 block extra firm tofu
  • 1 carrot
  • 6 spears of asparagus
  • 6 tablespoons spinach hummus
  • 6 egg roll wraps
  • Olive oil for drizzling
  • Sauce for dipping – I used a coconut curry sauce (from a jar)

Directions:

  • Preheat oven to 400 degrees and grease a casserole dish.
  • Shave carrot using a veggie peeler to create long, thin strips.  Rinse asparagus.

IMG_8833

  • Slice tofu block into 12 thin pieces.  No need to drain.

IMG_8832

  • Remove 6 egg roll wrappers from package.

IMG_8835

  • In center of egg roll, place asparagus spear, 1/6 of the carrot strips, 2 pieces of tofu, and a tablespoon of hummus.  My recipe for hummus is so thick you can literally roll it into a ball and then into a long tube.

IMG_8836

  • Fold sides in, fold up bottom flap, and then tightly roll.  Use a drop of water to seal the second flap down and place into greased casserole dish.

IMG_8838

IMG_8839

  • Repeat with other wraps and brush with olive oil.

IMG_8840

  • Bake at 400 degrees for 15 minutes, plate, and serve with dipping sauce of your choice.

Egg roll perfection!

I ate my egg rolls in the car on the way to work at the clinic, and then I also snacked on a baggie of Puffins cereal

And an apple.

In other news…

I have a new lip balm obsession.  I don’t think I’ve written about my lip balm obsession before, but it’s bad.  As in, I have lip balm in my purse, pockets, bra, sock drawer, desk drawer, camera bag… But now I have a new favorite. Burt’s Bees honey lip balm is… the balm bomb.

XOXO!

A baked egg roll sounds fantastic – I have been wanting to make egg rolls for a few weeks now.

I’ve never seen the honey burt’s bees – I love the regular. I also have it everywhere…

  • Lindsay January 22, 2011, 1:13 pm

Those egg rolls look delicious! I haven’t ever seen egg roll wraps at the store before but I don’t think I’ve looked for them, either. Making your own looks 10x healthier and more delicious.

Have you ever tried Burts Bees Pomegranate lip balm? That’s my fave lip balm…addicted.

    • Caitlin January 22, 2011, 1:16 pm

They are usually near the tofu!

I have NOT tried the pom flavor… now I know what I’m buying next.

      • fsugirl! January 22, 2011, 1:43 pm

  • Kelly January 22, 2011, 1:25 pm

I just bought Nasoya wrappers the other day and plan on doing something really similar, although probably not with asparagus. I eat it, but don’t really love it.

  • Cara January 22, 2011, 1:27 pm

Wow my mind is blown. I want to make this now.

  • Amanda January 22, 2011, 1:28 pm

Your hummus looks like green play dough! lol, but I’m sure its delicious, hummus can do no wrong!

I love lip balm too, my fav is Burts peppermint one though. Nice and minty!

  • Allison January 22, 2011, 1:29 pm

omg that recipe looks so good and healthy! I wish we could know the calorie content–but doesnt look like it would have much calories. Gotta’ run to my grocery store and find those egg roll wraps. yum!

  • Lisa @ Early Morning Run January 22, 2011, 1:37 pm

I’m not a fan of tofu, but I do love egg rolls and have always wished they were more healthy. I guess I never thought of making them myself and baking them. Thanks for the idea!

  • Kristen @ That Hoosier Girl January 22, 2011, 1:38 pm

I seriously need to get over my fear of cooking with tofu. I mean…I love it when other people make it for me in restaurants, I just need to make the leap because these egg rolls are drool-worthy 🙂

  • jen @ taste life January 22, 2011, 1:41 pm

Oooh, that looks so good. I have rice paper wrappers, and now I wonder what would happen if I baked those…

  • Natalia - a side of simple January 22, 2011, 1:41 pm

And I think I just found my newest dinner addiction… 😉

  • Faith @ lovelyascharged January 22, 2011, 1:43 pm

Holy crap, totally ingenious!!! I can’t fry things myself either, so this looks so beyond amazing!

  • Katherine: Unemployed January 22, 2011, 1:46 pm

I love the asparagus here and that it is baked! yum! I sent you an email a few days ago; I hope it went through. Let me know if it didnt!

  • Ashley January 22, 2011, 1:50 pm

Burts Bees is the best! I haven’t tried honey, I’ll have to give it a go!

