Wedding Details: Ambiance!

Good evening! I must admit that I was in a very sour mood around 6:30.  I went to the gym intending to do 45 minutes of cross training, but after 1 minute on the elliptical, I knew I was going to have to leave.  My right knee seriously felt like it was being put through a meat grinder.

 

If there is one thing I’ve learned from being injured, it’s that one workout is not worth potentially losing weeks of training.  In hindsight, I wish I had listened to my body more and rested when my knee and leg hurt instead of plowing through a 10 miler because it was on my schedule.

 

LEARN FROM MY MISTAKES!  Seriously.

 

So, I left the gym at 6:31 after a hot minute on the elliptical.  I decided the least I could do was get some wedding-related errands.  Every time I visualize my wedding, I picture LOADS of candles.  I went to the local craft store (AC Moore) to see if they were having a sale….. and it turns out, THEY ARE GOING OUT OF BUSINESS! Everything was 30% – 50% off!

 

It was like I hit the wedding jackpot:

I bought 36 candle votive holders to place on the tables; candles for the votives; 6 hurricane glasses and 6-inch pillar candles to be scattered around the reception room and the outdoor patio; and calligraphy pens so I can write out the place cards in fancy script.

 

Total cost: $80.00!   WOOOO HOOO!  So much candlelight for such a low price!

I also picked up a French Vanilla candle for our coffee table. 🙂

 

Dinner – 9 Minutes or Less

 

By the time I returned home from my shopping cardio, I was starving.  I threw together one of my favorite dinners in about 9 minutes (almost as fast as drive thru and waayyyy tastier!).

 

I made "baked" sweet potato (microwaved for 6 minutes) smothered in black beans.

If you have not tried this seriously divine combo, you must! So quick, so easy, so cheap, AND so nutritious!

And on the side I had a wonderful spinach salad with a plum tomato and cucumber.

Mid-Day Snacks

 

Work has been particularly hellish, but I see it slowing down in a few weeks. "Slowing down" is not good for my job security.  We’ll see what happens (that was cryptic, huh?).

 

Around 2 PM, I had a WW pita with a slice of ham and broiled cheddar cheese.  So savory!

And later I had a banana + yogurt + PB, all mushed together.

Off to watch The Biggest Loser!  I’m sorry if I don’t respond to any of your lunch-time or dinner-time comments until tomorrow, I need to unwind…. desperately!

    Again, you and I ate alike today – sweet potato with black beans, banana & peanut butter (except I had my banana with pumpkin-seed-butter) :0)

    When you have a banana with breakfast and another later on, is it 1 banana cut in half, or do you eat 2 bananas in one day? Silly question, but bananas are my FAV and I always tell myself I shouldn’t eat the same piece of fruit in a day. Maybe that’s stupid? haha

    Hi Caitlin,

    Sorry to hear about your knee. My kneecap stopped hurting earlier today, but now I've got an achey left shin! What is up with me?!?! It's funny that things are starting to fall apart on me after a 3 day hiatus from running due to being sick. Hopefully, we'll both be better soon…

    On a happier note, I love all the candles you bought for your wedding! What a great deal you got as well. Your wedding will be so beautiful, romantic and magical with all the candlelight!

    Tomorrow I am FINALLY trying your sweet potato/black bean combo. I have all the ingredients on hand and am planning on serving it for dinner! I'm so excited and I know it's going to taste great!

    aww i hope you heal ASAP. i had an injury in high school when i ran track and my coach forced me to continue running and then i had to take a whole season off 🙁

    love the great deal on the wedding goodies! i can’t wait to see pictures/hear about the actual wedding day!!! 😀 i’m jealous of your penmanship – i wish i could write caligraphy. i’ll probably have to spend a gazillion dollars for someone to do mine haha.

    i hope work gets better for you. this economy sucks! period. but there’s nothing that life can throw at us that we aren’t equipped to handle 😉

    yay for all the wedding candle finds!!! great that you got that stuff bought and off your list!

    and i know what you mean about listening to your body when it hurts…my leg was killing me today and i really wanted to run…but no matter how badly i wanted to run, i decided it was better not to and to prevent myself from not being able to train later.

    kudos babe. everything will get better.

    Sorry to hear your knee is still bothering you 🙁 I’m still working through some pains, but I think taking this week off from running will do me some good. If nothing else, then I’ll appreciate running more now. The gym is NOT the same as being outside in the gorgeous weather. And everytime I see someone outside running I get jealous. 🙁

    Just got done watching the Biggest Loser…and I think Vicky’s up to something. I don’t like her right now. There’s something sneaky about her.

    What an awesome candle deal! Jackpot!

    Sweet potatoes are one of my favourite quick go to meals as well. I love loading them up with pretty much whatever I can find in the fridge. Great food. I want one now.

    I had a yummy sweet potato last night, too…mmmm, never thought of it with beans! I love mine with the Tomato Basil Garlic Mrs. Dash. YUM!

    YUM! Dinner looks good. I never thought about adding black beans to my sweet potato. I’m SO going to do that!
