Good morning! I was in a peaceful slumber when I suddenly felt a fat dachshund butt sit on my face.  I don’t even know why Maggie bothers waking me up, because 5 minutes after I get out of bed, she goes back to sleep on her pillow:

Onto breakfast…. after last night’s intense pumpkin-carving session, I knew I had to integrate pumpkin seeds into this morning’s bowl of oatmeal.

My oatmeal contained:

 

  • 1/2 cup of oats
  • 1/2 cup of water
  • 1/2 cup of milk
  • 1 sliced banana
  • Toppings: sprinkle cinnamon, brown sugar, and "sweet" pumpkin seeds (for recipe, see below)

The pumpkin seeds gave my oatmeal a great CHEW! Oh, how I love autumn. 

 

Of course, I had a cup of coffee, which Jack helped me drink.

 Pumpkin Seeds – Sweet, Salty, and Spicy

 

Pumpkin seeds don’t have to be boring!

Salty Pumpkin Seeds (the Classic Method)

What I Know For Sure

 

Since you all enjoyed the selection of Oprah’s ‘What I Know For Sure’  motivational thoughts so much, I thought I’d share a few more:

 

  • You define your own life. Don’t let other people write the script.
  • Worrying is wasted time.  Use the same energy for doing something about whatever worries you.
  • What you believe has more power than what you dream or wish or hope for.  You become what you believe.
  • If you make a choice that goes against what everyone else thinks, the world will not fall apart.

    I LOVE pumpkin seeds (and your recipes)!! Right now, I’m hooked on pumpkin-seed-butter (which contains a whopping 10.5 grams of protein per two tablespoons!! Score!!)

    Yes, I was planning on doing the 5k 🙂 It’s on the Sunday and your Ladies Lunch is on the Saturday so we should be able to do both in the same weekend.

    and I look just as sweaty and disgusting in the pics so I think we cancel each other out 🙂 Gladd the seeds worked in the oatmeal. I was very tempted to add them to my waffles, but went with pecans instead.

    I’m so lazy when it comes to washing and separating the little strings from all the pumpkin seeds (and edible seeds from other winter squash). But they’re so healthy and it’s such a waste not to. I’m going to try to do better.

    Veggiegirl, if you see this, where do you get pumpkin-seed butter? Or do you make it yourself? I’m addicted to sunflower seed butter and would love to try the psb too!

    I have a silly question: don’t you have to discard the shell of the seeds when you eat them… isn’t that annoying if you use it as a topping on something? Do you have a bite of the oatmeal with seeds and then spit out the shell?

    elina- i know some people only eat the inside, but i’ve always eaten the whole pumpkin seed. i think most people eat the whole seed, too!

    Oh my do I love toasted pumpkin & squash seeds. I may have to try the spicy seeds – don't have much of a sweet tooth more than about once a month 😉

    Good Morning, Caitlin! First of all, I love that picture of your little “sausage roll”. Too cute 🙂
    Your jack-o-lanterns turned out great-I will be carving mine this weekend and hope they turn out as well as yours did!

    Hahaha! TOO funny-like they say "It's a dog's life"!! I can't wait until my dog sleeps for that long! My puppy is almost 5 months old and constantly on the go. It will be great when he settles down a bit so I can snuggle & pet him for more than a mintue at a time! Maggie is such a sweetie 🙂
