Not much has happened so far today–just slugging away at work.  You know how Tuesdays roll. 🙂


Around 10:30 AM, I had my mid-morning snack.  I munched on a juicy pear and 1/4 cup cottage cheese. I’ve found pairing a fruit with some protein really ups the satiety of my snack.  Another good combo is fruit + PB.


Lunch – Grilled Chicken Salad and Polenta Croutons


I was craving a salad for lunch, but they rarely satisfy me.  I thought throwing in a hearty base of carbs would help. 🙂


I used the grilled chicken from yesterday’s lunch sammie.  Also thrown in my salad were red onions, green onions, spinach, and a plum tomato.


I baked tiny slices of polenta at 350 for 30 minutes, and then I broiled them for an extra 5 minutes to create crunchy, satisfying, and healthy "croutons."


Whenever I eat a salad like this–with so many unique flavors and textures–I always skip the dressing. 


And afterwards, I ate a mini Larabar (Pistachio flavor).  I was expecting it to be green, but the actual color still kind of threw me! It was yummy, though (of course).




On a slightly evil note, I can’t wait to watch the VP Debate on Thursday. Baw hahahahahaha!

I bet most of you couldn’t even bear to watch that whole video! I just got serious second-hand embarrassment.  I guess now you all know my political preference. 😉