  • Kara January 22, 2011, 1:52 pm

You keep lip balm in your bra? Now that’s hardcore! The only thing I keep in there is crumbs from lunch.

  • Julie January 22, 2011, 1:52 pm

I am a burts bees lip balm addict… big time! I’ve got the lifeguard one for Summer, the pomegranate one for year round, and gave the one you posted to my hubby because I found it made my lips tingle!

I also LOVE the lip balms on the etsy shop called You Stink Soaps, they are SO DIVINE!

  • Caitlyn (A Spoonful of Life) January 22, 2011, 1:59 pm

That’s such a creative recipe! A nice, healthy alternative to the fried variety 🙂

  • Melissa January 22, 2011, 2:04 pm

Burts Bees Honey Lip balm is my fav!

  • Marina January 22, 2011, 2:16 pm

These sound awesome! I just need to find egg roll wrapers somwehere!

  • Laura January 22, 2011, 2:26 pm

I have the same problem with lip balm! I’ll buy 10 or 12 at a time to keep all my stashes fully supplied!
My all time fave flavor of Burt’s Bees is Acai. I got a tube of a new Mango flavor at Macy’s and I can’t wait to test it out.
    Love your blog!

  • Jenn L @ Peas and Crayons January 22, 2011, 2:30 pm

My sister in law use those wrappers to fry up some egg rolls for the fam and they were disgusting — baking them sounds like a total upgrade and I bet they taste 100x better baked vs fried actually. And the health factor is always nice too! =)

I totally have this bookmarked. I’m giving the wrappers a good ole baking and a second chance!

    xoxo

  • Brittany January 22, 2011, 2:32 pm

WOW what a recipe! and such a pretty presentation 🙂

  • Katie @ peacebeme January 22, 2011, 2:39 pm

Those look amazing. I like appetizers better than entrees!

  • Carolyn @ lovinlosing January 22, 2011, 2:40 pm

The only BB I’ve tried is the mint. It comes as a freebie with my toothpaste sometimes. I’ll have to keep my eye out for the other “flavors.”

  • Kate January 22, 2011, 2:42 pm

Oh, fantastic. Those look amazing. I’m such an egg roll addict (we call them “spring rolls” here), so would love a way to enjoy them a little (well, a LOT) healthier. Plus, I’m always keen on new tofu recipes. Thanks!

  • Jennie @ Designed to be Fit January 22, 2011, 2:47 pm

I was going to buy these wraps the other day but had no idea if I could bake them and have them turn out tasty! Glad to know it works. 🙂

  • Liz @ Tip Top Shape January 22, 2011, 2:50 pm

  • Nicole @ yuppie yogini January 22, 2011, 3:02 pm

great idea on the baked wraps. i make fresh spring roll wraps with rice paper. i love FAST wraps.

  • Emilie January 22, 2011, 3:19 pm

I’ve been a fan of Burt’s Bees Honey lip balm for a few years now. It is THE BEST. Even among the Burt’s Bees varieties it trumps the others.

  • Zo January 22, 2011, 3:24 pm

I am a huge lip balm addict. I have several of the Burt’s Bees pepperminty balms and a Nivea balm. I’m still in search of a good balm with a 15+ spf that doesn’t end up making my lips white, so if anyone has recommendations. . .

    • Marie-Journey to Body Zen January 22, 2011, 6:14 pm

I’m using Blistex Medicated SPF 15. It’s a clear balm and doesn’t turn my lips white, but I’m sure it doesn’t have all natural ingredients in it. But, it works for me especially when I have to be outside in the winter :)!

      • Zo January 22, 2011, 6:23 pm

Thanks Marie. I’ll have to look for it. I guess it’s a trade off sometimes between looking after your own well-being (wanting SPF) and trying to use products with all natural ingredients. [And I’m vain enough to not want white lips!]

  • Ellen@FirednFabulous January 22, 2011, 3:24 pm

Homemade egg rolls? Impressive! So healthy too and cute too. Bonus points 🙂

  • Jeannette January 22, 2011, 3:27 pm

I’m coming out of hiding and finally commenting on your blog (I love it)

My boyfriend and I recently made these FABULOUS dumplings with Asian cabbage, sesame oil and other things. Your egg rolls reminded me of them. *goes off to start cooking*

  • Cara January 22, 2011, 3:33 pm

Those egg rolls look soooo good! I will absolutely be trying those in the near future! Also Burts Bee’s is the best lip balm around! I love the ones with pomegranate oil and mango oil!

