Healthy Sloppy Joes

in All Posts

Good afternoon!  I am very happy to say that I won’t be working this afternoon, so I can actually enjoy the sunshine!

This morning, I drove downtown and strolled around beautiful Lake Eola for some exercise.

I did a 1.0 mile loop while yakking to my mother on the phone.

I love Lake Eola… it’s so pretty and there are so many white and black swans (Orlando’s mascot!).  They even have swan paddle boats you can rent.

I drank a "sweet" tea while strolling….

It wasn’t bad for a Splenda drink, actually.

Afterwards, I got a GREAT haircut and eyebrow wax at an excellent salon called Alta Moda.  Haircuts tend to stress me out because I like my hair LONG and getting it chopped is the worst.  But my girl was really good!  She tried to talk me into dying my hair like Bella from Twilight, and I almost caved…. until I saw the price! 🙂

I was ravenous by the time I got back home.  Craving something warm, I made a Healthy Sloppy Joe wrap:

I used a Flat Out wrap, organic pasta sauce, sharp cheddar cheese, bella mushrooms, and MorningStar Faux Meat.  It was delish!  But very sloppy…. I ended up eating it with a fork!

Plus a side of broc.

I’m going to head over to the dog park for a little bit now, so I’m packing a snack to munch on:

And then I’m hitting the road for the BIG RACE!

See you again tonight for my pre-race carb-loading session. 🙂 Have a wonderful Friday!

sounds like a great day! I made the mistake of ordering “iced tea” in the US and realized it’s not the same as our “iced tea” which is your sweetened tea. One of my fav drinks!

love sloppy joes! VeganDad has an AMAZING recipe for them. I highly reccomend it. He uses crumbled up tempeh (cheaper then faux meat!) I did an entry on my blog about it a while back

I love your sloppy joes idea! Is that really all the ingredients it took to make it?

  • healthy ashley April 10, 2009, 9:27 am

I just love Lake Eola. It is definitely one of the things I’m looking forward to more of when I move to Orlando!

Sloppy joes are my favorite!! I have all the ingredients in my fridge and am totally considering staying in with Joe instead of going out to dinner!

Good luck on your race tomorrow!!

  • Sarah (lovINmytummy) April 10, 2009, 10:08 am

Hmmm…I wonder if we will be carbo loading with a beer again? 😉

  • Alison April 10, 2009, 10:10 am

Love the swan boats. It reminds me of something you’d see at the Disney resorts. Do most Orlando residents stay away from Disney? I imagine it’s a hassle to get over there, but the resorts are so pretty…let alone the parks.

  • Matt April 10, 2009, 10:27 am

Make sure you get some pasta tonight!

  • Caitlin at Healthy Tipping Point April 10, 2009, 10:35 am

itsawrap – well, and pepper! i just let everything (except the cheese) cook in a wok on low for about five minutes and then wrapped it all with the cheese. 🙂

alison – i think most orlando residents have a love or hate relationship with disney. personally i love disney, but i do hate tourists. 🙂
