Pancake Truffles, Take II

in All Posts

I thought I’d make my recipe for Pancake Truffles again this morning.

IMG_4096

This version had a sweet surprise in the middle, though!

IMG_4097

Instead of a banana segment, I used a big, juicy strawberry in the center and shredded coconut on the outside.  It was pretty much as delicious as I thought it would be, but the banana holds together in the oven better and results in a prettier truffle when you cut into it.  πŸ™‚

I leave you with my absolute favorite quote (it was even in our wedding program):

There is a desire within each of us, in the deep center of ourselves that we call our heart. We were born with it, it is never completely satisfied, and it never dies. We are often unaware of it, but it is always awake. It is the human desire for love. Every person in this earth yearns to love, to be loved, to know love. Our true identity, our reason for being, is to be found in this desire…love is the β€˜why’ of life: why we are functioning at all, what we want to be efficient for… I am convinced [love] is the fundamental energy of the human spirit, the fuel on which we run, the wellspring of our vitality. And grace, which is the flowing, creative activity of love itself, is what makes all goodness possible. Love should come first; it should be the beginning of and the reason for everything.

I LOVE that quote!! How appropriate for your wedding program.

And great idea to use strawberries in the truffles. Those look delicious! Do the truffles keep you full for a while??

    • caitlin April 29, 2010, 9:44 am

yes they are calorie dense (prob about 600 calories) and definitely keep me full.

  • Jessica @ How Sweet April 29, 2010, 9:44 am

I think I’d like the strawberry better than the banana! So creative, girl.

    Love that quote.

  • Erin (Travel, Eat, Repeat) April 29, 2010, 9:45 am

I just bought a huge pallet of strawberries at Costco and they are honestly the sweetest berries I’ve ever had. They are HUGE, too, so would be perfect for this recipe.

  • Mara @ What's For Dinner? April 29, 2010, 9:46 am

I’m thinking about trying these for breakfast tomorrow…do you think they’d work if I made them tonight and then warmed them in the morning? i don’t exactly have a lot of time in the morning!

    • caitlin April 29, 2010, 9:51 am

I haven’t tried it so I can’t guarantee it! But I think the banana would heat up better.

  • jen trinque @ recipes for creativity April 29, 2010, 9:47 am

Mmm, those look good too…I like the addition of coconut flakes!

That’s a nice quote! What prompted you to put it on the blog this morning, are you feeling particularly loved or loving lately?

    • caitlin April 29, 2010, 9:52 am

after 6 years of being together, the husband and i have reached a point in our marriage where we are just ridiculously happy and in sync. i hope it lasts forever!

  • Anna @ Newlywed, Newly Veg April 29, 2010, 9:51 am

    These truffles are brilliant!

Love (ha) that love quote πŸ™‚

  • Lin April 29, 2010, 9:51 am

woah, i just drooled a little. that looks sooooo good!!! hopefully the backyard strawberries will be ripe by this weekend, cuz i’d LOVE to make them with freshly picked strawberries! and what a great quote!

  • Diana April 29, 2010, 9:52 am

Those truffles look sooooo good. The last bunch of strawberries I ate weren’t that great. It’s a hit or miss kind of thing, unfortunately!

  • Courtney (Pancakes & Postcards) April 29, 2010, 9:55 am

I just saved that quote. I have a gmail “chain” in my inbox that is just emails i send myself with awesome quotes I find. I think it is about 100 emails now. Takes a while to “expand all,” but it is wonderful on a bad day or just a down moment to read things like this!

  • brianna April 29, 2010, 9:58 am

love the quote–where is it from?

    • caitlin April 29, 2010, 10:02 am

i can’t remember actually! it’s from an oprah magazine, i think.

  • Laura H. April 29, 2010, 10:16 am

Based on the version of you I know from reading your blog πŸ™‚ I think one of my favorite quotes could also suit you!

β€œThis is the true joy in life, to be used for a purpose recognized by yourself as a mighty one, to be thoroughly worn out before you are thrown on the scrap heap. To be a force of nature instead of a feverish little clod of ailments and grievances complaining that the world will not devote itself to making you happy. I am a member of a community and as a member it is my privilege to do for it whatever I can before I die. Life is no brief candle to me. It is a sort of splendid torch that I want to make burn as brightly as possible before handing it on to future generations.” George Bernard Shaw

    • Lauren April 29, 2010, 10:23 am

That is such a beautiful quote!! Thank you so much for sharing — I’m adding it to my list of all-time favorites. πŸ™‚

    • caitlin April 29, 2010, 10:32 am

i love that quote. so much!

  • Jessica @ The Process of Healing April 29, 2010, 10:17 am

I’m a sucker for quotes and that’s one of the sweetest ones that I’ve ever heard. I’m a hopeless romantic despite being hurt and let down and all that by guys. I’m still confident that there is someone, somewhere, out there for me that will be everything I hoped for and much more. I can’t wait to fall in true love like that!

    • caitlin April 29, 2010, 10:33 am

there is a guy out there! trust me πŸ™‚ keep your heart open.

