A Lazy Wednesday

Hello, Charlotte.  Good to be back.  Very good.

I actually managed to finagle my way onto an earlier flight and got home three and a half hours earlier than expected, which was awesome!  This meant I had enough time to dash to the clinic and help out, checking out a few patients. 

 

And once the Hus was done with his work, we came home, collapsed on the couch, and made mashed potatoes.  We discussed working on Halloween costumes but that errand quickly fell to the wayside.  Instead, we just zoned out.  Like a mini weekend on a Wednesday afternoon.  So nice.

 

At some point – I made this scrumptious dinner.  We had seen an infomercial for a device that lets you hard-boil eggs without having to peel them and instantly both craved an egg salad sandwich.    But yes – I actually had to peel the eggs.  Smile

For two servings, I hard-boiled five eggs, let them cool, and chopped them into small bites.  Then, I combined the eggs with about 1/4 cup vegan mayo, a tablespoon or two of Dijon mustard, cherry tomatoes, and raw broccoli.

 

So much better than sticky deli egg salad.  Sooooo much better.

Eaten on the porch.  Must enjoy this lovely weather while it lasts!

We made an effort to take the pooches on a long walk but ended up just going to a nearby gas station and buying a bunch of lotto tickets.  The North Carolina Powerball is up to $173 million.  The classic “What would you do if we won the jackpot?” conversation ensued.  Then we spent 30 minutes looking at $3,000,000 Charlotte homes on real estate websites while eating teacups of ice cream.  Keepin’ my fingers crossed for tonight’s draw!

    i cannot get on board with sticky deli egg salad. but your version looks delicious!!

    my hubby randomly asked me today… if we won the lottery, would i take the money in a lump sum or over 25 years. tough call! i would probably spread it out… he said he’d take it all at once though!

    whenever my husband randomly buys a lottery ticket we play that game. too much fun. and then I get all worked up like we really are going to win. it is ridiculous. 🙂

    MMM now I’m craving eggs…

    I thought about the lottery thing a lot…I’m actually not sure I’d want to win anymore. Or maybe just 1 million. I’d be afraid of being hit up for money by friends, family, and strangers for the rest of my life.

    Although, apparently you can create a trust and claim it anonymously that way. At the very least, I’d take the monthly payments vs. the lump sum.

    Told you I’ve thought about this a lot! I buy lottery tickets when I have a bad day at work…

    I add garlic to my egg salad, but never tried adding any vegetables! I also love that you have big chunks of eggs in there. Good luck with the lottery 🙂

    We also play the euromillions lottery and almost every Tuesday and Friday we discuss what we would do if we woke up as millionaires. yes, a girl can certainly dream:)

    Sounds like the perfect mid-week treat to just relax after your insanely busy travel schedule.

    I also love looking at ridiculous real estate in my area, as well as on HGTV (hello, Selling New York!). It’s just fun to think about what it would be like to be able to buy any home you want. 🙂

    bahahaha i look at the million dollar home here in the Bay Area when I get bored. Granted, half the homes that are over 1 mil, aren’t really worth that at all. But those in Saratoga, Monte Sereno, Los Gatos, Los Altos, Palo Alto. . . some of those estates are up in the Double Digit millions, and I swear a king could live in over half of them,.

    1- Your egg salad concoction looked delicious.
    2- Those eggie things are so random, yet awesome! I hate peeling hard boiled eggs (I don’t think I do it right- there has gotta be a “right way”) and I find myself making them for Riley a lot. Might have to get one!
