Evening! I’m not sure what’s up with me — I am positively POOPED!  I guess I did do a lot today!

 

After my run with the Orlando Women Runners club and lunch, I got dressed to meet Meghann at the mall.  Before walking out the door, I realized I needed to eat more and scarfed down Chobani Vanilla yogurt + Sunflower Seed and Pumpkin Seed Granola.

Meghann totally out-shopped me! I was going more as an "observer" because we’re kind of broke and I need to watch my spending.  I convinced myself to buy 1 top for $12.  :) 

 

Before leaving the mall, I grabbed a Skinny Vanilla Latte, of which I drank 1/2.

Then, I was kind of a bad food blogger.  I was too lazy to photograph my mid-afternoon snacks!

 

  • Another orange
  • A pickle
  • Almonds
  • 3 slices of chocolate orange

 

And then the Husband came home!!! He’s been away for two days on business, I was so happy to see him again. 🙂

 

I made us a yummy Chinese-food inspired dinner utilizing some raw honey that he brought home as a gift.

I can’t really give out a recipe for this because I kind of just threw ingredients in the wok as I went!  🙁  It was soooo good!

Sauce ingredients:

 

  • 2 tablespoons honey
  • 2 glugs BBQ sauce
  • 1 dash red wine vinegar
  • 1 dash Worcestershire sauce
  • 1 glug EVOO
  • 1 tablespoon minced garlic
  • 1/8 cup red onion, chopped and browned in skillet
  • 1/2 cup water
  • Loads of pepper
  • Dash of salt

I added cooked green beans to the sauce and chicken mixture towards the end and then let the sauce reduce.  I topped everything with some chopped almonds and served brown rice on the side.

It was like healthy Chinese food! 🙂 Loved it.

 

OK – time to curl up on the couch.  I’m meeting Meghann at 8 AM for a 12.0 mile run (groan).

    I also started running to get in shape and race a little over a year ago and along the way found myself completely revamping my lifestyle down to self-perception and eating habits.

    I have yet to reach my final goal weight (just 7lbs to go!) and I have no doubt that your blog is going to be that extra nudge that will get me there and keep me there.
