Today has been a whirlwind. I have SO much to do with my job, the blog(s), and the Summit that I was up at 5:00 AM to work.  The Husband sleepily asked as I got out of bed "What’s wrong?" and I just replied, "I have to work!"

Maggie looked pretty pissed that I made her get up at 5:00 AM.  She stuck her head under the couch pillows and went back to sleep:

But seriously, I love it!  I don’t mind pulling 17-hour days because I’m doing what I love to do (and paying the bills).  Do you work a lot of hours, too?

My breakfast was simple because I was in no mood to cook this AM:

Yogurt + blueberries and a bagel with PB.

Since I ate breakfast so earlier, I was super hungry by 9:30 and had a lovely snack:

I am never going through the headache of chopping up a cantaloupe again.  Eating half of it with a spoon was so fun! And so easy.

Lunch was my 12-Minute Pasta:

12-Minute Pasta

Ingredients (for 1):

  • 1 serving of dry pasta, any shape
  • 1/4 chopped red pepper
  • 1/4 cup white kidney beans
  • 1/2 cup fresh kale, chopped
  • 1/4 cup pasta sauce
  • 2 tablespoons shredded cheddar cheese
  • Pepper to taste

  • Boil water and add pasta.
  • While pasta cooks, microwave beans so they are warm and put chopped red pepper on the George Foreman to blacken.
  • After pasta has cooked for 7 minutes, add kale to the water and let cook 2 more minutes.
  • Drain pasta + kale, add back to pot.
  • In pot, mix together the grilled pepper, pasta sauce, and beans.
  • Serve and top with cheese and pepper.
  • Viola!

So good and SO fast!

Dessert was two pieces of Dove chocolate (which I began to eat without a picture… oops. Bad blogger!):

Operation Beautiful

Katie Drummond at True Slant did a GREAT article on Operation Beautiful, which includes an interview with yours truly! Check it out here!

The Wednesday notes for Operation Beautiful are available!  Here are two of my favorite ones from today:

Angie from Angie All The Way posted this note on a scale outside of GNC that hollers at you when you walk by, “Have you checked your weight today?”.

And Lauren stuck these notes around her YMCA gym:

Check out the rest of Wednesday’s notes here!

Maggie is too cute! My dad always eat fruit like that, but he would eat the whole thing over the trash can to catch the juice. LOL. Pasta looks yummy!

  • Brooke June 24, 2009, 9:33 am

Yum-O to the pasta! How much is a dry serving? Do you measure it out? And yes, I work as many jobs as you do and I completely understand the love of work…and getting up early (my doggie does that as well when I get her up too!)

Operation Beautiful is awesome! Keep up the great work! Hope to see you in Boston……

  • mayapamela525 June 24, 2009, 9:34 am

  • Caitlin at Healthy Tipping Point June 24, 2009, 9:36 am

  • Amanda June 24, 2009, 10:29 am

  • brandi June 24, 2009, 10:38 am

    maggie 🙂

No, I don't work crazy long hours and I'm glad I don't because I really don't like my job. If I had a job I loved, I wouldn't mind though.

  • Quinn June 24, 2009, 11:06 am

I am up at 5:30, out the door for work at 7:20 and typically don't get home til 7:45 at night. At my old job – I had to supplement my income with bartending, so I was working from 8 – 5 and then 5:30 to 2 AM! As a result I ended up getting shingles because I was running around and stressing to much and eating really poorly. Just make sure to breath!

  • sloank June 24, 2009, 11:06 am

I love that picture of Maggie… so cute!!!

  • THE ACTORS DIET June 24, 2009, 11:14 am

I eat my melon the same way – i love when food turns into bowls!

unfortunately, i don't work long hours most of the time. as actors, we spend most of our time NOT working. but when we do it's ON.

  • Kicking couture June 24, 2009, 11:35 am

I made the 12 min pasta for dinner thanks caitlin!!its super yummy, i used borlotti beans and cooked tomatoes as well and replaced the peppers with peppadew ones chopped finally! its really good if you put it in the oven at 110 and let it slowly melt and crisp for about 20mins!

  • Rebecca June 24, 2009, 11:53 am

  • Jennifer June 24, 2009, 12:24 pm

It is always better when you love what you do (because your job turns into a hobby and everyone loves a hobby). I'm inspired by how healthy you eat and how organized you seem to be.

  • Carolina John June 24, 2009, 12:26 pm

kelley calls me a workaholic, but really i just do what i have to do to keep the bills paid. i do enjoy it though. programming is usually fun.

  • nostorybook June 24, 2009, 1:46 pm

That post it came at teh perfect time. I am having a hard time letting myself not exercise today and taking one day off for the week for fear that I might feel sick or something might come up which will mean I take 2 days off, which means only 5 days of exercise!!! But I need to remember that it's something good for me and should make me feel better not worse. Thanks and take care.

  • Anonymous June 24, 2009, 2:09 pm

what bagels do you buy? I am looking for one that is not too calorie dense!

  • Caitlin at Healthy Tipping Point June 24, 2009, 2:10 pm

anon – thomas brothers. i think its like 230 cals a bagel, so its essentially 2 pieces of toast.

  • Mel @ She Runs Brooklyn June 24, 2009, 2:10 pm

Excercise to live is such an important way of thinking. I used to wake up and start running because I "had to" to be thin, not because it just felt GOOD to move my body.

Luckily I think I'm onto that better mindset.

Way to go for inspiring this!!

Also– man, your lunch looks ROCKIN.

  • Julia June 24, 2009, 2:20 pm

Great interview Caitlin! You've really started something wonderful 🙂

  • Gena (Choosing Raw) June 24, 2009, 2:23 pm

Caitlin, I know I'm late to acknowledge all of this, but I just wanted to tell you how moved and impressed I am by operation beautiful! You're doing a wonderful thing for us all. Thank you, thank you.

  • K from ksgoodeats June 24, 2009, 2:53 pm

Maggie – I love her!! When I was little that's how I used to eat cantaloupe too 🙂

  • NYgirl@heart June 24, 2009, 4:28 pm

I've been waiting all day to get home and comment on how stinkin cute Maggie is. That made me laugh out loud when I pulled it up at work. Hilarious!!

  • Katherine June 24, 2009, 6:15 pm

    Hey Caitlin!

I love your little moo moo puppy. too cute!

Okay, so I am headed to Jacksonville for the weekend and am spending part of Friday (during the day) in St. Augustine! I know that it's your favorite city so I thought that you'd be the best person to ask for what you'd do if you had 7 hours there! What's the best place to eat lunch?

    Thanks SO much!

  • Bec June 24, 2009, 6:36 pm

wow what crazy hours, I do 10-15 hours 1-3 times a week and I die and need to sleep forever to recover!

  • Melinda June 24, 2009, 6:45 pm