  • Baking 'n' Books January 22, 2011, 3:37 pm

LOVE the “tube” of hummus – it looks like you use it as play-dough! – but I bet it’s good of course 😉

Are egg rolls “healthy” for you as wraps? Just curious what they’re made of.

Also – is your clinic open 6 days a week? A rude awakening from vacay to work ! 🙂

    • Caitlin January 22, 2011, 3:49 pm

Here are the ingridents: INGREDIENTS: Enriched Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate (Vitamin B1), Riboflavin (Vitamin B2), Folic Acid), Water, Salt, Wheat Gluten, Vinegar, Eggs, Egg Whites, Cornstarch

Not something you’d eat everyday but ok once in a while!

      Also… yes… 6 days a week. I work 7 days a week anyway so it’s all good.

  • Valerie from Love and Running January 22, 2011, 3:45 pm

I love Burts Bees Honey Lip Balm. I am obsessed 🙂

THose egg roles look so good. I am always looking for a healthy alternative!!! I am going to have to try these 🙂

  • Elizabeth @ The Sweet Life January 22, 2011, 3:47 pm

Goodness gracious those look delicious! What a fun, football-weekend recipe.

  • Katy (The Singing Runner) January 22, 2011, 3:50 pm

Those egg rolls look GREAT! I am going to the store later so I’ll pick up the ingredients to make it! 😀

  • Sana January 22, 2011, 4:03 pm

Yessss! I hate frying things b/c it scares me! And i put vasaline on my lips! I loveee it!

  • Haleigh January 22, 2011, 4:03 pm

I use Burt’s Bees lip balm too! Egg rolls are a bit intimidating to make… those look fantastic though! Yum!

  • Laura @ Sprint 2 the Table January 22, 2011, 4:03 pm

Neat! I’ve never tried the egg rolls before, but I love to use wanton wrappers. Will definitely check them out!

Burt’s Bees is my all-time fav lip balm. 🙂

  • Lacey @ Lake Life January 22, 2011, 4:06 pm

That is such a cool idea! I’ve never learned to fry anything at home either. I can’t wait to try these 🙂

  • Lauren @ Hungry Dancer January 22, 2011, 4:11 pm

Those home made egg rolls look to die for!!! I need to try and make those asap!!

  • Jamie January 22, 2011, 4:22 pm

I have 4 tubes of the Replenishing Lip Balm with Pomegranate Oil: one in my purse, one in my backpack, one in my car glove box, and one for my pocket. Love the stuff, and I was never really a lip balm girl before I found this one.

  • Lauren January 22, 2011, 4:23 pm

These look awesome! and Burt’s Bees is definitely the best.

  • Kris January 22, 2011, 4:41 pm

I forgot that I used to make baked egg rolls — w/ coleslaw mix and other veggies + tofu stirfried. Need to make them soon. LOL at the lip balm in your bra. A good way to keep it warm so it glides on 🙂

  • Whitney January 22, 2011, 4:49 pm

I love the bert’s bees honey chapstick, but the husband hates it. He won’t kiss me if I have it on!

  • Ashley January 22, 2011, 5:09 pm

lovely pun. I’m a fan of soft lips. Your egg rolls looks good but I just can’t imagine an egg roll with out cabbage so I might sub out the tofu for that.

  • sarah k. @ the pajama chef January 22, 2011, 5:16 pm

never made egg rolls before…must try that soon!

  • Michal January 22, 2011, 5:30 pm

I love eggrolls, but I can never find vegan store-bought wrappers. 🙁

  • Erin @ The Grass Skirt January 22, 2011, 5:31 pm

The egg rolls look awesome! I love Burt’s Bees! Their lip balm is truly stellar. I also love the face wash and toner. 🙂

  • Annie@stronghealthyfit January 22, 2011, 5:56 pm

Those look delicious and actually fun to make! You could do so many different fillings. I will have to try it 🙂

  • Marie-Journey to Body Zen January 22, 2011, 6:11 pm

I’m a lip balm addict too. It seems though that if I skip an application my lips immediately get chapped so I have to keep reapplying a million times a day. 🙁

  • Allison @ Happy Tales January 22, 2011, 6:30 pm

I also, have a severe lip balm obsession…except mine is with Aquaphor (it’s actually this vaseline type stuff for really dry skin, ha!) I use it on my lips ALL. THE. TIME! In fact, I even had to put it on before I go to bed. Yes, it’s bad.

