Here’s a healthy and delicious homemade hummus. Did I mention it’s purple?
Purple Hummus
Ingredients:
- 1 can garbanzo beans, drained and rinsed
- 1 can dark red kidney beans, drained and rinsed
- 1/2 cup black beans, drained and rinsed
- 1/3 cup fresh squeezed lemon juice
- 1 pour of EVOO
- 1.5 tablespoon minced garlic, roasted for 10 minutes in a aluminum foil pocket with EVOO and pepper
- 2 tablespoons pepper
I had about 1/3 cup of purple hummus with some carrots and celery as my mid-afternoon snack. Yum!
