Sunday Hike

Hiking:  The dirtier you get, the more fun you have.

4

We decided to take our workout to nature today.  The thought of being cooped up in the gym or even running our usual route around our neighborhood just wasn’t appealing.  So the Husband, my sister-in-law Sophie, James, and I headed to nearby Latta Plantain Park.

Hiking hint:  Take a picture of the trail map before setting out.  If you’re anything like me and have a terrible natural sense of direction, it will come in handy… at every single fork in the trail.

The trail was beautiful.  There were lots of little hills, too, so it really felt like a good, hard workout.

We did a 2.5 – 3 mile hike and didn’t see a single other hiker the entire time.  Very, very peaceful.

Backing up… The Husband made Sophie and I breakfast, as he usually does when we have house guests.

He used the wok to make what essentially is a skinny frittata.  He just poured beaten eggs into the bottom of the wok and topped with tomatoes, spinach, and goat cheese and let it cook from the bottom up.  No need to put it under the broiler because the slices weren’t thick enough, like a true frittata.  It was good.

With toast and homemade hashbrowns.

We, truthfully, did not plan for our hike very well and ended up running into the grocery store for an emergency lunch.  I grabbed a banana, a Vanilla Chat Tea soy protein shake, and a few of the Husband’s crisps.

I have half that shake leftover and am going to toss it into the blender with some frozen strawberries to make a smoothie.

Thought of the Day:

“Being happy doesn’t always make us grateful, but being grateful will always make us happy.”

Such a great idea, taking a picture of the map! I’ve got to find some hiking trails in my area- great way to exercise and get all nature-y.

Aw, James is the absolute cutest!

  • caronae February 5, 2012, 3:52 pm

The picture looks like it is a nice calm, peaceful hiking trail. I love that! I need a nice hike – one of the downsides of living in NYC. 🙁

I love the bolthouse vanilla chai latte. I like too use a little bit in place of milk in my morning tea.

I wish there were more trails around here. My husband LOVES to hike, but we have drive a good hour+ to get to any trails.*

  • Gina @ Running to the Kitchen February 5, 2012, 4:07 pm

That looks gorgeous. I’ve been trying to will myself off the couch for the last hour to take advantage of the beautiful weather today and go for a walk but I’m having such a hard time for some reason!

  • Kath February 5, 2012, 4:10 pm

We used to walk Latta Plantation all the time in college 🙂

  • Katie @ Peace Love and Oats February 5, 2012, 4:22 pm

Oooo that frittata looks so good, almost like an egg pizza!

On our honeymoon, we forgot diretions to drive from Trier GE to Munich. We ended up in a bookstore, using google maps to figure it out. But, the printer was down. We took photos with our camera and used page after page to get to our destination. Never underestimate the power of a camera. 🙂

Oh I love Munich. What a fun place to honeymoon.

  • Katie @ Soulshine and Sassafras February 5, 2012, 4:32 pm

    I love Perfectly Protein!

  • StoriesAndSweetPotatoes February 5, 2012, 4:36 pm

Hiking sounds so nice, and so does that frittata! Love the quote also.

  • Liz @ Tip Top Shape February 5, 2012, 4:57 pm

I wish I lived near hiking trails. I think it’s such a great workout option, and you can’t beat those views!

  • Becca @ Blueberry Smiles February 5, 2012, 5:17 pm

I like your photo hiking hint- great idea, I’ve gotten lost hiking without a map more than a few times!

  • Kristen@Change of Pace February 5, 2012, 5:46 pm

I miss hiking so much! We did a lot of it when we lived in Florida but there is just no where to hike here. James is ADORABLE! 🙂

I like the quote because it’s reminiscent of what I’m writing my thesis on. I’ve just read Man’s Search For Meaning by Viktor Frankl and it’s absolutely amazing and teaches that our true search as human beings is not/should not be for pleasure, but to find meaning in our lives. A pretty optimistic and inspiring view from a man who survived four concentration camps.

Love the idea of that frittata, so easy! And a vanilla chai tea soy protein shake sounds amaaaazingly delicious.. yum 🙂

  • Kaitlyn February 5, 2012, 8:49 pm

I love hiking. Your first opening quote is perfect! I also like your idea of adding half the protein shake into your smoothie tomorrow. A good idea considering that those can be high in sugar content, so breaking it up is a good thing.

  • Laura @ She Eats Well February 5, 2012, 10:45 pm

I love that quote. Something we should always remember. Your hike looks absolutely gorgeous! Jealous. I feel like I always forget about frittatas. They are so easy and delicious. Thanks for the reminder.

  • Jen February 5, 2012, 11:40 pm

Totally off-topic, but yeaaaaa for Miami knocking off Duke!!! (I hate Duke.)

Also, the hike sounds awesome & breakfast looks yummy!

    • Jen February 5, 2012, 11:42 pm

p.s. My apologies to any Duke fans out there…I do not hate Duke fans, just Duke. 🙂

      • Caitlin February 6, 2012, 10:55 am

        YAY MIAMI!

  • Khushboo February 6, 2012, 12:29 am

I love frittatas- they always seem a lot fancier than what they are!

  • Sarah February 6, 2012, 4:36 am

Fun day, but I’m curious how come only one dog went with you guys?

    • Caitlin February 6, 2012, 10:46 am

Maggie is too small and lazy to go for a 3 mile hike in the forest. I would’ve ended up carrying her the last 2 miles LOL

  • Anna February 6, 2012, 6:49 am

    Love that quote!

  • Emilie February 6, 2012, 7:33 am

Hehehe, your puppy looks super impressed! That frittata looks amazing!

  • Dana @ the Big Fat Skinny February 6, 2012, 7:43 am

I love the thought of the day today — it is so true. Gratitude is the greatest multiplier of good.

  • Amber @ Busy, Bold, Blessed February 6, 2012, 8:34 am

We always go hiking in Valley Forge National Park because it’s in the boyfriend’s backyard! It’s so peaceful and I love when we have the trail to ourselves. So nice!

  • Alaina February 6, 2012, 9:05 am

It’s been so long since my husband and I have been hiking. I can’t wait to get back out there!

  • Sarah@The Flying ONION February 6, 2012, 9:12 am

    I could not agree more.

The dirtier the hike, the better. What a great way to spend a Sunday afternoon! 😀

  • Sneakers2Sandals February 6, 2012, 9:20 am

I wish we had more nature paths to hike here! I miss that about living up north. It looks so lovely and refreshing!

Did your husband put the wok in the oven or let it cook over the stove?

    • Caitlin February 6, 2012, 10:45 am

      It was on the stove.

  • katie February 6, 2012, 12:57 pm

I dropped my puppy off this morning to get neutered and cried like the wuss I am when I got back to my car 🙁 I know he’ll be fine, but it’s a scary situation, that anesthesia!

  • katie February 6, 2012, 12:58 pm

Whoops sorry, wrong post for the comment…I was catching up 🙂

  • Amber K February 6, 2012, 2:12 pm

Once again you come out with the perfect quote for the day. 🙂

  • Melissa February 7, 2012, 2:11 pm

Those Bolthouse Vanilla Chai shakes are soooooo good!

  • Shiny Happy Vegan February 13, 2012, 7:03 pm