Those veggie egg rolls look SO good. Thanks for the recipe!

  • Kiran January 22, 2011, 7:07 pm

The homemade egg rolls looks so delish I almost licked my screen 😀

  • maria @ Chasing the Now January 22, 2011, 7:33 pm

I happen to have a thing for Burt’s, too. But my favorite is the original. Have you tried their pomegranate kind? I didn’t like that one.

  • Maddie (Healthy Maddie) January 22, 2011, 7:36 pm

I love egg rolls! Those look delicious!

Also, what type of Puffins do you buy? I’ve had peanut butter but I haven’t tried any of the other flavors.

    • Caitlin January 23, 2011, 10:19 am

it was just the regular flavor – so good!!

  • Sarah January 22, 2011, 7:57 pm

mmm i LOVE eggrolls.. this look simple and great, i cant wait to try them! Ill just have to pick up the wraps

  • Jenna @Eating Green, Staying Lean January 22, 2011, 8:32 pm

Those egg rolls look awesome! Who knew they sold just the wrappers? Definitely on my to-do list.

In other news…I have lip balm EVERYWHERE too. I’m glad someone else has the same problem, haha. For some reason I always manage to lose a few here and there and then find them later on…good thing I have so many 🙂

  • Dominique January 22, 2011, 8:46 pm

I am obsessed with lip balm too! My fave back in high school used to be Softlips mint flavour but then they upped their SPF factor and I’m allergic to oxybenzone so I couldn’t use that one anymore. That brand made my lips so freakin’ soft. The BF used to say that my lips felt smooth like marble, hahaha.

I have yet to find any lip balm that is the same as Softlips from back in the day, even their new organic ones don’t have the same effect but I use Burt’s Bees in the meanwhile. I keep a tube just about everywhere too, but I frequently end up losing them that way; a couple have also gone through the laundry.

Your egg rolls look amazing. I’m going to have to try those stat. What kind of protein could I sub the tofu for? My stomach doesn’t digest soy properly.

    • Caitlin January 23, 2011, 10:20 am

Probably any pre-cooked meat or more mashed hummus!

  • Kate @ Walking in the Rain January 22, 2011, 8:56 pm

I’m so glad I’m not the only person who is afraid of frying. I need to try baking egg rolls some day.

Burt’s bees honey is my least favorite lip balm. (Well, mainly every time I use it, the husband whines about how he doesn’t want to kiss me.)

Lucky for me Burt’s has a ton of other lip balms I love. I have the original flavor stashed everywhere. The pomegranate one is cool because it has a slight tint to it so I can use it for a bit of oomph on my lips without having to tote a lipsitck or gloss with me everywhere.

  • Alex @ Healing Beauty January 22, 2011, 8:59 pm

Those egg rolls look delicious and so easy to make! Thank you for sharing it!

My sister has a chapstick obsession as well, and because we live in Colorado we tend to have them all over the place so don’t feel bad! It’s the winter time too and burt’s bees is amazing! The pomegranate one is great too!

  • April January 22, 2011, 9:58 pm

Do you have a suggestion of a tofu alternative? I have a soy allergy.

I <3 Burts Bees products. Especially the lip care products. It has been along time since I have had chapped lips 🙂

    • Caitlin January 23, 2011, 10:21 am

You could add another vegetable in, like zucchini!

  • Angie January 22, 2011, 10:21 pm

I just bought those wraps the other day I need to give them a try! 🙂

  • Hangry Pants January 22, 2011, 10:23 pm

    Pretty nails and rolls!

  • Ali January 22, 2011, 10:48 pm

Yum!!!! I had tofu and brussel sprouts for dinner 🙂

  • Melissa January 22, 2011, 11:48 pm

After having a really horrible reaction to something latex used in the OR after having my daughter, I became pretty badly allergic to Burt’s Bees. I had used it forever before she was born.
I did some research and it appears that some who are sensitive to latex can have adverse reactions to Burt’s Bees. 🙁 I miss it. I loved the kind in the little tubs and the shimmer sticks. 🙁
I have to try a version of those egg rolls tomorrow! I’m thinking of making them more veggie filled.
Maybe that’s because I am craving veggie sushi. I have GOT to figure out a home alternative to that!

