My lunch break is rapidly coming to a close, so I’ve got to make this snappy! I was craving some delicious PROTEIN for lunch, so I made one of my favorite recipes….

Savory Turkey Bacon Egg White Mini Quiches
These gorgeous little suckers are easy to make, too! You could modify this recipe in so many ways to suit your individual preference, but here’s how I made them today:

  • Beat 1 egg and 3 egg whites
  • Mix in: 1/4 cup chopped spinach and 1/4 cup chopped baby bella mushrooms.
  • Slice two uncooked pieces of turkey bacon into thin strips and mix into the egg batter.
  • Add 1/4 cup shredded cheese (I used colby and mozzarella).
  • Add pepper to taste (salt isn’t necessary because of the turkey bacon).
  • Scoop batter into three greased muffin tins.
  • Bake at 350 for 30 minutes, until brown.
  • Let cool for 5 minutes and enjoy!

Alongside my savory mini quiches, I enjoyed a crunchy carrot. I bet this lunch has the perfect combo of protein + fat to keep me full for HOURS!

Snack – 10 AM

Around mid-morning, I got really hungry (and fast)! I had a nice mix of cantaloupe and bananas…. mmmm!
