Evening, friends!  Today was one of those days when time just seemed to slip away — before I knew it, I looked at the clock and it was 8 PM!

Mid-afternoon snacks included Oikos yogurt and Kashi TLC bar (per the usual!):

And a mini-pita was a smear of hummus:

After work was over, I heated up a quick and easy dinner:

Pinto beans, roasted potatoes, and steamed broc.  Simple but delicious!

Dessert was another yummy chocolate:

Is it the Weekend Yet?

For the 4th of July, I’m throwing a little blogger get-together at my place.   Then, we’re all going to downtown Orlando to watch the fireworks display.  We went two years ago and it’s a lot of fun — plus they give you 3D glasses!

Hot! 🙂

What are you doing for the holiday?  Anything fun?

THANK YOU!

THANK YOU to the following lovely ladies who donated to my Team in Training efforts!  It means so much to me.  I’m already 22% to my goal because of your generosity.

The Huz and I are headed to the Hamptons with his parents for the weekend – lots of grilling, beach and hopefully some long walks and a run or two. Have a great time watching the fireworks!!

  • Mrs. LC July 1, 2009, 6:31 pm

Wish I could be there this weekend! I really hope I can convince my family to go see some fireworks somewhere!

  • Matt July 1, 2009, 6:50 pm

I think I am going to a BBQ for the 4th. I'm not sure if there are any fireworks around here since I went home last summer. I'll have to find out!

  • Casey @ Double Scooped July 1, 2009, 7:10 pm

I'm jealous you have fun 4th of July plans. My boyfriend and I have yet to decide and it's getting down to the wire now!! ahh any suggestions anyone? (For the New York area) 🙂

  • Still Life in South America July 1, 2009, 7:22 pm

I love how simple and nutritious your dinner is. I'm a beans and potatoes kind of girl too. 🙂

A really fast and easy veg dinner is cannelini beans with cooked chard (including stems) and tomato slices. I like to sprinkle some hot pepper on top. So good!

Your dinner looks pretty darn good to me! Yummy. Pinto beans are quickly becoming my favorite bean. Sounds like you have WONDERFUL 4th of July plans!! We're going to Hilton Head and I cannot wait

  • Lauren July 2, 2009, 4:13 am

That sounds like such a great 4th of July! I hope you guys have a blast. 🙂

Our plans got cancelled so we have decided to do our own 4th of July picnic in our backyard, just me and the husband and the pup. Should be a good time.

    Have a wonderful day girl!

  • NoMeatAthlete July 2, 2009, 4:27 am

I have a 5k this weekend at the beach, with lots of runners in my family! I've only done one other 5k in my life, but it was recent and I did well. I'm hoping to beat that one and break 19!

  • Bridget July 2, 2009, 4:39 am

Just wanted to let you know Operation Beautiful has made its way to Philadelphia! I was walking my dog this morning and saw that someone had stuck a few postits around Rittenhouse Square 🙂

Happy 4th of July to you!

I want to donate to you after I am back from my travels in late August (I need a lot of $$$$$ for the UK). The marathon is in January, right? The cause means a lot to me. Blood cancers are prevalent in my hometown because of chemicals in the water, and my grandfather and a close friend have both passed away from leukemia.

For the 4th (Japan time) lot of my friends are going to the beach in the neighboring prefecture (think neighboring county) to get drunk and have fun. However, I can't go as I have a massive advanced Japanese Language Proficiency test on Sunday the 5th our time (4th your time). Given that I have spent a year and a half studying specifically for it…the beach is out (I wouldn't be back in time for the test). So, please drink an extra (something) for me and cross your fingers for a good test result!

I'm proud of you for working toward that marathon. You can totally do it!

    Happy Independence Day!!

  • Elina July 2, 2009, 5:30 am

    Haha, niiiiiiiice 😉
Sounds like a really fun way to celebrate the fourth of july! 🙂

  • Hi! I'm Erin July 2, 2009, 5:37 am

    3D glasses? How wild!

My husband and I upped our donation to our local public radio station and as our "gift" we got tickets to watch the big Chicago fireworks display from the radio's station's outdoor terrace which apparently has one of the best views in town. I guess there's going to be a bar and music and such. I don't have many details but I'm hoping it will be a good time.

  • Mel @ She Runs Brooklyn July 2, 2009, 5:49 am

    Hey Cailtin!

Did you season your beans at all? Were they from a can and you had them plain? just curious incase I try this myself– I rarely cook intense things (or meat!) so this cold be perfect for me too 🙂

    Thanks for continuing to rock!

  • Caitlin at Healthy Tipping Point July 2, 2009, 5:51 am

bridget – thank you so much for your kind words. and im so sorry to hear about your family and friends who have suffered from cancer! 🙁

mel – i just use pepper. i'm not really into seasonings too much. but i bet chili poweder would be good!!

  • Dori July 2, 2009, 6:42 am

My boyfriend lives on the Hudson River where they are doing fireworks for the first and only time this year, so it will be easy and fun! No 3D glasses though…

  • Sarah July 2, 2009, 10:46 am

Lovin' the glasses. I get a pair in my holiday stocking every year that say "Joy!" when you look at the lights.

A blogger party sounds awesome! can't wait to see!
