Hello Caitlin! Congrats on your baby. I was once a vegetarian. But I’ll admit to ‘taking a lazy approach.’ Before there were accessible frozen options I actually worked a bit with tvp. That seems like dark ages ago. Then I became a Morningstar believer.
Well, one thing lead to another. Yellow-fin tuna, gave way to more fish, then pregnancy and I let it all go…chicken was my undoing. I feel ready to come back. I’m not certain the family is…but I wonder if you have any seriously easy go-to recipes, gluten-free that I can start us off on a regular rotation. Also, as I’m not near a local Trader Joes, etc. What are the seemingly ‘easy finds’ for staples that can get me started.
