I went a little Operation Beautiful posting crazy tonight…

But it was FUN!

When I got home at 9:00 PM, all I could think was that I wanted the easiest dinner possible.   Honestly, I can understand why people get so addicted to fast food… if I had healthy fast food in my neighborhood, I would hit it up EVERY WEEKNIGHT.

 

This dinner meal took me 7 minutes from start to finish:

I microwaved the sweet potato for 5 minutes, topped with kidney beans, and reheated.  I added celery on the side.

 

Now, you know my weeknight dinners get eaten in two parts just due to my schedule.  I also had cereal around 5 PM:

Earlier in the afternoon, I had nuts:

To bed I go!  It looks quite comfortable.  🙂

    Awesome posting frenzy! Spread that positivity, girl!

    I'm actually not very tempted by fast food but I have to admit that when I get busy, it's a struggle not to rely on bars (Clif, Luna, Lara, etc.) and cereal for dinner. I have to force myself to get fresh, whole foods in! Packaged food is just sooo convenient!

    what are you favorite nuts to eat? the other day i had some peanuts that you crack from the shell and i forgot how much i really liked them like that! healthy snack, as long as you don't eat a huge bag right? haha.

    Caitlin, I wanted to thank you for posting these two-part dinners. I am in grad school, and could not deal with eating dinner properly because my classes are three nights a week, from either 5:30-8:30 or 6-9. I have to leave home at least 45 min before class, so there was no good time to eat. Last year I'd wait til after class, when i would be STARVING. Food was lucky if it even made it into the microwave, much less onto a plate. I noticed tonight that I'd switched to a two stage approach, inspired by you. Thanks!

    I totally understand the need for easy meals during the week. I am exhausted when I get home from work after putting in up to 10 hours, so I need to make things that are easy and yet still nutritious … and that can be a challenge.

    i used to wish for healthy fast food every day until i moved to nyc!! if you're ever visiting make sure you try the energy kitchen…tons of yummy healthy food under 500 cals 🙂

    I'm all about the two-part dinners. Life is hectic but that doesn't have to mean living on fast food. You're a great example!

    Lauren – I guess I don't have a 'favorite' kind of cereal. I like the Nature's Path kinds…. I used to be really into Kashi Go Lean Crunch. Now I'm just a granola addict. You?

    Wouldn't healthy fast food just be the most wonderful thing? haha…I don't think I'd find myself eating it very often, but there are those certain days when it sure would come in handy.

    Although, the meals that are made at home "in a hurry" usually come out pretty tasty too, I've got to say. 🙂 I'm having a sweet potato tonight, I think. They're so quick and convenient…gotta love that!