  • Laura January 22, 2011, 11:50 pm

Awesome! A lip gloss recommendation that we actually have in New Zealand! 😀 I’ve actually been wondering about the Burts Bees products. I have a really hard time finding lip glosses, since I’m allergic to the ingredients in a lot of them and the results are roughly what might happen if Angelina Jolie got stung on the mouth by a bee and then punched in the face. Not pretty!

  • Diana @ VEGeneration January 23, 2011, 1:00 am

Those look amazingggg! Kinda reminds me of sushi =)

  • Sasha January 23, 2011, 1:51 am

Lip balm addiction? Count me in!
I’ve loved Lush’s lip balms (all natural ingredients) in the past.
Now I use plain ol’ natural bee wax, straight from a bee hive 🙂
(Yes, it sounds gross and it took me sometime getting used to
the slight ‘smell’ but my lips love it now!)

  • Chelsea @ One Healthy Munchkin January 23, 2011, 8:58 am

I love Burt’s Bees honey lip balm, but it never really does the trick if I have really chapped lips. For those, I need Blistex!

  • Devan January 23, 2011, 9:38 am

Oh my gosh.. Your baked rolls look amazing!!!!
Burts Bees is my favorite.. I think i have 3 currently floating around my house/purse/pockets.. if I dont have my burts, my lips die. expecially in the winter months!!
have you tried their peppermint footbalm? amazing!!!!

  • Lauren January 23, 2011, 11:29 am

The baked rolls and the hummus are currently sitting at the top of my “to try next” cooking list. You have no idea how excited I got when I saw this recipe – I love egg rolls so much but couldn’t eat them because of all the oil. This made me very happy.

  • Katy January 23, 2011, 11:29 am

omg, these look amazing! i can’t wait to try them out 🙂

  • Amber K January 23, 2011, 11:44 am

My husband loves those egg roll wrappers. I usually see him frying them in a skillet, but I’ll have to let him know how well they bake up!

I definitely have a lip balm addiction. I have tubes stashed in each room of the house so I don’t have to go very far to find one!

  • Jolene (www.everydayfoodie.ca) January 23, 2011, 12:37 pm

I have been obsessed with Burt’s Bees “lip chap” (as we call it in Saskatchewan), and it is the only stuff I will use!!!

Great job on the egg rolls! They look amazing Caitlin!!

  • claudia January 24, 2011, 10:12 am

looks delish. i LOVE burts bees lip balm, i have the lip balm in all flavors aswell as tinted! LOVE!

  • Christina January 24, 2011, 10:15 am

I always thought baking those egg roll wrappers would cause it to get funky! I have no clue why I never actually did it but thanks for the recipe!!

Oh and I like burt’s but my fav is Lip Medix! Love that stuff!

  • Charise January 24, 2011, 10:52 am

I make veggie eggs roll avocado instead of tofu (http://breadandcheeseplease.blogspot.com/2010/09/game-night-snacks.html) – that way my friends who are scared of tofu will eat them. And avocado makes everything better, anyways, right? I use them more as a party appetizer than a meal, though.

  • Stacy January 24, 2011, 12:50 pm

Your egg rolls look so good! I have been wanting to try and make some at home, so I will definitely have to give your recipe a try. Thanks!

  • Anne Meyering February 5, 2011, 4:16 pm

The respondents and the initator of this blog are fabulous! as someone who made egg rolls from Joyce Chen’s cook book, the baked ones leave something to be desired, but I am willing to try, especially since my daughter had been becoming more and more vegan in the past months. I really appreciate the information on vegetarian and vegan recipes. You’re all awesome!!! Thanks. Sichuan eggplant, spicy vegan potato curry, spinach-mushroom lasagne, but what about the cheese! Vegetarian chili, that’ll work! and moros y cristianos, Si, Si! What I need is not the vast array of different types of foods, although I think complementary textures and colors are important, but tasty!!! I do not need meat, just tasty recipes with beans, legumes, etc. We can do breads. Can we do pasta without eggs? I haven’t reseached that far. Best wishes.

  • femmme June 8, 2011, 3:20 pm

This looks great. As a new vegetarian I would love a quick sauce recipe/suggestion. Looks yummy! ty