  • shannon (the daily balance) April 29, 2010, 10:20 am

LOVE that quote. I’ve always been a HUGE romantic spirt and good quotes get me every time — thanks for sharing this one! πŸ˜‰

  • Jenny April 29, 2010, 10:25 am

That is a really beautiful quote! It’s making me feel a little sappy:)

  • Lauren April 29, 2010, 10:25 am

I LOVE that quote!! I was also wondering where it was from, but I see above that you can’t remember haha. Anyway, I’m definitely saving it. Thank you. πŸ™‚

Also, this might be a weird question, but what are the strawberries like when you cook them?? Do they get really mushy or since they are “protected” do they retain a lot of their original texture? Regardless, the truffles look amazing!

    • caitlin April 29, 2010, 10:33 am

they get hot and mushy. the banana stays firm.

  • Heather (Heather's Dish) April 29, 2010, 10:29 am

i love that quote πŸ™‚ love truly is the reason for everything – what a great reminder!

  • Camille April 29, 2010, 10:30 am

Oh man, those look sinful πŸ™‚

  • Mary April 29, 2010, 10:36 am

  • Amber K @ sparkpeople April 29, 2010, 10:37 am

Thank you so much for sharing that amazing quote!

And the truffles look absolutely yummy.

  • Allie April 29, 2010, 10:43 am

    that’s a beautiful sentiment.

  • Orla April 29, 2010, 10:44 am

That quote is great. My fave is –
I’d Rather be the one who loves, than to be loved and never even know, by Josh Ritter.
I am not sure why but since I first heard it, it has resonated with me. I think that I would also rather love, and know what it is like and to constantly have the feeling in my heart that to never know what it can be like to look at someone and just be.
I have cravings for the banana wonton things from the other day. Think I will make them this evening.:)

  • Tracey @ I'm Not Superhuman April 29, 2010, 10:47 am

These look so good. I can think of a million ways to fill them. I bet blueberry would be really good. So would chocolate, I’m sure, but I guess it stops being breakfast then. Great quote, too!

  • ActiveEggplant April 29, 2010, 10:48 am

I started using a “yoga towel” over my mat (by Gaiam maybe?). It fits perfectly over the mat and then I can wash it after every workout and not have to worry about any germs that may fester on the mat – whether from the floor or from the sweaty mess I make! PLUS, I don’t slip around when I use it!

    • ActiveEggplant April 29, 2010, 10:50 am

and I totally just put that comment on the wrong post! I meant to comment on the one from yesterday! Oops!

  • Michelle @ Give Me the Almond Butter April 29, 2010, 10:51 am

      hahaha cute metaphor.

  • Melissa April 29, 2010, 10:54 am

pancake truffles sound fantastic! Love that strawberry in the middle.
That quote is incredibly powerful and beautiful! I love that you had it in your wedding programs:) And I whole-heartedly agree that love should be the first thing..the world would be a better place if everyone followed that!

  • Kacy April 29, 2010, 11:28 am

Haha, I needed that quote today. I’m going through one of those weeks where I’ve decided to never date again, but I need to remember how fulfilling real love can be.

However, I love myself, and if that’s the only love I ever find it will be enough. πŸ™‚

Something else I love? Delicious food, like those truffles.

  • Claire April 29, 2010, 11:30 am

I love that quote, I too remember it from See Bride Run! Me and my man just walked our pup and coming home to read this quote just made it more sweeter (we are still in the first year of our relationship)! The pancake truffles look scrumptious yet again!

  • Freya @ Brit Chick Runs April 29, 2010, 11:35 am

  • Johanna B April 29, 2010, 12:03 pm

My favorite quote is hanging on the wall of my cubicle so I can see it every day. I think it fits for me because I tend to research everything to the death and this reminds me that sometimes you just have to do the thing.

“You’ll learn more about a road by traveling it than by consulting all the maps in the world.”

  • Wei-Wei April 29, 2010, 12:11 pm

That’s beautiful. It sort of reminds me about how at the beginning of my disorder I had begun to shun my friends (the whole thing leading up to the disorder involved a changing of schools, loneliness and desire for independence). I told myself that to be “grown up,” I had to be independent, aka COMPLETELY independent. I told myself that I didn’t need anyone else’s love, that all I needed was myself, that I could do anything by myself if I tried. I scorned other people’s love, and care; I told myself I didn’t need friends. I withdrew into myself, looking down on other people, constantly comparing and measuring myself up next to them. I competed in my own, private contest.

The truth was, it made me lonely. I was independent, yes, I didn’t need anyone else’s help, yes, I could do everything on my own, yes, yes, YES. But was I happy? I wasn’t. I had nobody to share my successes with, nobody to talk to when I felt down, and most importantly, I had nobody to tell me what was wrong with me.

Looking back, I feel like crying because why was I so stupid? Did I honestly believe that I could be superhuman and not need love? Why did I ever want to “grow up” so fast? How could I ever think that “growing up” meant casting aside all your human qualities, your most basic emotional needs, your need to be LOVED?

Why couldn’t I just see… that I deserved to be loved, that I needed to be?

I’m sorry about the novel of a comment… The pancake truffles look even more delish this time! I think it’s just the prettiness of the strawberries… πŸ™‚
