60 DAYS!

I just checked out my wedding countdown (yes, I have one) and we have 60 more days until the wedding.  That’s a BIG DEAL because now we can get our marriage license!  We’re actually going on Thursday morning! Whoop, whoop!

 

Besides that happy bit of news, I must admit I have been terribly anxious all day. My stomach is in knots and I keep checking the online polls.  This election is giving me an ulcer.  I just want the polls to CLOSE already so I can start getting REAL data, not projections.

 

Around 10 AM, I had yogurt + granola.

And for lunch, I made an omelette.

My omelette contained:

 

  • 4 egg whites
  • 2 tablespoons cheddar cheese
  • 1/4 cup black beans
  • spinach
  • 1 tablespoon white onion, nuked in the microwave first until soft
  • Pepper

 

On the side, I had a slice of dry WW toast.

And then for some unknown reason (probably stress and anxiety), I randomly shoved a bunch of leftover Halloween candy in my mouth.  It wasn’t a conscious food decision at all. I had to recreate it to take a picture.

Nothing to stress out over; however, I’m disappointed with this food choice because:

 

  • It was a compulsive action.
  • If I eat sweets too early in the day, it gives me a headache.
  • I was eating in response to stress and anxiety, not hunger or actual desire.
  • I ate it so fast that I didn’t even enjoy the chocolate. 

 

Oh, well…  sometimes it happens.  Moving onwards and UPwards!

 

See you later for an afternoon run and a LOT OF BEER DRINKING while the election results come in!!! AHHHHHHHHHHHHHHHHHHHH!!!

    meghann – no, i dont think i do…. hahah i think i have had enough sugar for the day. 🙂 and i plan to consume mass quanities of alcohol tonight, anyways 🙂

    I’m so excited for tonight, but I’m still anxiously waiting to go vote! I’m leaving the office in an hour to do it. And obviously distracting myself until then.

    I love how you thought about why you had the chocolate. Good for you for being able to accept it for what it is and not worry about it. You have such a healthy approach to eating, I admire you!

    That’s too funny about the countdown forthe wedding…I had one too…and I have one for how long we’ve been married on my Facebook, haha. Oh and one for Christmas….

    hey girl, don’t let those 3 pieces of candy bring your day down! it seems like you worked it out in your head pretty well but-you know everyone has “slips” onwards and upwards is right!!!! congrats on 60 days!!!!

    i hear ya, caitlin! now that it is so close, it’s making me nervous. luckily all i have here at work is a massive bag of sugar-free life savers, but i’m pretty sure that all of my crunching on the candy is slowly driving everyone around me nuts, too!! hang in there 🙂

    Instead of chocolate, I’ve been drinking coffee since Fi and I went to the polling place this morning (we got up at 5:30 so he could vote-mine was by absentee so it’s been done for a while). The place was packed and I literally took about two sips before the whole mug of coffee I brought was gone-his, too.

    We’ve been coffee-freaks ever since. So nervous! And SOOOO excited. We’re right there with you, Caitlin!

    I can’t stop checking either. I am not getting anything done for work. It’s pathetic. We should all have off on election day. And, if Obama wins, we should have off tomorrow too, because I’m going to have a hangover.

    I don't think it's necessarily harder to eat healthy on a budget, but it is harder to make inventive meals. Dried beans & grains are so cheap, as are onions, potatoes and the like… it's just hard to make a masterpiece when you're not also buying things like olive oil, capers, fresh breads, yogurts, etc.

    haha i came home to vote (no absentee ballot) and OF COURSE all the leftover halloween candy was lying around…but i think you took a great approach in looking at WHY you ate what you did and not letting it get to you!

    everyone seems to be extremely anxious today! It’s my first time to present an election year in US, it’s so different than my country. People are more conscious about their vote which is so good for a country.

    I’m SO excited for your wedding. Just curious, is there a reason you don’t use any egg yolks? I know cholesterol is a concern for a lot of people; but the yolk does contain some great vitamins (B, in particular) that just aren’t contained in the white.

    Although it’s absolutely a preference/taste thing. I had a bad yolk experience once (I won’t share in case it would turn people off of them) so now, when I do eggs, I usually buy the ‘best of the egg’ in the carton which contains the vitamins that the white’s lack anyway.

    Ahh, I sometimes grab the chocolate/sugar when anxious, overwhelmed, stressed… mostly dealing with work! It sucks and you instantly feel guilty!

    amanda – yea i dont even know why they would bother… obviously im going to delete stuff like that ASAP. i dont mind opposing views, but i certainly mind complete BS. get your own blog and spread that, if you want to!

    laura b – i think my secret is using loads of cooking spray on a non-stick pan and having lots of patientance… you cant flip too early! sometimes i use two spatulas to flip as well.

    Holy crap, that omelet looks amazing. I don’t have a nonstick pan, other than my griddle, so I don’t think I’ll be making them anytime soon.

    Maybe I’ll try to do the boil-in-a-bag method.
